I was thinking the other day about commitment. Not about relationships, and that kind of commitment, but about commitment to actions, projects, dreams, etc. How many of us set out to do something: be it get a degree, quit smoking, start a new business, and of course lose weight, only to give up after awhile and just let it go. This is something which hits home personally because I am one to set out on a path and try things, and then let go of them if they do not fly within what I would consider a reasonable amount of time. I can have great enthusiasm for my dreams and yet let them go if necessary. Does this make me flaky and non-committal or is this a practical response to circumstances? I am not sure there is an answer to that. I think the things we dream about and are important for us to manifest are also scary and in some cases giant mountains to climb. Although we think we should be able to climb them we often are perhaps biting off more than we can chew, so to speak. But it doesn't mean we should simply throw those dreams away. Cooking Classes with Janet Ciel!!

 Come check out my series of cooking classes through Parks & Recreation at Finley Center in Santa Rosa! The third class focuses on Lean Appetizers and Side Dishes, and we will make some great party foods, such as Corn Fritters and delicious salads, like Asian Cabbage Slaw and Pearl Barley Salad.
My aim in teaching these classes is to enlighten everyone on how incredibly easy and yummy it can be to lighten up your meals. Less, fat, less sugar, less calories, but great flavor and always super easy! I am not a gourmet chef; I am a regular person who loves to cook healthy meals, and teach others how to do it too. I am also big into shortcuts, so know lots of healthy products which make meals yummy with no effort at all.
These are all weekday evening classes, so not only do you get a fun, educational class, you get yummy food made for you after a long day at work! These are demo-only classes so you just watch and eat! How can you go wrong?
Lean  Appetizers and Side Dishes Wednesday, May 8 6pm - 8:30pm
As we get close to Memorial Day and the party season, we want to get out our party foods, and this class will give you all sorts of pointers on making awesome potluck fair which will fool the greatest "healthy food" skeptics.
Baking Light Tuesday, June 18 6pm - 8:30pm
This is my favorite class of the series because I get to put on my baking hat and make some to-die-for
desserts which will have little to no sugar or fat!! Yet they will be so yummy you will be shocked.

Suzie in Santa Rosa told me about her quinoa cakes and sent me the recipe. And I made some to-die-for pancakes the other morning so thought I would throw them into the mix...so I guess this is the "pancake" recipe issue.
SUZIE'S QUINOA CAKES 2.5 cups cooked Quinoa - about 1.25 dry (this will work with other grains such as barley, rice, couscous...I like to make these with leftover cooked grain) 1 small onion, minced 4 cloves garlic, minced 1/4 cup low fat cheese (try different kinds like feta, mozzarella, etc)
1/4 cup bread crumbs (you can use gluten, free if desired) 2 eggs plus one egg white
1)Cook quinoa as directed and allow to cool. 2) Spray frying pan and saute garlic and onion 3) Mix quinoa with sauteed garlic and onions, cheese (grated or crumbled), bread crumbs and eggs. 4) Form into small disks and cook in pan with spray oil and additional minimal oil. Makes 9-12 cakes per cake: 143 calories 21 g carbs 4 g fat 7g protein 2g fiber SWEET POTATO CARROT PANCAKES
1 large sweet potato, peeled 1 onion, peeled and chopped 2 carrots, peeled 1/2 small cauliflower, chopped 1/2 cup egg substitute or 1 egg and one egg white 1/4 cup flour salt and pepper to taste
1) Use a food processor to grate the potato, onion, carrots and cauliflower, or grate/chop finely by hand. 2) Cook all of the above in the microwave for 5 minutes to soften. 3) Mix in rest of ingredients and form into patties. 4) Spray a large frying pan and add a tsp of oil. Form patties and fry on both sides, Repeat until batter is used up.
Makes 3 servings 10 -12 pancakes
per serving: 167 calories 37g carb 5g fat 8g protein 2g fiber

This hilarious story was posted on Facebook. Not sure if it is true but it will certainly make you laugh. Enjoy...
After I retired, my wife insisted that I accompany her on her trips to Walmart. Unfortunately, like most men, I found shopping bori ...ng and preferred to get in and get out. Equally unfortunate, my wife is like most women - she loves to browse. Yesterday my dear wife received the following letter from the local Walmart Dear Mrs. Woolf, Over the past six months, your husband has caused quite a commotion in our store. We cannot tolerate this behavior and have been forced to ban both of you from the store. Our complaints against your husband, Mr. Woolf, are listed below and are "documented by our video surveillance cameras": 1. June 15: He took 24 boxes of condoms and randomly put them in other people's carts when they weren't looking. 2. July 2: Set all the alarm clocks in Housewares to go off at 5- minute intervals. 3. July 7: He made a trail of tomato juice on the floor leading to the women's restroom. 4. July 19: Walked up to an employee and told her in an official voice, 'Code 3 in Housewares. Get on it right away'. This caused the employee to leave her assigned station and receive a reprimand from her Supervisor that in turn resulted in management getting involved causing management to lose time and costing the company money. 5. August 4: Went to the Service Desk and tried to reserve a bag of chips. 6. August 14: Moved a 'CAUTION - WET FLOOR' sign to a carpeted area. 7. August 15: Set up a tent in the camping department and told the children shoppers they could come in if they would bring pillows and blankets from the bedding department - to which twenty children obliged. 8. August 23: When a clerk asked if they could help him he began crying and screamed, 'Why can't you people just leave me alone?' Emergency Medics were called. 9. September 4: Looked right into the security camera and used it as a mirror while he picked his nose. 10. September 10: While handling guns in the Sports department, he asked the clerk where the antidepressants were. 11. October 3: Darted around the Store suspiciously while loudly humming the ' Mission Impossible' theme. 12. October 6: In the auto department, he practiced his 'Madonna look' by using different sizes of funnels. 13. October 18: Hid in a clothing rack and when people browsed through, yelled 'PICK ME! PICK ME!' 14. October 22: When an announcement came over the loud speaker, he assumed the fetal position and screamed 'OH NO! IT'S THOSE VOICES AGAIN! 15. Took a box of condoms to the checkout clerk and asked where the fitting room was. And last, but not least: 16. October 23: Went into a fitting room, shut the door, waited awhile, and then yelled very loudly, 'Hey! There's no toilet paper in here.' One of the Staff passed out.
I wonder if I'll have to go along on many more shopping trips?
