Love is in the air this month as paper valentines and candy hearts are exchanged all around us.  You might be thinking about doing something special for your spouse, girlfriend, boyfriend or family members:  a special meal, fresh flowers, a meaningful gift.  Have you thought about the one who loves you most?

I am referring to the one who is always there for you - the one who never lets you down, no matter how bad the treatment - the one who processes, digests and assimilates not only your food but your thoughts and surroundings as well.  It's a big job, but it is a labor of love.  Do you get any love from you?

This month, show your inner self how grateful you are for its unending service and faithfulness.  This means expressing love through the food you feed yourself and the thoughts you choose to think.  Take note of the number of times you consciously opt for a poor food choice or a negative thought and turn it around.  Do you love yourself enough to stop hurting yourself?

True love is all about what's in your heart.  Who would understand that better than your body, your inner self, your gut intuition?  It's only in there where real healing and vibrant health can manifest.

Healthy Cooking 101
Three-class series begins March 1

If you find yourself asking questions like these, then join us for a three-class cooking series that will change your perspective about

 what's feeding your body and
what's harming your body


In each class, we will discuss what's missing from our diets, how to add those foods in, and then create and share three simple, healthful and delicious dishes that are sure to become your family favorites
(especially since they are in my house!)

Discover how simple, inexpensive and delicious cooking for your health's sake can be.

Dates: Mondays - March 1, 8, 15, 2010
Time: 7:00-9:00pm
Place: Smithtown High School East

Cost includes class, recipes and dinner

 Residents:  $31   Non-residents:  $38  Seniors:  $27
A $15 food fee will be collected in class

If you can't make one of our scheduled cooking classes, but really want to attend, then grab a few friends and create your own!

You choose the date, the topic and the food!

Topics can be customized for your individual health concerns or may include:

   Cooking for the holidays
Seasonal cooking (Spring, Summer, Fall, Winter themes)

Recipe of the Monthbeet risotto
Beet and goat cheese risotto

Those of you who know me know that risotto is one of my all-time favorite dishes to make.  If you have been to my house, chances are I have made you risotto.  This one has Valentine's Day written all over it:  the beets (and other red, antioxidant-rich ingredients) lend their beautiful color to the rice for a heart-healthy and super-special treat.  It's nearly impossible to miss the love in this dish ~

5 cups vegetable stock
1 1/12 cups diced cooked beets
4 tbsp. extra virgin olive oil
1 red onion, finely chopped
2 garlic cloves, crushed
2 teaspoons chopped thyme, plus extra for garnish
1 1/2 cups arborio rice or short-grain brown rice
1/2 cup red wine
3 oz. soft goat cheese, diced
1 cup pecans (or pignoli), toasted and chopped
4 cups packed baby spinach, chopped
Celtic sea salt and freshly ground black pepper to taste

Place stock and any beet juices in a saucepan and bring to a gentle simmer.  In a separate saucepan, heat oil and sauté onion, garlic, thyme, salt and pepper and cook over low heat for about 10 minutes, stirring occasionally.  Add the rice and stir for 1 minute until grains are glossy.  Stir in wine and bring to a boil for a few minutes, until wine is absorbed.  Stir in beets and lower to medium heat.

Ladle in 1 cup of stock, and stir until absorbed.  Continue to add about 1 cup at a time, stirring constantly until absorbed before adding the next cup, until rice is al dente and all stock has been absorbed.  Stir in spinach.

Remove from heat and gently stir in goat cheese and pecans.  Cover and allow to stand for a few minutes until cheese has melted.
