It's great to be back on the Island preparing for another opportunity to host both familiar faces and those who are checking in for the first time. The gang's all here! Chef Rose is singing in the kitchen, warming the oven, and rattling her pots and pans. Our beds are freshly-made, the pillows fluffed, and floors polished. The ferry boat crews and dock porters have donned their best smiles and are ready to whisk you to your magical escape.

Memorial Day on Mackinac Island Bay View Honors Those That Served Our Country
Memorial Day was originally enacted to remember those who had died during the Civil War. The tradition continued and has spread to include American soldiers who have given their lives in all wars. Those who have never had to fight, so we understand, cannot fathom what has been endured by those who go into combat for us.

We are thankful for them, and invite you to attend the Memorial Day Observance at 8:30am at Fort Mackinac Post Cemetery. Innkeeper Doug's great-great grandfather, Dr. John R. Bailey, served as a surgeon and highest ranking officer at Fort Mackinac. We also invite you to watch and share this video.
Remember to say "Thank you," whenever you see a member of our armed forces. We owe them much.

In the Land of Horse Buggies & Bicycles A Horse's Tail

You can take the girl off the island, but you can't take the island out of the girl. Twelve year old Sara Bailey Yoder (aka Sara B') isn't content to hear the clip-clop of horses hooves on pavement. She wants them beneath her whether training in Georgia near her winter home or enjoying her summers in Michigan.
Under the scrutinizing eye of trainer Gina Benson-Cook, Sara B' is shown here during a dressage training session riding Saia, a registered Oldenburg, at Centaur Farms in GA. Sara B' trains here with Gina during the winter months and with Trainer Sue Morrise in northern Michigan during the summer months.

Chris Botti is an accomplished trumpet player from Portland, Oregon, who has been nominated for 5 Grammy awards including "Best Pop Instrumental Album," and has had 3 of his albums reach the Number 1 position on the Billboard Jazz Albums Chart.
From time to time Doug reconnects with his music friends in Nashville. It only make sense that one of his friends would have to be another trumpet player, and the discussion inevitably drifts to who's who in the trumpet world these days. Doug's long-time good friend and trumpet player extraordinaire, Don Sheffield, both agree that Chris Botti is the whole package.
Chris is a commanding presence on stage even when surrounded by stellar-stars like Sting, Steven Tyler, Yo-yo Ma, John Mayer and Katherine McPhee. His duet with Steven Tyler singing "Smile" to his father is exceptional.

Rose's Rolled Omelette
The InnKeeper's Choice & traditional Bay View & Brigadoon favorite...
Ingredients
- 6 eggs
- 1 cup flour
- 1 1/2 cup milk
- 3 TBSP melted butter
- 1/2 cup chopped onion
- 1/2 cup chopped green and or red bell pepper
- 1 cup chopped ham (bacon or sausage, or both)
- 1 cup freshly chopped or diced tomatoes
- 1 small bunch of fresh spinach leaves
- 1 cup shredded mild cheddar cheese
- Pinch of salt & pepper
Directions
- Preheat oven to 350 degrees.
- Place first seven ingredients in a large mixing bowl, and whisk until smooth.
- Add green peppers, onion, ham, or any other vegetables of your choosing.
- Cover a large cookie sheet with aluminum foil. Spray heavily with cooking spray (Pam or similar). You might consider using a nonstick foil...that works for some. I still recommend using a cooking spray...butter flavored preferred.
- Pour the whisked batter evenly onto foil.
- Bake at 350 degrees for 15 minutes.
- Remove from oven when omelette is lightly brown.
- Sprinkle with shredded cheddar cheese, chopped tomatoes, and lay spinach leaves out flat. Remember, you can use your own combination of ingredients. Just be sure to cover the omelette completely.
- Beginning at one end, roll the entire omelette away from you. *Wear cotton or prep gloves if you have them...Like me, it' may be too hot to handle..
- Cut into slices, sprinkle with more cheese and add a few parsley flakes for color.
Serves 6
