I had the delightful experience of teaching my Healthy Cooking Basics class this past weekend and it brought back for me all the essential tenets of the way I cook and eat. I likely overwhelm my students at times, as there is so much to know about what it means to be a healthy eater.
But there are some really basic concepts which have worked for me over the years, and I thought it might be good to share them with all of you. These suggestions will be good reminders to everyone who took the class, but also as a guide for those of you who did not.
1) Vegetables and fruits are the most important foods we eat...and we should eat more of them than any other food. I encourage all of you to figure out how to get A LOT of vegetables and fruit (veggies more than fruit) into your daily diet . Can you make veggie omelets for breakfast, or potato-veggie pancakes (scroll down)? Can you have a salad or vegetable soup for most lunches? Can you snack on vegetables and fruits? In your dinners can you have one serving of protein, one serving of carb and 2-3 servings of vegetables?
I talked endlessly about vegetables in the class, and rambled off one my favorite breakfasts, potato veggie pancakes, so thought I would include it here. These do not have to be just for breakfast: they are to die for layered with a bed of steamed spinach for a yummy afternoon or evening meal.
