With each season that ends, as we store the rocking chairs, slip the dust covers over the furniture, and lock up for the winter... we are gratified and thankful. Around November we have time to slow down and reflect on the previous months. It seems we always ask, "Could this year have been actually better than the last?" It doesn't seem possible, but you continue to make Bay View Bed and Breakfast the premier choice on Mackinac Island.
We are privileged to have hosted some precious, memory-making moments for both newlyweds just beginning their future together, and for "veteran" couples marking milestone anniversaries of 20, 30, or more years in the trenches. The Best of Bay View Cookbook
Happy Hollandaise!
During the holidays, we know your mother, aunt, grandmother, and other Queens (and kings) of Cuisine flex their creative muscles to "draw the aawwww" from the mouth of every guest around the table. "Iron Chef" has nothing on these competitors.
Bay View Bed and Breakfast has its own unique recipes, as you know. And we've included three in this newsletter: Peach French Toast, Chumley Yoder's Amish Oatmeal Pie, and Bahama Mama Pie (if you're counting calories, you'll need all your fingers and toes). These yummy concoctions are also included in our Best of Bay View Cookbook, now in its third printing. May we suggest this for the chef on your shopping list?

Rose's Cheesy Potatoes breakfast casserole...no doubt, a Bay View favorite!
Spray a noon stick coating on the bottom of a 9 x 13 baking dish, layer chopped onions, chopped colorful peppers (red/yellow and or green) chopped mushrooms, and optional chopped ham or browned ground sausage (hot or mild)
In separate bowl combine 4-5 +- cups frozen hash browns, or other shredded potatoes with 1, 16 oz carton sour cream and a pinch of salt & ½ teaspoon of black pepper.
Spread potato mixture over the top of onion and pepper mixture...do not blend .
Sprinkle generously with cheddar cheese.
Spread 2 cans cream of mushroom soup mixed with a bit of milk (not to runny) on top of cheese.
Bake at 350 for 45 minutes.
* There was a time when another B&B asked for this recipe... Rosie said "Hail NO" !

Chumbley Yoder's Amish Oatmeal Pies (pg. 91 in the Best of Bay View Cookbook)
Ingredients
1 1/2 c. whole milk
1 tsp. vanilla
3 T. butter or margarine, melted
1 1/3 c. dark brown sugar
3 eggs, lightly beaten
1/3 c. lightly cruched walnuts
2/3 c. old-fashioned oatmeal (not quick oats)
2/3 c. coconut
1 (9 or 10 inch) pie shell, unbaked
Directions Preheat oven to 425 degrees. Combine all ingredients. Mix thoroughly. Pour in shell. Sprinkle with additional coconut. Bake for 10 minutes at 425 degrees. Reduce heat to 350 degrees and bake for 30 minutes or until knide inserted in middle comes out clean or your neighbors start knocking your door down for a piece of your pie. Best served with a scoop of vanilla ice cream and Bay View Blend coffee of course. Too Good!

Rose & Lydia's "Georgia-Peach" French Toast (pg. 49 in the Best of Bay View Cookbook)
Microwave or stove top preferably the night before (May be prepared in advance and frozen to bake at a later date.)
Melt 1 stick of butter, 1/2 cup of brown sugar, 1 cup dark Kayro syrup together. Bring to a gentle boil and remove from heat. Stir until mixture appears uniform and smooth. Pour mixture into sprayed or greased 9 x 14 cake dish and let sit to cool.
Drain one (1) 32 oz. can of sliced or diced peaches (Save the drained peach juice) * If you use sliced peaches, you may want to chop them up into chunky thirds Distribute the peaches evenly over the top of butter/syrup mixture
In your largest mixing bowl, blend 9 whole eggs, 2 cups whole milk , 1 Tablespoon vanilla extract.
One at a time, dip each piece of white bread or sliced french bread into the milk mixture and lay side by side over the top of the peaches and syrup mixture forming a long row. Continue to repeat the dipping process and overlap the previous bread row by at least half. Continue until the dish is full. You may want to think about how to lay it out before you start dipping the bread. Practice makes perfect. Once you have filled the baking dish and any voids, pour the remaining mixture evenly over the top. Sprinkle generously with cinnamon, cover, and place in refrigerator to sit over night. (Also freezes well before baking at a later date) Thaw or let sit if necessary, until mixture reaches room temperature. Bake at 350 degrees for about 40 minutes or until top is lightly toasted. Let stand to cool for 5 to 10 minutes. Sprinkle generously with powdered sugar and serve with an optional 50/50 mixture of the drained peach juice and pancake syrup on the side. Serves 6-8 We hope you enjoy this Bay View favorite, and think of us with every bite! Best served with Bay View Blend Coffee...of course.
