You know it's summer when your garden is alive with
activity
and you can almost taste the chunky tomato basil sauce, pesto, grilled zucchini kebobs and stuffed eggplant - at least that's what summer means in my house...

     Many of my friends and clients have
garden gardens or have joined a CSA and are at a loss over what to do with all these veggies.  While the internet surely provides many recipe resources, and I do my best to provide my readers with a tried-and-true recipe every month, I must recommend my favorite book for learning about how to cook greens. 

     Let me first say that I nev
er recommend cookbooks - simply because 1) there aren' t usually enough good recipes from one book to recommend the purchase, and 2) most people don't use them for anything more than bookshelf decoration.  That being said, Greens Glorious Greens is a must-have for any kitchen in which adding in veggies is a priority.  Every recipe I have tried from this book is not only simple to prepare (usually very few ingredients), but also super-quick and, most importantly, DELICIOUS. 

     If that weren't enough, it provides a fantastic description of all those greens (you know that "wall of green" in the supermarket?) that you may or may not know about, how to shop for them, store them, and then how to prepare them.

     You are probably thinking I wrote Greens Glorious Greens - I so wish I had! - I have recommended it and gifted it to so many people that I would probably be able to retire very soon.  My goal is always to share the incredible information that I find every day about food, our bodies, and the energy we are meant to exude.  I am working on a cookbook of my own that I hope to be able to recommend to you by the fall - stay tuned!

Recipe of the Month
Raw basil pesto

The benefits of consuming raw food are almost too numerous to list, but chief among them is the abundance of life-giving enzymes that cooked foods simply do not supply.  Take advantage of the basil thriving in your garden to create this raw pesto that is bursting with flavor.  Toss it with raw zucchini noodles (use a potato peeler) or as a spread in lieu of hummus.  Either way, you will want to make a double batch and freeze some for when the basil isn't taking over your backyard garden!

3-4 cups packed basil leaves
3/4 cup pistachios, shelled
1/4 cup olive oil
1 tsp Celtic sea salt
1/2 tsp fresh-ground black pepper

Blend all ingredients in a food processor until well combined to desired consistency.  Add more oil if needed.
