Recipe of the Month
Crispy roasted leeks

Leeks are a brilliant stroke of Mother Nature's Spring paintbrush ~ they are the classic detoxifier, drawing out toxins, building the immune system and even melting fat. They provide a good source of fiber, vitamin B6, iron and magnesium, and a very good source of vitamins A, C and K, folate and manganese.  Enjoy this delicious dish as you cleanse and rejuvenate your body.

6 leeks, halved lengthwise and cleaned
olive oil
3 tbsp mascarpone cheese (optional, but delicious!)
Celtic or Himalayan sea salt
freshly-ground black pepper
juice of 1 lemon
3 slices sprouted-grain bread (Ezekiel brand, for example)

Preheat oven to 375º.

Drizzle leeks with olive oil and lemon juice, season with salt and pepper.  Bake for 15 minutes, until leeks begin to soften and caramelize.

Place bread into a food processor or high-speed blender and pulse until you have bread crumbs.  Heat 2 tbsp olive oil in a skillet over medium heat and stir in bread crumbs until crisp and golden.  Season with a little salt and pepper.

Remove leeks and dot evenly with mascarpone cheese.  Scatter bread crumb mixture and return to oven for 5 minutes to melt cheese and crisp leeks.  Serve immediately.
