Greetings! After a long, sunny summer filled with
outdoor fun and lots of celebrating, I am hearing quite a bit of the
phrase that usually suggests having enjoyed oneself in excess: "I need to get back on track."
I started to think about what that really means. Is "the track" some sort of diet? Is it equal to "being good?" Maybe it's our idea of "the track" that causes us to keep falling off of it.
Much of my work as a counselor involves undoing years of diet mentality
-- all those damaging words and phrases that play with our minds,
causing us to think that the only two options are: to eat salad and be
good, or eat ice cream and be bad. Diet thinking actually causes us to abuse ourselvesby eating forbidden foods in excess. I encourage my clients to shift
their thoughts to believing that eating (any) food and being a good
person are two very separate notions. Then we can start to see that we
are good all the time. And in knowing that we are good, we feel that we
are good, and start acting like we deserve to feel good all the time - even when we eat chocolate, ice cream, etc.
This September, as we all get back to our routines of work and eating
and cooking, I encourage you to think of "the track" as the road of your
life, of which you cannot stray, as long as you are alive. You do not
have to wait for Monday morning, or January 1st to start taking care of
yourself with real foods that nourish and heal. Every meal is an opportunity to do something positive for yourself.
Eating and being healthy have nothing to do with being on a diet --
they are about living and embracing the moments that we are blessed
enough to experience. And when we fully accept that idea, we will never
feel "off track."
Wishing you a smooth road ahead, Jennifer

Recipe of the Month Italian tomato sauce
Got a ton of garden fresh tomatoes? Make this sauce and freeze the extra for a pasta dish on those cool fall days when the abundance of summer tomatoes are all but a memory.
3 pounds garden-fresh tomatoes 1 onion, diced 2 tbsp. extra virgin olive oil 3-4 garlic cloves, minced 1 tsp. fennel seeds 1 carrot, shredded handful fresh basil leaves, chopped 1 tsp. dried oregano 1 tsp. dried parsley Celtic sea salt and freshly-ground pepper to taste
Slice an "x" in the bottom of each tomato and drop into a pot of boiling water for 3-5 minutes. Using a slotted spoon, lift each tomato into a bowl of ice water. Remove skins and slice in half to scoop out seeds. Dice and set aside.
Heat oil over medium heat and add onion until translucent. Add garlic and cook for 2 minutes. Then add tomatoes, all herbs, salt, pepper and carrot. Bring to a boil. Reduce heat and simmer for a minimum of 30 minutes and up to several hours. Use within a few days or freeze for later use.
