The cast of Golden Girls

From 1985 to 1992 millions of Americans tuned in weekly to watch the NBC smash comedy "The Golden Girls." It still airs weekly on cable networks and features the character Sophia Petrillo - a brutally forthright and no-holds-barred, petite Sicilian. On the series, Sophia began many of her childhood stories with: "Picture this. Sicily. 1932..." Using a palette of colorful words, she would "paint her picture" of the occasion so vividly that we could see every person, every setting, and every action.

 

 In the spirit of Sophia, we'd like you to picture this: Bay View & Mackinac Island. The year you most recently visited. Dear Bay View:

 

I am not much of a baker, that may be changing. From the Best of Bay View cookbook I tried your mango bread recipe this morning and was amazed at how easy it was...plus the bread came out so moist and tasty. I am always looking for ways to use fruit and veggies in recipes I can put in my childrens' lunch boxes and this bread is it. Not too sweet, just the outstanding taste of mango. Next time I will try it with nuts. I am looking forward to making other dishes from the Best of Bay View Cookbook such as the your Beef Tenderloin w/ Red Wine Sauce and Rosie's Fried Green Tomatoes or Fried Eggplant...yum !

Mackinac Coffee Corner
What is it about coffee that makes it so great?

 

Bay View Blend Coffee

Kahveh, Caffe, Java,  or Bay View Blend- call it what you will. Coffee is an integral part of American social and office life. 

 

The beverage was first cultivated in Ethiopia and became wildly popular in the Arab world in the early 15th Century.  The majority of coffee is now exported from South America with Arabica beans garnering 80% of the market share compared to caffeine-packed Robusta beans' relatively small 20% market share.

 

Whole bean coffee retains its freshness longer than ground, but all coffee is affected by light, heat, oxygen and moisture. As soon as the bag is opened or the seal broken on the container, staleness starts creeping in. To reduce this impact, transfer the beans or the grounds to an airtight container and store in a cool, dry, dark place such as a refrigerator. The longer coffee is exposed to oxygen, the more it is robbed of its taste.  For even fresher coffee, grind only what you need for each batch!

  

The flavor and aroma of coffee are comprised of 400 chemicals. Amazing, huh? The process for removing caffeine from coffee without disturbing the taste is time consuming, complicated, and less than perfect. Even decaffeinated coffee contains a miniscule amount of caffeine remaining.    

 

Coffee can be enjoyed in many ways, and takes on different personalities by using flavorings--before or after brewing. Add ground cinnamon, cocoa powder, chocolate syrup, bits of vanilla bean, citrus peel, figs, etc. to ground coffee just before brewing for a natural taste. Pre-flavored coffees are created from beans that have been evenly sprayed prior to packaging. Of course, there is always the option of adding flavored creamers and sugar to each cup for that perfect flavor.

A half century ago, Doug's grandmother, Sara Bailey Yoder, welcomed to her tourist home on Mackinac Island newlyweds Betty and Gail Peterson of Princeton, IL. Mrs. Yoder's tourist home had seven private bedrooms and two community bathrooms that were shared by all guests.

This past June, Betty and Gail Peterson came back to where it all began and celebrated their 50th anniversary at Bay View! With its 23 true-to-period rooms, modern amenities, and private baths, it is hardly the tourist home from 1961. For this monumental milestone, Chef Rose Grant created a very special cake, and our "tourist home honeymooners" relived the magic found only on Mackinac Island.

Pumpkin Soup  

An excerpt from the Best of Bay View Cookbook (pg. 183)

 

Pumpkin SoupIngredients 

  • 4 T Butter
  • 1 Spanish onion (chopped finely)
  • 20 fluid oz. chicken broth
  • 1 Small pumpkin peeled and cubed
  • 20 fl. oz. hot milk
  • pinch of allspice
  • salt and pepper
  • chopped parsley

 

Directions

  1. Melt 2 tablespoons of butter in a big saucepan and simmer over medium heat.
  2. Add onion to the melting butter to soften.
  3. Add chicken broth and bring it to a gentle boil.
  4. Add the pumpkin and simmer until tender.
  5. Allow to cool and put into a blender or food processor until smooth.
  6. Return to the saucepan and add the hot milk and all of the seasonings.
  7. Serve hot with the remaining butter stirred in at the last minute. Garnish with the sour cream, chopped parsley and croutons. 
  8. Enjoy!

German Apple Baked Pancakes  

An excerpt from the Best of Bay View Cookbook (pg. 183)

 

 

German Apple Baked PancakesIngredients 

  • 1 Tablespoon Butter or margarine, melted
  • 1/3 chopped pecans
  • 1 Granny Smith apple:  peeled, cored & diced
  • 1/2 teaspoon ground cinnamon
  • 3 Tablespoons maple syrup
  • 1 1/2 cups mixed pancake batter

 

Directions

  1. Pour melted butter in a 9-inch pie plate.
  2. Arrange apple spices evenly in bottom of pie plate.
  3. Sprinkle cinnamon and pecans evenly over apples.
  4. Drizzle syrup evenly over apples.
  5. Pour pancake batter evenly over the apples.
  6. Bake in a 350 degrees oven for 30-35 min. or until top springs back when touched.
  7. Slide knife around edges to loosen, then invert onto a serving plate.. 
  8. Re-drizzle with maple syrup

Can serve 2 men, possibly 4 ladies, or 1 teenager
