Hello Everyone, 

I was driving the other day, and a song came on the radio that kind of slammed me upside the head. First it reminded me of long ago, as it was an oldie but goody, as they say, but it also had a powerful message I needed to hear,
and I suspect some of you do as well. It was Joe Jackson's "You Can't Get What You Want, 'til You Know What You Want".

Those of you in my age group may well remember this song, but it is not necessary to know it to get the gist of what is being said here. I think the big question is, how can you expect to get what you want until you are truly clear as to what that is?

I think this is a problem for many of us. We lie in bed at night and dream of a thinner body, a better job, a happier marriage, or something else beyond our immediate scope, but never really take action because our desires are rather vague and murky. What exactly would it take for these things to happen? What are the steps involved, and how would you take action in a way that will not only create success, but are realistic and do-able?

I completely believe if we want to manifest something we need to give it our full attention, and quite honestly, passion. Think about the heady days when you were first working on losing weight, for example. Your entire focus was how to shop, cook, travel, and live within a framework of discipline and smarter choices. If you are starting a new business you are researching, planning and dreaming in living color of this new venture. You whole being is directed toward it.

And the cool thing is once you do make something happen that has meaning for you it empowers you to do more, take more chances, just feel a little more solid in who you are.

So if anyone reading this is feeling a vagueness about their journey I challenge you to pick one thing which you can dive into and make happen. Find the thing that fires you up like an incredible sunset, and take action. Let's make 2013 the year we look back on and say, "that was the year I started ________, and boy am I ever glad I did!

 

 
 
Cooking Classes with Janet Ciel!!

  
I'm excited to start my new series of cooking classes through Santa Rosa Parks & Recreation. My aim in teaching these classes is to enlighten everyone on how incredibly easy and yummy it can be to lighten up your meals. Less, fat, less sugar, less calories, but great flavor and always super easy! I am not a gourmet chef; I am a regular person who loves to cook healthy meals, and teach others how to do it too.

These are all weekday evening classes, so not only do you get a fun, educational class, you get a yummy meal made for you! How can you go wrong?

The Basic Meal:   
This is an ideal class for new or minimally experienced cooks, or for those of you who are  product-curious. I will demo in this class how to take a very basic, very healthy combination and turn it into a variety of meals, having them all taste unique and delicious.
Tuesday, March 5  6pm - 8:30pm  


The Magic of Fruits & Vegetables  
This class will focus on making vegetables that sing, and that substitute for starch in a meal, thereby saving calories and carbs. We'll do some great things with fruit, including making an all fruit sorbet.

Leancorn fritters Appetizers and Side Dishes 
As we get close to Memorial Day and the party season, we want to get out our party foods, and this class will give you all sorts of pointers on making awesome potluck fair which will fool the greatest "healthy food" skeptics.

aking Light 
This is my favorite class of the series because I get to put on my baking hat and make some to-die-for desserts which will have little to no sugar or fat!! Yet they will be so yummy you will be shocked.

RECIPES
I love perusing healthy cooking websites. Cooking Light has an excellent site and I was intrigued by their butternut squash recipes. They even have videos...check it out: click here for butternut squash video

