Best Boston Butt Recipe

"Here is my best recipe for Boston butt ( pork shoulder).
Rub
� c brown sugar
� c paprika
1Tbs. of each:
black pepper
salt
chili pepper
garlic powder
onion powder
cayenne pepper
Put in smoker with small pan of H2O or apple juice. Smoke/cook at 225�F while spraying from time to time with apple cider vinegar until you see a good bark forming. Then wrap in foil and finish smokin/cooking till done at 160�F internal temp.
I forgot to say I LOVE MY SMOKER!"

To open your smoker door or not? We get many questions on this. During the initial smoking process opening the door introduces air which may not be good for the wood/oxygen interaction. The wood might have moisture in it and oxygen could make it pop.
Later you can open the door and spritz your ribs, brisket or pork butt with apple juice. But opening the door does add cooking time and a slight loss of moisture.
