The other day I was at my gym at an unusual time for me: late morning. I belong to a small, sweet gym in Sebastopol: Coaches Corner, which is a very comfortable place: inclusive of all ages, sexes, body types, etc. So it was no surprise to me that as I looked around on this specific day I saw a nice mix of people on the treadmills and various weight machines. Then I looked more closely and realized that the gym was filled with people my age and older: quite a few were seniors. There were maybe two people under 40 and everyone else was easily over 60: many were likely in their 70s and 80s. They all were fully engaged in some activity, and most looked in decent shape and motivated.
Now I do often see people my age or older working out, so I registered this bit of observation and went about my day. The next day I was riding my bike and was passed by a group of bikers: mostly men, and not one of them looked younger than 60. Several looked much older. They blew by me and sped off.

Cooking Classes with Janet Ciel!!

 I'm excited to start my new series of cooking classes through Santa Rosa Parks & Recreation. My first one is this Tuesday!! My aim in teaching these classes is to enlighten everyone on how incredibly easy and yummy it can be to lighten up your meals. Less, fat, less sugar, less calories, but great flavor and always super easy! I am not a gourmet chef; I am a regular person who loves to cook healthy meals, and teach others how to do it too.
These are all weekday evening classes, so not only do you get a fun, educational class, you get yummy food made for you after a long day at work! How can you go wrong?

Easy Healthy Meals:
THERE ARE STILL A FEW SPACES LEFT FOR THIS CLASS!
This is an ideal class for new or minimally experienced cooks, or for those of you who are product-curious. I will demo in this class how to take a very basic, very healthy combination and turn it into a variety of meals, having them all taste unique and delicious by using a variety of healthy, smart products available in the local grocery stores, or easy combos of spices.
Tuesday, March 5 6pm - 8:30pm  The Magic of Fruits & Vegetables
This class will focus on making vegetables that sing, and that substitute for starch in a meal, thereby saving calories and carbs. We'll do some great things with fruit, including making an all fruit sorbet.
Tuesday, April 2 6pm - 8:30pm Lean  Appetizers and Side Dishes
As we get close to Memorial Day and the party season, we want to get out our party foods, and this class will give you all sorts of pointers on making awesome potluck fair which will fool the greatest "healthy food" skeptics.
Wednesday, May 8 6pm - 8:30pm B aking Light
This is my favorite class of the series because I get to put on my baking hat and make some to-die-for desserts which will have little to no sugar or fat!! Yet they will be so yummy you will be shocked.

My friend Jill Nussinow, the Veggie Queen, http://www.theveggiequeen.com/ posted a link to Excalibur Dehydrators the other day on Facebook. I have been pining for a dehydrator for forever, and eventually will indulge. But for those of you who have one, here are a couple of recipes which sounded interesting to me from their website: click here 
JERKY MADE SIMPLE
INGREDIENTS:
- Meat (you can do this with any meat: I imagine an extra firm tofu might work as well?)
- Soy Sauce
- Worcestershire Sauce
- Black Pepper
DIRECTIONS:
- 1. Cut the meat and soak in soy sauce/Worcestershire sauce mix. Ratio is about 80% marinade, 20% meat.
- 2. Soaking a full 24 hours is best, overnight it good.
- 3. Lay meat on dehydrator trays and and dry at 155F until meat cracks. This takes approximately 6-8 hours. Sprinkle with black pepper.

CHOCOLATE BANANA FRUIT ROLL
INGREDIENTS: 4 Ripe bananas 2 tbsp. Unsweetened cocoa powder 1 tbsp. xylitol or sugar
DIRECTIONS:
1. In a food processor, puree bananas (broken into chunks), cocoa and sugar until smooth.
2. Spread out to ¼ inch thickness, as evenly as possible, on a leather sheet or a drying tray lined with parchment paper, leaving it slightly thicker around the edges. Dry at 130°F.
3. Leather should be evenly firm, with no visible moist spots, and should still be flexible.

I am a strong advocate for creating a support system for activities. I have the biker chicks photo above, but there are dozens of groups which gather to do physical activities, such as walks or hikes, and also other social things. If we have a circle of friends we are active with we are much less likely skip the experience. And having friends always makes us feel so much happier and fulfilled in our lives. So here is a list of several groups which meet regularly. Thank you to Marlene for sending much of this information to me.

Just a little note to say I am no longer teaching my Cardio Dance and Core Class. I took on some work last winter which I thought would not begin in earnest until May, but in fact I have work beginning this Friday, and subsequent Fridays as well, so the time/day of this ends up not working. I will try to find another situation in the future as I love teaching it and would love to get some of you to try what I do.
