Hi Everyone,


Whew! We made it through one of the scary holidays...How
hard was it for you? Or joyful? Or some of both?

Holidays bring out the best and worst in us when it comes to eating, and I think, and so much depends on how solid we feel in our commitment to getting leaner and healthier that we'll act in ways which serve us.

But even if we do so many things right: not taking that second piece of bread, even though you really wanted it...having the teensiest bits of gravy and cranberry sauce: no way would you have done this last year...skipping the mashed potatoes completely...and that pumpkin pie slice was a nano-sliver...We often tend to remember the things we did wrong.

Most of us focus in on all the bad stuff, and diminish the good. And that is a sure-fire way to give into that "why bother" business that creeps in and allows us to give up.

We do give up on this journey. So many times we start with good intentions but we simply do not follow through. This business of beating ourselves up over perceived indiscretions, and then deciding that we should "wait until January", or until 'we're ready" is the perennial downfall of most would-be weight losers. With that mindset we dive in full force into foods we love because we think that "in January" or "when we're ready" we will not be able to eat them anymore. This does so much harm it is heartbreaking.

What's the answer? Stop shutting the light switch off! Stop deciding you are either on or off this way of eating. If you are always on your conscious self is alive and allowing you to make wiser choices than when you decide you'll deal with this another time. So what if eggnog will not be around after the holidays. Does that mean you have to drink a quart? If you leave that switch on you might decide you can have a little bit in your coffee, or just an ounce or so.  Yes, pumpkin pie is yummy, but if the conscious choice place in your brain is fired up you might decide to eat the pumpkin part and skip the crust, or just take a small piece.

The single biggest secret to weight loss and maintenance is to keep on going, no matter what. Just like with any schooling or training, job or career, anything you do in life. Would you be a nurse/lawyer/accountant, etc. today if you treated your educational journey the way you treat your journey towards a healthier you? I suspect not.

The next scary holiday is upon us. I implore you to keep your healthy options open. Decide now that rather than wait until January you will take action to keep from gaining, and perhaps even work towards losing during December. What greater gift could you give to yourself and to those who love you then a renewed commitment to staying alive and healthy for many many years to come?

RECIPES  

I often buy ground turkey and then wonder what I should make with it. This week I decided on Tamale Pie, but didn't want the fattening cornbread, so decided to try it with a polenta tube instead. Wow...absolutely delicious!

And living on an apple orchard means getting creative with apples. This cake is moist and delicious with half the fat, less than half the sugar and half the nuts of the original recipe. No one will ever know!

 

EASY POLENTA TAMALE PIE

                      

 

Ingredients:

  • Spray oil
  • 1 medium onion, chopped
  • 1 large red pepper, chopped
  • 1 pound ground turkey
  • 1 tbsp chili powder
  • 1 cup Trader Joes Frozen Roasted Corn
  • 1 cup salsa
  • 1 4-ounce can jalapenos, chopped, or diced green chilis (milder)
  • 2 medium tomatoes, chopped
  • 1 4-ounce can sliced olives
  • 1 tube polenta
  • ½ cup low fat grated cheese
  • ¼ cup coarsely chopped cilantro

Preparation:

 

Preheat oven to 400 degrees.

 

Sauté onion, and pepper in a large skillet over medium heat, crumble turkey and cook until no longer pink. Add chili powder, corn, tomatoes, jalapenos and olives. Simmer for 20 minutes. Transfer to an 11 by 7 baking dish.

 

Slice polenta into ¼ inch thick rounds and lay on top of turkey mixture. Sprinkle with cheese. Place in oven and bake for 20-25 minutes, until top is golden. Sprinkle with fresh cilantro before serving.

 

Serves 8

Per Serving: Calories 369, Total Fat 8.3g Cholesterol 42mg, Sodium 664mg, Carbohydrate 49.5g, Fiber 6.8g, Protein 23.9g



FRESH APPLE CAKE
  

 

Ingredients 

 4 cups fresh apples, chopped
3/4 cup brown sugar
1/2 cup xylitol (or white sugar or other natural sweetener)
2 cups flour
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
1/4 cup canola oil
1/4 cup applesauce (you can eliminate the oil and use all applesauce. The cake will be denser)
2 tsp vanilla
2 eggs, beaten
1/2 cup finely chopped walnuts

Instructions:
Heat oven to 350. Grease and flour a 9x13 " baking pan.

In a medium bowl mix apples, brown sugar and xylitol. Stir well and set aside.

In a small bowl mix together flour, baking soda, salt, and cinnamon. Set aside.

In a large bowl mix together oil, applesauce, vanilla and eggs. Add flour mixture, sugared apples and walnuts. Mix well.

Pour into baking pan and decorate with extra apples, if desired. Bake at 350 for 45 - 50 minutes or until knife comes out clean. Serve warm or cold.

Calories: 128  Carbs: 22  Fat: 4  Fiber: 1   Protein: 2

This can be topped with a dollop of creamy topping (though not necessary, as it is quite moist on its own):

1/4 cup non fat cream cheese
1/4 cup non fat plain yogurt
1/8 cup fresh squeezed orange or lime juice
1/4 cup powdered sugar

Mix together in a food processor and put one dollop per piece.

With cream : Calories 140  Carbs: 22  Fat: 5  Fiber: 1  Protein: 3

Polenta, which is basically cornmeal, is sold in this fashion at Trader Joes and many other markets. You slice it and in the case of the recipe above, it is baked. But it is also yummy fried in spray oil and topped with a sauce or cheese.

This is a unique product, in that the flavor of the roasting really makes any recipe sing.
