Greetings!

We all know we should eat more vegetables, so why don't we all do it?  I have heard everything from, "I don't have time" to "I don't know how."  The truth is, I didn't always know how to balance my food so that vegetables were the main part of my day, rather than just a side dish (if at all!)

I started with just one little green, and before I knew it, my shopping cart, pantry, refrigerator, dinner plate, entire way of eating changed for the better - not to mention my energy, skin, hair, and overall health.  All it took was one "add-in" to start it all.

Intro to Healthy Cooking

Three-class series starts Monday, February 28

This series is designed to provide an answer to the

question,

"What should I eat?" 


 

We will discuss

which foods to eat

for optimal health,

which foods to avoid

and why, how to read nutritional labels and

understand organic and whole foods, how to eat for energy, and how to plan and prepare quick and healthy family meals.

In each two-hour class, we will create and enjoy three delicious, healthy, easy-to-prepare meals together.


 

Join us for three evenings this Spring and discover how simple, inexpensive and fun

healthy cooking can be.

Recipe of the Month
 
Go green chia smoothie

2 cups filtered water or 1 bottle coconut water
1 apple (skin on)
1 banana, peeled
sliver fresh ginger
1 tbsp chia seeds
2-4 cups fresh baby spinach

If using a conventional blender, slice apple into pieces, but do not peel or core.  Place water, seeds and fruit into blender and mix on high.  Slowly add in spinach while blender is running and let run until smooth.  Add additional coconut or plain water until desired consistency is achieved.  Serve over ice and add straw to enjoy.

If using a high-speed blender such as Vitamix, place all ingredients at once, add ice and mix on high until smooth.

"Chia seeds?!  Do you mean as in Chia Pet?" 
 

Why, yes, actually, I do.  Chia seeds are a phenomenal superfood used by the ancient Aztec soldiers as they went into battle.  Mostly known for their beneficial omega-3 fatty acids, they provide a significant source of calcium, magnesium, antioxidants as well as an enormous amount of fiber.  Chia seeds  can hold approximately 10 times their weight in water, which means that consumers of chia seeds should increase their water intake as well.  Perhaps their most beneficial act is in reducing inflammation in the body, and improving joint health and skin tone.
