Hi Everyone,

I have recently begun a new job, which is requiring substantial time as I learn the ropes. So this section, which is the most time-consuming part of the newsletter, I am keeping short and sweet this issue. The rest of the issue is chock full of fun and informative things, so keep reading...and I hope you all have a joyful, exciting, and HEALTHY two weeks!

This is a weekday evening class, so not only do you get a fun, educational experience, you get yummy food made for you after a long day at work! This is a demo-only classes so you just watch and eat! How can you go wrong?

This is my favorite class of the series because I get to put on my baking hat and make some to-die-for
desserts which will have little to no sugar or fat!! Yet they will be so yummy you will be shocked.

RECIPES

  Recently on PInterest someone posted a recipe from a website called
Skinny Mom (click here for website) where I found some yummy recipes. Some call for ingredients I would not use or recommend (Miracle Whip??) but many have good, healthy ideas. Here are a couple which work for me!


      
SKINNY PASTA CARBONARA
  • 8 ounces whole wheat or rice angel hair pasta
  • 8 slices turkey bacon or Canadian bacon, chopped to ½ inch-1 inch pieces
  • 2 tsp minced garlic
  • 1 cup frozen peas, thawed
  • 1 tbsp butter 
  • 3 egg whites
  • 1 egg
  • 1 cup skim milk or almond milk 
  • ⅛ tsp nutmeg
  • ¼ tsp garlic powder
  • ⅛ tsp salt
  • ⅛ tsp black pepper
  • ¼ cup grated Parmesan Cheese
  •   

Instructions

  1. Cook the pasta according to package, drain and return to pot.
  2. While pasta is cooking, in a large non-stick skillet, cook bacon over medium heat for 5-7 minutes until crisp.
  3. Add garlic to bacon and cook for 1 minute.
  4. Add the peas and I Can't Believe It's Not Butter Spread and cook for 2 minutes to heat through. Transfer to the pot with the pasta and toss lightly.
  5. In a medium sauce pan, whisk together egg and egg whites. Whisk in the milk, garlic powder, nutmeg, salt, and pepper. Whisk over medium heat for 5 minutes until the sauce turns thick and creamy. Pour over pasta and toss to combine.
  6. Sprinkle pasta with even parts of Parmesan cheese before serving.

Per Serving (1/4th of dish):

Calories: 378.2  Fat: 8.5g  Carbohydrates: 49.7g   Fiber: 7.5g   Protein: 23.7g

 





HEALTHY CHICKEN POTSTICKERS

1 pound ground chicken

1.5 cups of pre-packaged broccoli slaw or finely sliced Napa cabbage
2 cloves garlic, minced
1 Tablespoon freshly grated ginger
1 Tablespoon soy sauce
1/2 teaspoon crushed red pepper (optional)
salt and pepper
1 package won ton wrappers
sesame oil
soy sauce for dipping

 

1) Cook chicken in a large skillet over medium high heat until completely done.  

2) Drain off any fat. Return chicken to pan and add broccoli slaw to pan. Cook for 3 minutes, or until the vegetables are softened. Add garlic, ginger and soy sauce, cook for 1 more minute. Remove pan from heat and stir in crushed red pepper if using, salt and pepper to taste.

 

3) Lay out 9 won ton wrappers on a clean surface. Moisten the edges of the won ton wrappers with water using your fingers or a pastry brush. Spoon 1 tablespoon of the ground chicken mixture into the center of each won ton wrapper.

 

4) Fold won ton wrapper so that it forms a triangle. Gently fold edges to form pleats - this will help the pot stickers stay together as they cook. Repeat process until all filling is used.

 

Heat about 2 tsps sesame oil in a skillet over medium heat. Add a few pot stickers at a time to the pan lying on their side. Cook about 1-2 minutes or until golden brown, then turn over and cook on the other side. Repeat with remaining pot stickers. Serve with soy sauce for dipping.

 

Serves 6 (4 potstickers per serving)

Inspirational Shape-Up Challenge Winner

Annadel Fitness Center recently completed another 8 week Shape-Up Challenge. This is a competition for the most weight lost and it entails committing to taking 3+ classes a week, coming to a Shape-Up meeting weekly and getting weighed in weekly. Twice in the last 3 competitions Elisabeth has been the winner and I wanted to find out what her secret was, so we did an interview!

Elisabeth has recently started weekly meeting at Annadel called Fit For Life addressing weight, nutrition and mindset. Tuesdays 7:30pm.


WHAT PROMPTED YOU TO TRY THE SHAPE UP CHALLENGE THE FIRST TIME?
I was new to Annadel Fitness, and it seemed like a great way to really focus in on my weight and health. I tried new classes, learned strength training, and began eating healthier. I also stopped eating sugar and the weight came off. All of these major changes led to big results. I was able to lose 25 lbs in 10 weeks.

YOU TRIED IT A SECOND TIME, WHEN YOU HAD GAINED SOME OF THE WEIGHT BACK, AND IT DIDN'T GO AS WELL. WHY NOT?
During this time I had personal challenges in my life that needed my attention and the challenge of losing weight was overwhelming. Not to mention, I was disappointed I had gained some of the weight back and I didn't feel good about myself. Also, I gave into an "all or nothing" mentality and believed if I couldn't lose 20 pounds, why try as hard. Truthfully I was not invested from the beginning the way I had been during the first challenge.

THE THIRD TIME YOU TRIED YOU WON AGAIN! WHAT WAS DIFFERENT FROM THE PREVIOUS TIMES?
I feel truly different now. I committed to going vegan for a year, and I've given up sugar for over 90 days. I found an elimination diet keeps me away from trigger foods and the further I get from them the less power they hold over me. I have no desire to go back to the way I was eating. I am  enjoying cooking more and committed myself to a stable exercise routine.

YOU'RE TEACHING THIS NOW. WHAT DO YOU WANT PEOPLE TO LEARN?

~Weight loss doesn't have to be about guilt and shame. Be kind to yourself and forgive yourself for the past rather than beating yourself up.
~Eliminate trigger foods as much as possible: your pantry is a great place to start! Be aware of the addictive nature of these foods.
~Substitute negative habits for healthier habits and unhealthy foods for a more satisfying healthy option. Denying ourselves for periods of time can often hurt us in the long run.

My New Job!

 

I am so excited to be working for a lovely dance studio in Rohnert Park called The Ballroom. I am doing graphic work for them and finding out all about the studio and what they offer...it is extensive! They offer instruction for all different dances on an ongoing basis, and some great workshops as well. I am putting posters in for 2 being offered in June as well as a link to their newsletter (which might look strangely familiar in style...).
