Greetings!
Ever since I was a little girl, I dreaded the words "bathing suit season." The thought of squeezing myself into that merciless piece of spandex could send me into a panic - one that often led me straight to the kitchen snack cabinet.
My focus was all about the physical feeling of being seen and revealed as a fat person, and all the judgements that went along with it. I spent so many years making the crucial mistake of believing that having excess weight was the problem. It took me over 25 years to realize that being overweight is a symptom, not a problem. When the focus is on being balanced, healthy weight falls into place. Maybe that is why so many diets fail - they treat the weight as the evil enemy, when all along, it is just your body trying to tell you that there is an imbalance somewhere, and, oh, by the way, could you please find it?
Imbalances can come from secondary food (the food we eat) or primary food (everything else in life that feeds us) - and they don't always manifest in excess weight. They can show up in the form of fatigue, irritability, sluggishness, bloat, difficulty digesting, anxiety, allergies, sweet cravings, dark circles under the eyes, and feelings of being overwhelmed and tense. Whichever the symptom, the Spring season provides the perfect time to cleanse and rebuild a stressed-out body who may have fallen out of balance - before you have to put on a bathing suit.
Consider the messages your body is sending you every day. Next month, I will be starting two Spring detox groups - one in my Kings Park office, and another by telephone conference for those who aren't local. (Scroll down for more information.) I encourage you to take advantage of the opportunity to balance out your stressed organs and to cleanse and rebuild with my support and guidance, along with the support of others who choose to do the same. I hope you will join us for this year's "Spring cleaning."

Recipe of the Month Dandelion Frittata
Yes, I said dandelion - those weeds that we spend so much time and effort pulling OUT of our gardens, are exactly what we are meant to be eating in Springtime. Dandelion is a super detoxifier, especially of the blood and liver, which makes it ideal this time of year, after a long winter of heavy meals. Packed with vitamins A and C, iron, and loaded with more calcium than spinach, dandelion is often found in mixed green salads or "Spring Mix" lettuce boxes. You can buy (or grow) your own dandelion for tasty vegetable sautés and frittate (the Italian version of an omelet, or a crust-less quiche). Here is one of my favorite frittata dishes.
4 Red Bliss potatoes, washed 3 cups dandelion greens, washed, stems removed, chopped 2 tbsp. extra virgin olive oil 1 medium onion, sliced into crescents 2 garlic cloves, minced 6 eggs celtic sea salt and fresh ground black pepper to taste Grana Padano parmigiano cheese, grated for garnish
Preheat oven to 350º. Steam potatoes for about 20 minutes, or until tender - allow to cool. Bring 2 cups water to a boil and add dandelion to cook for about 3 minutes - set aside. Heat 1 tbsp oil over medium heat in a medium cast iron skillet and add onions to cook until translucent. Add garlic after about 10 minutes and cook for 1-2 minutes longer. Remove from skillet and set aside. Chop cooled potatoes with skin on. Add remaining oil to skillet and add potatoes, salt and pepper to cook for about 5 minutes. Remove potatoes, lightly oil skillet and layer onions, then potatoes, then greens. Beat eggs together with sale and pepper and pour over potato/greens mixture. Sprinkle with parmigiano. Bake for 20-30 minutes. Slice into pie wedges and serve hot.
