Hello Readers,  

I can't believe another year has come and gone! I was just re-reading what I wrote last year at this point in the newsletter and realized that we can have so many life-changing things happen to us during a year period, and yet we can still carry on, and move forward, finding the most resilient and adventurous parts of ourselves sparked by altered conditions.

As 2012 closes I think about the business which did not really manifest the way I had hoped. Healthy & Happy, as weekly meetings, did not fly. I had big dreams which had to be quieted and shifted. Being the eternal optimist that I am, I see this as a life lesson, though what I am meant to learn from it I am still uncovering. Meanwhile I am figuring out my next career, my future direction, and what exactly Healthy & Happy will evolve into, as the dream is not dead, just needing to be tabled and analyzed. What that looks like is still up in the air.

I always look at this time of year as a closing of one chapter and a beginning of another. Each year offers up Next....My dear friend Linda puts post-its on her bathroom mirror or on the refrigerator when she is upset or needs to shift a mindset, and they have one word on them: Next. Move on. Get out of the funk and into action. Time to let go of the emotions and take the reins.

You have an opportunity going into 2013 to get into the Next mindset. What will Next look like for you? Will it be similar to years previous or is there a huge Next waiting in the wings for you to live? What would you like your next Next to be?

Whatever waits for us in this upcoming year is up for grabs. I challenge all of you to dream big, reach for stars you have not yet grabbed, and make this a year you come to the end of and say, wow! I never imagined I could have a year as wonderful as I have had. Anything is possible.

RECIPES
Its the time of year when we end up baking. Here are a couple of great recipes which are lighter than their full fat/sugar counterparts, but just as satisfying.

 

  EASY ANGEL FOOD CAKE  

 

INGREDIENTS (CAKE):
3/4 cup cold water

3 egg yolks

3/4 cup sugar

1/2 cup Xylitol (or use sweetener of choice, or all sugar)

1 tsp vanilla

1 3/4 cup flour

1 tsp baking soda

1/4 tsp salt

3 egg whites 

 

DIRECTIONS:  

  1. Preheat oven to 350 degrees F (175 degrees C). Spray a 9 or 10 inch tube pan with canola oil. 
  2. Beat cold water and egg yolks together until mixture makes 1 quart - at least 10 minutes. Slowly add sugar and vanilla to egg yolk mixture, beating for at least 7 minutes.
  3. Sift the flour, baking powder and salt together. Fold into the egg yolk mixture.
  4. Beat egg whites until stiff peaks form and fold in smoothly to the egg yolk mixture. Pour batter into tube pan.
  5. Bake at 350 degrees F (175 degrees C) for 50 minutes. Turn upside down to cool in pan for 1 hour. Loosen sides and coax from pan.  Drizzle with chocolate sauce if desired.
DARK CHOCOLATE SAUCE
3/4 cup unsweetened cocoa
1/8 cup xylitol or sugar (or powdered sugar)
boiling water

Mix the cocoa and sugar together and add just enough boiling water to make a creamy sauce. Pour over individual slices.  

Makes 12 servings      Calories: 110   Carbs: 23  Fat: 2    Protein:4    Fiber: 2
 

 

LEMON CHEESECAKE BITES

INGREDIENTS:

3  8 oz packages low fat cream cheese

1/4 cup low fat sour cream

1/2 cup xylitol or sugar
1/8 cup sugar 

1 Tbl flour
 1/2 cup egg substitute or 2 egg whites 

2 Tbls meyer lemon juice

2 tsp lemon zest

1 meyer lemon sliced thinly  

1/8 cup extra xylitol  or sugar for "candy-ing" 

 

DIRECTIONS:
  1. Preheat the oven to 325 degrees F (165 degrees C). Line mini muffin tin with colorful cupcake liners. (you can use regular muffin tin instead) 
  2. In a medium bowl, mix together the cream cheese, sour cream and egg whites until smooth. Stir together the flour and xylitol; mix into the cheese batter along with lemon juice and lemon zest. Pour into the prepared muffin tins and smooth the tops.  
  3. Put xylitol in small bowl and dip lemon wedges in, and place single wedge on each muffin. 
  4. Bake for 60 minutes in the preheated oven, or until the top is nicely browned. Cool completely before slicing and serving.

    Serves 36 minis or 18 regular 
    Calories  67 per mini   Carbs: 4   Fat: 4   Protein: 2    Fiber: 0

Get Ready to Dance!!
I am so excited to announce that I am starting a Cardio Dance class next month at Annadel Fitness Center! If you are a fan of Zumba you will recognize many of my moves, but my music is different. Being in my late 50's I enjoy swing and blues, and performers like Tom Petty, Annie Lennox, Carlos Santana and Van Morrison to name a few.
Come get a great workout and have a great time doing it!
