Hi Everyone,
I was in the Bootcamp with Nadine class the other day at my gym, and as I was sweating, grunting and pushing my way through the workout, which is by far the most challenging thing I do all week, I commented in some way about how I didn't necessarily like doing the work, but I loved the results. This prompted a little discussion on finding the...I don't know what you call it...mettle?... to get out of bed or away from the computer/TV, and push yourself to get moving on a regular basis in a meaningful way. So there are a couple of thoughts here. One is that challenge of finding the inner athlete, and even when you find she/he, how to keep that part of you alive. The other is this "moving in a meaningful way" business. On the first thought: How do you find the person inside yourself who is willing to really push you beyond the excuses, stories and alleged disabilities to be physically active? And how do you keep finding that person? One of the interesting pieces of this discussion was the fact that pretty much everyone in that room, no matter how healthy, strong and fit they were, oftentimes still had to talk themselves into getting moving. I found this to be surprising, even though it is certainly true for myself. But I didn't expect Nadine, who is probably one of the most fit and energetic people in my life, to say it was true for her too! To me this tells me I am not alone in this "laziness". Come to Finley Center and learn the secrets of light baking: Make delicious desserts without tons of sugar, white flour, fats, etc. I will even be covering gluten-free baking. I will be making Black Bean Brownies, Lemon Cheesecake Swirls, Fresh Apple Cake and we'll even make a fresh fruit sugarless sorbet (not baked...).
This is a weekday evening class, so not only do you get a fun, educational experience, you get yummy food made for you after a long day at work! This is a demo-only classes so you just watch and eat! How can you go wrong?

Slow Cooker Honey Sesame Chicken
Ingredients:
4 boneless, skinless chicken breasts (thighs would be fine too)
Salt and pepper
1/2 cup honey
1/2 cup soy sauce
1/2 cup diced onion
1/4 cup ketchup
1 T olive oil or canola oil
2 cloves garlic, minced
1/4 teaspoon red pepper flakes (optional - doesn't really add heat, just adds more flavor)
4 teaspoons cornstarch dissolved in 6 Tablespoons cold water
Sesame seeds Directions: Season both sides of chicken with lightly with salt and pepper, put into crock pot. In a small bowl, combine honey, soy sauce, onion, ketchup, oil, garlic and pepper flakes. Pour over chicken. Cook on low for 3-4 hours or on high 1 1/2 - 2 1/2 hours, or just until chicken is cooked through. Remove chicken from crock pot, leave sauce. Dissolve 4 teaspoons of cornstarch in 6 tablespoons of cold water and pour into crock pot. Stir to combine with sauce. Replace lid and cook sauce on high for ten more minutes or until slightly thickened. Cut chicken into bite size pieces, then return to pot and toss with sauce before serving. Sprinkle with sesame seeds and serve over rice or noodles. *You can also sprinkle more red pepper flakes on top if you want more heat.
Sweet Potatoes Stuffed with Chipotle Black Bean & Corn Salad
- 4 small sweet potatoes or yams, baked
- 1 (15 oz) can black beans, rinsed and drained
- 1 cup corn*
- 3 green onions, thinly sliced
- 1/2 cup cilantro, chopped
For the Vinaigrette: - 2 limes, zested and juiced
- 1 tablespoon oil
- 2 teaspoons honey
- 2 teaspoons adobo sauce (from a can of chipotles in adobo)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper

Instructions - In a bowl, add the black beans, corn, onions, and cilantro. Stir to combine. In a smaller bowl, mix together the lime zest and juice, oil, honey, adobo, salt and pepper. Pour over the black bean mixture and toss to combine.
- Slice open the baked sweet potatoes. Stuff potatoes with the Chipotle Black Bean & Corn Salad. Serve.
Notes
*Fresh corn is best, but when out of season, frozen (thawed and cooked) or canned is fine. Or try Trader Joe's frozen Roasted Corn.

Another Amazing Commencement Speech

 I published a great commencement speech last issue and here is yet another remarkable one by the brilliant Arianna Huffington. She is speaking at Smith College, which is a women's school, and talks about re-defining success: specifically for women, but this does apply to everyone. It is long, but I listened to it while cooking dinner, as you do not need to watch it. Well worth listening to!!
