BUILD A BOWL TO BETTER HEALTH

Nutrition is a funny science;
because experts can scientifically prove
opposing theories and seemingly all be right,
it tends to lead to confusing and conflicting information that leaves us wondering:
"How do I know what is really healthy?"

For instance . . .
there are those who advocate
that dairy is necessary for calcium absorption
and bone growth, while others contend
that dairy is harmful, linked to cancer
due to the protein casein, and can actually
leech calcium from our bones.

Proponents of the egg industry insist
that eggs are a "perfect breakfast food"
while others contend that eggs
are a source of bad cholesterol.

And of course meat is very controversial.
Some maintain that meat
is a necessary protein source while others say
we should be avoiding it completely,
and still others who debate the differences between grass-fed and grain-fed,
organic and factory-farmed.

Lately, the most recent debate seems to be raging over the differences between juicing or smoothies: is one better than the other,
are they even good for us at all?

So many theories! So many opinions!
However are we to know what to eat???

ONE THING WE CAN ALL BE SURE ABOUT

is that the more life-energy we embrace in our foods, the more life-energy we will receive.
and Building a Bowl to Better Health
is a great way to start!

That means: color, vibrancy, sunshine,
nutrient-packed, plant-based,
live enzymes, vitamins and minerals!!!

HERE IS MY FAVORITE RECIPE:

BOUNTIFUL BUDDHA BOWL

1/2 cup cooked beans of your choosing
1/2 cup cooked quinoa or whole grain
1 cup steamed broccoli
1 cup tofu, cubed
1 cup fresh bean sprouts
1 cup diced tomato, cucumber, red onion
1/2 cup sliced scallion
1/2 cup shredded herbs of your choosing
1 cup dark leafy greens

Directions:
Line 1 cup dark leafy greens on the bottom of your bowl. Cover with warmed beans and quinoa. Add steamed broccoli and cover for one minute.
Dress with Lemon Tahini Dressing:

LEMON TAHINI DRESSING
1/4 cup raw Tahini
2 cloves garlic
1/2 cup fresh lemon juice
1/4 cup Nutritional Yeast
3+ T. water
Dash of sea salt and freshly ground black pepper
Blend all together until smooth

Once your salad is dressed, add all other ingredients.
Before mixing and digging in to your good health, please take a moment to look, smell and appreciate the beauty of this bountiful bowl!

How to Create YOUR own Buddha Bowl:

1. Find a unique, large sized bowl
which you can become accustomed to
as a symbol of nourishment and gratitude, and perhaps a pair of chopsticks
to complete the mood.

2. Use an abundance of
raw organic greens
to fill the majority of the bowl.
My favorites are kale, spinach, arugula and watercress and bok choy
which are packed with vitamins, minerals, water, chlorophyll, antioxidants and fiber.

3. Next, add in as many raw or steamed veggies as you like or have available.
Mixing textures and variations in taste
can be an enjoyable, relaxing creative process: crunchy, sweet, bitter, juicy.

4. Now it's time for protein!
If you are making this for a dinner recipe, it's nice to keep it light in the evening,
so you can add only 25% of
a protein-grain combo.
Some of my favorites are beans like garbanzo, black or black-eyed peas,
and grains such as quinoa or brown rice. Other delicious proteins could be walnuts, toasted almonds, pumpkin seeds, hemp seeds, or sprinkles of nutritious chia seeds.

How to Dress YOUR Buddha Bowl:

This final touch is the best part
and can be as varied as
a unique flower arrangement.

Drizzle your favorite vinegar, or splash tamari or Braggs and lemon juice, add hummus for a creamier texture.

Sprinkle finely chopped garlic, scallions, mild or hot peppers, sea salt, nutritional yeast, or cayenne.

Listen to YOUR tastes and discover
what feels nourishing to YOUR body.

Concentrate on tingling your taste buds!
Please, enjoy with gratitude!