 
Butternut Squash Lasagne 

Ingredients
  • Cooking spray
  • 3 cups chopped onion
  • 10 cups fresh spinach
  • 3/4 cup (3 ounces) shredded sharp provolone cheese
  • 1/2 cup chopped fresh flat-leaf parsley
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2
    large eggs  or 1 egg and 1/4 cup egg substitute 
  • 2 (15-ounce) cartons part-skim ricotta cheese
  • 3 cups diced peeled butternut squash
  • 6 cups Smoky Marinara (see below) 
  • 12 oven-ready lasagna noodles (such as Barilla)
  • 1 cup (4 ounces) grated fresh Parmesan cheese
Preparation
  1. Preheat oven to 375°.
  2. Heat a large Dutch oven coated with cooking spray over medium-high heat. Add onion; sauté 4 minutes or until tender. Add spinach; sauté 1 1/2 minutes or until spinach wilts. Combine provolone, parsley, salt, pepper, eggs, and ricotta cheeses in a large bowl.
  3. Place squash in a microwave-safe bowl. Cover and cook on high 5 minutes or until tender.
  4. Coat the bottom and sides of 2 (8-inch-square) baking dishes with cooking spray. Spread 1/2 cup Smoky Marinara in the bottom of one prepared dish. Arrange 2 noodles over sauce; spread 1 cup cheese mixture over noodles. Arrange 1 1/2 cups squash over cheese mixture; spread 3/4 cup sauce over squash.
  5. Arrange 2 noodles over sauce; spread 1 cup cheese mixture over the noodles. Arrange 1 1/2 cups onion mixture over cheese mixture; spread 3/4 cup sauce over spinach mixture.
  6. Arrange 2 noodles over sauce; spread 1 cup Smoky Marinara evenly over noodles. Sprinkle with 1/2 cup Parmesan. Repeat procedure with remaining ingredients in remaining pan. Cover each pan with foil.
  7. Bake at 375° for 30 minutes. Uncover and bake an additional 30 minutes.
  8. To freeze unbaked lasagna: Prepare through Step 6. Cover with plastic wrap, pressing to remove as much air as possible. Wrap with heavy-duty foil. Store in freezer for up to 2 months.
  9. To prepare frozen unbaked lasagna: Thaw completely in refrigerator (about 24 hours). Preheat oven to 375º. Remove foil; reserve foil. Remove plastic wrap; discard wrap. Cover lasagna with reserved foil; bake at 375º for 1 hour. Uncover and bake an additional 30 minutes or until bubbly.
Smoky Marinara
  • 1 tsp
    olive oil + cooking spray 
  • 3 garlic cloves, minced
  • 1/4 cup chopped fresh basil
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh or 2 teaspoons dried oregano
  • 2 teaspoons balsamic vinegar
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 (28-ounce) can crushed fire-roasted tomatoes, undrained
  • 1 (28-ounce) can crushed tomatoes, undrained
Preparation
  1. Heat oil in a large saucepan over medium heat. Add garlic, basil, parsley, and oregano; sauté 1 minute, stirring frequently. Stir in vinegar and remaining ingredients. Reduce heat, and simmer 10 minutes.
Nutritional Info: 254 calories   27.6g carbs   8.6 g protein    8.4 g fat   3.3 g fiber



Butternut Squash Gratin with Bleu Cheese and Sage 

  • 5 cups (3/4-inch) cubed peeled butternut squash (about 2 pounds)
  • 1
    (1 1/2-ounce) slice whole wheat or sourdough bread, toasted 
  • 4 teaspoons olive oil, divided
  • 2 cups thinly sliced onion
  • 1 tablespoon chopped fresh sage
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Cooking spray
  • 1/2 cup (2 ounces) crumbled blue cheese
Preparation
  1. Preheat oven to 400°.
  2. Steam butternut squash, covered, 10 minutes or until tender.
  3. Place bread in a food processor, and pulse 12 times or until coarse crumbs measure 1/2 cup. Transfer to a small bowl; add 2 teaspoons oil, and toss with a fork to combine.
  4. Heat remaining 2 teaspoons oil in a large nonstick skillet over medium-high heat. Add sliced onion to pan; saute 5 minutes or until tender, stirring occasionally. Transfer the onion mixture to a large bowl. Add butternut squash, chopped sage, salt, and black pepper to bowl, and toss gently to combine. Spoon squash mixture into an 11 x 7-inch baking dish coated with cooking spray. Bake at 400° for 20 minutes. Sprinkle crumbled blue cheese evenly over squash mixture, and sprinkle evenly with breadcrumb mixture. Bake an additional 10 minutes or until the cheese is melted and crumbs are golden brown.

Nutritional Info: 186 calories   30.9g carbs   5.1 g protein  6.4 g fat 4.8 g fiber

Annadel Fitness Open House!
I love Annadel Fitness and they are having their 2 year anniversary Open House Party on Saturday February 9th. This is how I found this place last year! All the teachers will be doing 15 minute demo classes (me too...mine is the last demo at around 3:30ish!) and there will be healthy snacks...and it is free! Biker Chicks!!

Sunday, Feb 10th is the next Biker Chicks ride. The route is TBA and the meeting time is 12:15. This is always a fun, easy ride for those riders who are newbies. This is an ideal ride to give you the incentive to use your bike more often!

Come check out a fun, new workout me,  Janet Ciel! This class is similar to Zumba, but with different music and also core strength training on mats.  

This class is designed for all fitness levels and ages.   

 

The music is unique and includes some well known songs from performers like Annie Lennox, Phil Collins, Jimmy Cliff, Carlos Santana and other rockers as well as old blues and swing. No hip hop or rap, just really fun, sometimes older music which will make you want to move!
