Hello Everyone,
I am starting a new format with this section of the newsletter. I know many of you read this, but some might not, or just like to skim it. I have created a blog page on my website and will begin this here, and finish it there, so if you enjoy what you're reading just follow the link...
I thought because we just celebrated a holiday dedicated to love that I would expound on this topic and hopefully share some thoughts of value.
Love is such a confusing thing. Years ago when I was married I felt unfulfilled, and Valentine's Day felt hollow and sad. When I was single for years after that I also felt an emptiness and loneliness during the holiday that seemed to celebrate all things "couple". In those years I felt it was essential that I find someone to love, but I was not doing a very good job of it.

Cooking Classes with Janet Ciel!!

 I'm excited to start my new series of cooking classes through Santa Rosa Parks & Recreation. My aim in teaching these classes is to enlighten everyone on how incredibly easy and yummy it can be to lighten up your meals. Less, fat, less sugar, less calories, but great flavor and always super easy! I am not a gourmet chef; I am a regular person who loves to cook healthy meals, and teach others how to do it too.
These are all weekday evening classes, so not only do you get a fun, educational class, you get yummy food made for you after a long day at work! How can you go wrong?

Easy Healthy Meals:
This is an ideal class for new or minimally experienced cooks, or for those of you who are product-curious. I will demo in this class how to take a very basic, very healthy combination and turn it into a variety of meals, having them all taste unique and delicious by using a variety of healthy, smart products available in the local grocery stores, or easy combos of spices.
Tuesday, March 5 6pm - 8:30pm  The Magic of Fruits & Vegetables
This class will focus on making vegetables that sing, and that substitute for starch in a meal, thereby saving calories and carbs. We'll do some great things with fruit, including making an all fruit sorbet.
Tuesday, April 2 6pm - 8:30pm Lean  Appetizers and Side Dishes
As we get close to Memorial Day and the party season, we want to get out our party foods, and this class will give you all sorts of pointers on making awesome potluck fair which will fool the greatest "healthy food" skeptics.
Wednesday, May 8 6pm - 8:30pm B aking Light
This is my favorite class of the series because I get to put on my baking hat and make some to-die-for desserts which will have little to no sugar or fat!! Yet they will be so yummy you will be shocked.

You all know what a chocolate addict I am so I am always up for finding good chocolate recipes that won't inflate my waistline. The cheesecake recipe is one I adapted from the lemon version and I have to say, they are to die for!
These cookies are chewy and chocolaty. A little warning, however: Neither of these recipes are super low in calories, etc, so bake when you have lots of friends to entertain! They will be a big hit.
CHOCOLATE SWIRL CHEESECAKE BITES
INGREDIENTS:
2 8 oz packages low fat cream cheese
3/8 cup low fat sour cream
5/8 cup xylitol or sugar
¼ cup unsweetened cocoa powder 3/8 cup egg substitute or 2 egg whites
2 tsp vanilla
¼ cup chocolate chips
DIRECTIONS:
Preheat the oven to 325 degrees F (165 degrees C). Line muffin tin with colorful cupcake liners.
In a medium bowl, mix together the cream cheese, sour cream and egg whites until smooth. Stir together the cocoa and xylitol (sugar); mix into the cheese batter along with vanilla. Pour into the prepared muffin tins and smooth the tops.
Melt the chocolate chips in the microwave and keep warm and soft. With a knife take small amounts and drip onto tops of cheesecakes. Do this quickly so they do not harden, and then swirl each with a knife.
Bake for 60 minutes in the preheated oven, or until the top is nicely browned. Cool completely before serving.
Makes 24 each cheesecake bite:
Calories: 64 Carbs: 4 Fat: 4 Protein: 3
CHEWY CHOCOLATE COOKIES
1/4 cup butter, softened
1/2 cup sugar or xylitol
1/4 cup brown sugar
1 egg white
1 tsp vanilla extract
1 cup all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/4 cup cocoa powder
1) Preheat oven to 375 degrees.
2) In a large bowl, beat butter and sugars together with an electric mixer until creamy. Add egg white and vanilla and mix until well blended.
3) In a medium bowl, combine flour, baking soda, salt and cocoa powder. Gradually add flour mixture to egg and sugar. Use a wooden spoon to work the dough together. Don't worry if the dough seems a little crumbly.
4) Form cookie dough into balls and place on to a cookie sheet lined with parchment paper or a silicone mat if you have one.
5)Bake for 8-10 minutes. Cool on cookie sheet for 1 minute, then transfer to wire rack to cool completely.
Makes 24-30 cookies
Per Cookie: Calories 55, Fat 2.3g Carb 10.3g, Fiber 0.5g, Protein 0.7g

Yep, its true. I am writing a novel. The only writing I have ever done which has been seen by others is in these newsletters. But I decided that I wanted to tell the story of my growing up overweight and overcoming it. So I am writing and now I am posting bits of it for you to read and give me feedback. I have no grandiose dreams about it other than really wanted to share the experience in hopes some might find it inspiring. And I thought if I shared it then I would be forced to work on it. Would love to hear your opinion, even if your opinion is negative.

This is from Sandra Lupien, who is retiring as Biking Coalition Director but will still handle the Biker Chicks Rides.
On June 22nd, Sonoma County Bicycle Coalition is hosting the inaugural, I Bike Sonoma County Century ride, presented by Whole Foods Market. "Century" refers to a 100-mile ride event, and indeed such a route is one of the four options at our event. The other routes are 65 miles, 35 miles, and 18 miles. I would like to suggest that we form a Biker Chicks team to participate in this event! Biker Chick Vicki Kenny are meeting later this week to brainstorm how this might work. I'm thinking we might do well to put together a small team committee to coordinate... Please think about whether you're interested in helping with this.
The ride is a benefit for Sonoma County Bicycle Coalition to support our work to make Sonoma County the safest, most accessible - the best! - place for everyone to ride a bike. Riders can pay a flat fee to ride, OR they can choose to pay $0 or a very small fee $10-$20 and sign up as fundraisers. Fundraisers agree to raise a minimum of $500 or $250 (your choice) by seeking donations from friends, family members, etc. To some of you this will seem like no big deal; for others, it will seem scary. I'm going to encourage (of course not require) all Biker Chicks to ride as fundraisers, and will be ready with tips and lots of cheerleading to help you succeed!

Come check out a fun, new workout me, Janet Ciel! This class is similar to Zumba, but with different music and also core strength training on mats. This class is designed for all fitness levels and ages. The music is unique and includes some well known songs from performers like Annie Lennox, Phil Collins, Jimmy Cliff, Carlos Santana and other rockers as well as old blues and swing. No hip hop or rap, just really fun, sometimes older music which will make you want to move! Come get a great workout and have fun as well!
