Greetings!

Are you waiting for after the holidays to go on a diet, start an exercise program or get "back on track?"

The idea that we can abuse ourselves until Monday morning, January 1, or after the holidays, is part of a diet mentality that not only has physical repercussions, but in my opinion,  also wreaks psychological damage.  One of my nutrition teachers put it best when he said, "This is not a dress rehearsal." This is your life, and it is happening right now.

Start today to add in one thing to improve your health, no matter what it is.  Even though it may seem small, it is something more than you did yesterday, and will add up over time.  Don't waste more time knowing that there is something you can do to make your life better, yet choosing not to do it. 

Please feel free to contact me for ideas about what to start adding in, or if you know you want to get healthy, but just don't know where to begin.

Recipe of the Month
Italian veggies & quinoa

2 eggplants, cubed
2 zucchini, sliced into quarters
1 red or green pepper, diced
1 fennel, sliced
2 cloves garlic, minced
1 15oz.- can organic diced tomatoes (Muir Glen has a   
1 onion, diced                                 bpa-free can lining!)
1 cup quinoa, rinsed
2 cups purified water
1 tbsp balsamic vinegar
1 tsp freshly-ground black pepper
1 tbsp olive oil

Combine quinoa and water in a saucepan and bring to a boil.  Reduce heat to simmer for 20 minutes.

Heat oil in a large skillet over medium heat.  Add onion and cook for 5 minutes.  Add garlic and sauté for 2-3 minutes.  Add eggplant, zucchini, pepper, fennel and tomatoes.  Raise heat to med-high and cook for 5 minutes.  Lower to simmer and cover for 20-30 minutes.  Add vinegar and pepper and stir to combine.  Serve over quinoa.
