Hello ,

The Swedish pop group Abba had a number one hit years ago "Take a Chance." A roll of the dice may be fine to see who pays for dinner, but there are some things you just can't risk - a long weekend, a vacation, and surely not a honeymoon.  For those seeking to spend these times being pampered and pleased with respect for your quest for solitude, the sure bet on Mackinac Island is the premiere bed and breakfast -- Bay View.

We are once again pleased to open our doors to many who will be returning, and those first time guests who we hope will become friends and members of our far-scattered B & B family.  Our Chef Extraordinaire Rose Grant has once again taken the helm in the kitchen, tweaking new recipes and dusting off the much-loved standbys like Peach French Toast, chocolate chip cookies, and other "from-scratch" delights. Returning for her fourth season is Becky Kevwitch, our bullet-proof resident manager who does an outstanding job to make sure all is in order at both Bay View and our sprawling Mackinac City inn, Brigadoon.  Becky, Lorie, Harold, Annemarie, Angie, Dotline, Romaine and the rest of our ace crew have swept the veranda, set out the comfy rockers, aired out the rooms, fluffed the pillows, and polished our true-to-period furnishings. Our entire staff stands ready to take you from chaos to serenity and provide all the assistance and amenities needed to make your visit back in time more than you expected.

Bay View is pleased to announce that we are the very proud recipient of the TripAdvisor 2013 Certificate of Excellence, which is given only to businesses receiving consistently high customer ratings. We thank you for this honor and for trusting us with your very special memories. We strive every day, every moment to earn your continued business and praise.

The lilacs are already blooming. The horse-drawn carriages line the streets, and the staff of Bay View is ready to serve you with new world amenities alongside old world charm. We look forward to seeing you soon.

Faces of Bay View:
Captain Dave and 50 Free return to Mackinac

Ahoy, mates! Look who's back on the Island for 2013. It's Captain Dave and 50 Free!

Mackinac Island visitors met Captain Dave last year, and we are so glad that he has dropped anchor at Yoder Dock this season to offer wonderful sailing excursions on his 50-foot world class vessel.

Ask at the Bay View desk about Captain Dave's charters that can be as tailored or as "free style" as you like.  Board, stretch out, and enjoy sailing the Straits of Mackinac under a cloud-wisped, sun-soaked sky.

Capt. Dave

50 Free is a beautiful 50-foot world class sailboat, available for charter this summer. Docked on Yoder Dock, 50 Free is your chance to see the best views the bay has to offer.

Captain Dave holds a USCG Masters Mariner's License and has more than 40 years experience sailing the Great Lakes, Bahamas, Caribbean, Belize, and the East Coast. He's even crossed the Atlantic!

Bay View Blend Coffee: Not the Same Old Grind
Bay View Blend Coffee

The world is a safer place when some folks have their coffee before taking on the day ... even when they're on vacation. Our Bay View Blend gourmet coffee is not just exceptionally good, but research has shown that, in moderation, coffee can actually be good for you.

Here's a rundown of just a few of coffee's health benefits.

  •  Coffee -- even decaf -- has disease-fighting antioxidants that can lower your risk of cancer, diabetes, and stroke.
  • Caffeine acts a stimulant to your central nervous system, an effect that can lower the risk of depression in women.

  • That same stimulant can also lessen your risk of Parkinson's Disease.

  • According to a Harvard study, the more coffee a man drinks, the less likely he is to develop prostate cancer thanks to antioxidants that reduce inflammation and regulate insulin.

  • Antioxidants work wonders. They even make you less likely to develop Type 2 Diabetes, according to one study

Bay View Blend Coffee is a mlange of gourmet coffee beans (whole or ground) that yield a richer-than-Rockefeller flavor not found in any specialty shop -- and certainly not on a grocer's shelf.

The Best of Bay View Cookbook:
Rose and Lydia's Georgia Peach French Toast
Bay View Cookbook

Prep time: 15 minutes.
Serves 6-8

This recipe may also be prepared in advance and frozen to bake at a later date.
  •  stick of butter
  •  cup brown sugar
  • 1 cup Dark Karo Syrup
  • 1 32-oz. can of sliced or diced peaches in juice
  • 9 eggs
  • 2 cups whole milk
  • 1 tbsp vanilla extract
  • 1 loaf white bread
Melt butter with brown sugar and Kayro syrup. Bring mixture to a boil, stirring occasionally and remove from heat. Stir until mixture appears uniform and smooth.

Pour mixture into sprayed or greased 9 x 14 cake dish and let sit for five minutes to cool.
Drain one (1) 32 oz. can of sliced or diced peaches and save the juice. If you use sliced peaches, you may want to chop them up into chunky thirds. Distribute the peaches evenly over the top of butter/syrup mixture.

In your largest mixing bowl, blend the eggs, milk, and vanilla extract.

One at a time, dip each piece of white bread into the milk mixture and lay flat, side by side over the top of the peaches and syrup mixture forming a long single row. Continue the dipping process and overlap the previous bread row by about half. Continue until the dish is full. You may want to think about how to lay it out before you start dipping the bread. Practice makes perfect.

Once you have filled the baking dish, pour the remaining mixture evenly over the top. Sprinkle generously with cinnamon, cover, and place in refrigerator to sit over night.

Baking:
Thaw or let sit (in refrigerator over night if necessary) until mixture reaches room temperature.

Bake at 350 degrees for about 40 minutes or until top is lightly toasted.

Let stand to cool for 5 to 10 minutes. Sprinkle generously with powdered sugar. Optional: serve with a 50/50 mixture of the drained peach juice and pancake syrup on the side.

We hope you enjoy this Bay View & Brigadoon favorite, and think of us with every bite!
