How great it this warm weather!  Summer will be here before you know it...  swimming, hiking, biking and beach parties are just around the corner.  I have gotten so many requests from people wanting to do a spring cleaning to get rid of the little bit of fat they might have put on over the winter.  It is a natural tendency to store some fat over the winter as a survival mechanism.  Now that it is spring our body naturally wants to shed those excess pounds and clean out as we become more active and spend more time outside....with less clothes on.

 

In the next few days I will be launching my Not Just Raw Detox ProgramIt is a combination of 2 weeks of recipes and processes to guide you through a gentle detox to lose weight, increase mental clarity, reduce wrinkles and so much more by eating raw and cooked food.  The program is unique in that I have included some daily processes to help clear your mind so you stop struggling with your food and it becomes easy to keep the weight off.

Help your digestion with this spring vegetable 
                                                       
                         asparagua

Asparagus that delicious delicate shoot that arrives in the spring has been considered a delicacy since ancient times. It is part of the Lily family with 300 varieties, 20 of which are edible. This plant will not only help your digestion it will give your body a real boost.

  

Asparagus contains inulin which is a carbohydrate that provides our digestive tract with some unique health benefits. Unlike most other carbs inulin doesn't get digested in the first part of the digestive tract, instead it passes undigested all the way to the large intestine. There it feeds and sparks production of  certain beneficial bacteria like lactobacilli and bifidobacteria that help nutrient absorption and lower the risk of colon cancer. Asparagus is high in fiber which helps stabilize our digestion and keep food moving through us quickly to prevent fermentation and waste build up.



Asparagus also contains protein (4-5 grams per cup), B vitamins and folic acid which is great for vegetarians. B vitamins play an important role in the metabolism of sugars and starches so are crucial for blood sugar management.



Asparagus has a unique combination of anti-inflammatory phytonutrients saponins, which help reduce excessive, unwanted inflammation and may ease arthritic pain.  Asparagus can reduce levels of an inflammatory substance homocysteine; which is an amino acid linked to heart disease.
 


Asparagus has antioxidant nutrients comparable to many of the cruciferous vegetables like cabbage and cauliflower. It contains good amounts of vitamin C, beta-carotene, and the minerals zinc, manganese, and selenium.  Anti-inflammatory and antioxidant nutrients protect us from chronic health problems like type 2 diabetes and heart disease. Asparagus has an antioxidant glutathione which has properties which may reduce the risk of cancer

  

Asparagus is a diuretic and increases kidney function; this may also help you reduce water retention, blood pressure and urinary tract infection. 



When buying asparagus look for firm thin stems with green or purplish closed tips. You don't want the stalks to be too thick or woody.


Did you know asparagus are more perishable than many other vegetables? They lose water, wrinkle and harden 3x faster than lettuce. It is best to buy asparagus in the farmers market and eat within 48 hours of purchase. You can also wrap the ends of asparagus in a damp towel to prevent it from breaking down and losing nutrients.


Thin asparagus do not require peeling. If the stalks are thicker peel with a vegetable peeler. When the asparagus are fresh break off the end with a snap, if it is a little older and softer it will be easier to cut it. If you are cutting the asparagus into pieces cut them after cooking.
 


There is a funny thing about asparagus that effects about 50% of the population, it makes your urine smell within about 30 minutes of eating it. It is a certain sulfur compound mercaptan that gives this strange odor to the urine. It is the same compound that gives skunks their bad smell The effects on urine are harmless. Another funny thing is only half the population can smell it too. Whether you can smell it or make it, no problem, it is harmless either way.



Marcel Proust wrote about his experience of this in Swann's Way:...

"the precious essence that I recognized again when, all night long following a dinner at which I had eaten them, they played, in farces as crude and poetic as a fairy play by Shakespeare, at changing my chamber pot into a jar of perfume."

  

You do not have to agree with Proust about the perfume to enjoy your asparagus this spring, they are delicious so go right ahead

 

Roast Asparagus 

2 servings

 

1 ½  lb fresh asparagus thin ones are best ( if think peel them)

4-8 Tb Olive oil

Celtic salt

Fresh pepper

 

Preheat oven to 400 degrees

Cut off the tough ends of the asparagus.

On a baking sheet mix asparagus with olive oil so they are completely coated

Spread them out in a single layer.

Sprinkle with salt and pepper.

Roast for 20-30 minutes depending on the size until tender  

 

You can also grill them instead of roasting using the same recipe.  Be careful not to burn them.

 

Asparagus with Lemon Dill Sauce 

2 servings

 

1 ½ lb asparagus with ends broken off where they naturally break

2 Tb fresh dill

1 Tb minced shallot

1 Tb extra virgin olive oil

1 Tb lemon juice

1 tsp Dijon mustard

Sea salt & pepper

 

Steam the asparagus until crisp tender 5-7 minutes.

Meanwhile whisk together the dill, shallot, oil, lemon juice, mustard, salt and pepper.

Pour over asparagus and fold gently to coat asparagus leaving all the asparagus tips facing the same direction.

Serve.

Tune into a feeling of joy or happiness.  You can do this by thinking of someone you love; you loving them and them loving you.  You can even bring up this feeling of joy by thinking of a pet you love or tune into the feeling of joy for being alive.  Bring up as much joy in this moment as you can.    Notice if there are any "yeah but" thoughts.  Notice any resistance to feeling joy.  This becomes a tappableissue.  Say "I am having trouble feeling joy in this moment". How true is that? Rate that statement with a number 1-10 where 1 is I hardly feel that way at all and 10 it is completely true. Write that number down. Let's start tapping.

 

While tappping the karate chop spot on either had, repeat these phrases out loud

 

Even though I am afraid to let myself feel joy because if I feel joy nothing will ever get better, I accept who I am and how I feel.

Even though I am afraid to feel joy, I have to be careful about feeling joy. I don't feel safe feeling too much joy. I deeply and completely accept all of my feelings about this.

Even though I have a hard time feeling joy, what about all of my problems? How can I feel joy when I have all these problems? I deeply and completely love and accept myself anyhow

 

Follow the initials where to tap while saying each of the phrases below. Check the chart if necesary. 

 

EB I am afraid to feel joy
SE I don't know how to just let myself feel joy
UE I don't feel safe feeling joy
UN I feel anxious if I am not worrying about my problems
CHIN How can I just let go and feel joy
COLLARBONE It seems irresponsible for me to feel joy, I am supposed to worry to make things better

Now check in again with the statement again. What number are you at now when you say "I am having trouble feeling joy in this moment". Notice if you are feeling lighter. Even a few points make a big difference. Tapping is something we do many times to clear the energy. So in a few minutes with this powerful technique of tapping, you allowed yourself to open up to a little more joy and maybe even a lot more joy. You can do this daily to open yourself up to more joy.
