Strengthening and nourishing taro root forms a light and creamy soup base, cooked along with wakame sea vegetable and irish moss for a rich mineral base, strengthening and vitalizing lotus seeds, crispy fresh, bright green snap peas, beta carotene rich orange carrots, naturally diuretic and cleansing fresh daikon, potassium rich cauliflower, pancreas nourishing yellow onions, immune system strengthening shiitake mushrooms, live enzyme rich mild yellow miso, and a garnish of fresh green parsley.

Energy promoting medium grain brown rice is cooked with mineral rich kombu sea vegetable, then artistically assembled with stir fried cremini mushrooms, green peas, sweet yellow onions, enzyme rich fresh bean sprouts, beta carotene rich brilliant orange carrots, fresh ginger, tamari soy sauce, and a garnish of good for the liver pungent green scallions. Always a favorite!!

A rich and flavorful blend of juicy chunks of high protein tempeh, mineral rich kombu sea vegetable, naturally sweet, pancreas nourishing butternut squash, saut�ed yellow onions, sweetly stewed rutabaga, naturally sweet dried chestnuts, delectable roasted brussel sprouts, and burst of immune supporting flavorful shiitake mushrooms, stewed in a thick rich full bodied ginger and tamari base. Brightly garnished with fresh green scallions. An anti-oxidant packed protein and mineral rich dish that is especially good for relaxing the middle part of the body: the stomach and spleen/pancreas. Full of iron, beta-carotene, and vitamin C.

Pancreas relaxing, alkalizing whole grain millet is spiked with fresh yellow corn, formed into polenta like cakes, and smothered in an iron rich sauce of black beans cooked with flavor enhancing and mineral rich kombu sea vegetable mixed with naturally sweet yellow onions, fresh ginger, and chlorophyll rich fresh green chives.

BRAISED RED CABBAGE WITH KALE AND ARAME

This dish is a study in the naturally beautiful colors provided to us by our highly valued fresh vegetable friends that literally show their colors to represent their nutrients. Deep purple red cabbage is high in iron and beta carotene, and is braised in a toasted sesame oil, ginger, brown rice syrup, umeboshi plum, mustard, and shoyu sauce, then highlighted with lightly steamed chlorophyll rich dark green kale, and iron and mineral rich - good for the kidneys and head hair delicate black strands of arame sea vegetable, along with some sweetly saut�ed yellow onions, and a sprinkling of fresh green chives.

A delicious and creamy coconut custard layered dessert, the cake is a whole wheat pastry flour, sunflower oil, and "amasake" brown rice milk light as a feather batter, layered with rich and creamy high calcium, low fat tofu, almond, and coconut whip cr�me with subtle hints of vanilla, sweetened with the gently sweet and complex carbohydrate goodness of brown rice syrup, and garnished with toasted coconut flakes.

**Wholly Macro makes every attempt to maintain a totally vegan and allergen free kitchen cooking environment. We make every effort to avoid any type of cross contamination during food preparation. Most foods used in the Wholly Macro kitchen are not packaged, but instead are bought in the produce section or in bulk. But as you know, cross contamination is always a possibility, especially with bulk items. And in the few packaged foods that we do use, such as nut butters for example, it is common to find warnings on the manufacturer label stating that the item was processed in a plant that handles tree nuts, soy, wheat, dairy, gluten, shellfish, and so on.
Wholly Macro cannot be responsible for trace amounts of common food allergens that come from outside (packaged or bulk items), and therefore end up occurring within our prepared foods. Please use your own discretion in determining if our food is appropriate for your consumption, especially if you have severe food allergies.
We are always available to clarify any of the ingredients that we use, and assist you in your weekly selections, but we cannot keep track of your food allergies, sensitivities, likes, dislikes or preferences.

The Health Benefits Of The Lotus
We wrote a newsletter a few weeks ago about the importance of eating vegetables from all of the vegetable categories: Root Vegetables, Ground Vegetables, Greens, and Sea Vegetables. If you missed that newsletter and would like a little "refresher", you can check it out here.
One of the most unique and revered vegetables that we have had the pleasure of cooking and eating during our life long amazing journey into the world of super foods is the lotus. Part root vegetable, part ground vegetable, part leafy green, and certainly aquatic, lotus root, lotus seeds, lotus flowers, and even lotus stems can all be gastronomically enjoyed!
The entire plant is edible, super healthy, and delicious!
We'll be using lotus seeds this week in the Lotus Seed And Taro Root Miso Vegetable Soup, so we thought we'd say a few words about the many benefits of ingesting the lotus plant as the awesome vegetable that it is!

The lotus plant has been in use as a culinary vegetable and spiritual icon since ancient times, featuring a most well known recorded history of three to five thousand years in China and Japan.
But lotus holds a place of honor in the histories of Egypt and India as well.
In 2006 there was a King Tut exhibit at the Museum Of Art Fort Lauderdale.
Did anyone go to that??
We did, and we were surprised and amazed to see the lotus theme reoccurring over and over again throughout the exhibit.
Images of the lotus plant were carved into the ornate designs adorning the furniture found in King Tut's tomb.
They were fired into the intricate etchings on the pottery and artwork buried with the king.
Eating utensils such as bowls and plates were molded into the shape of lotus petals.
And paintings from King Tutankhamen's tomb depicted various forms of the lotus root, seeds, flowers, and leaves, all beautifully prepared as meals, and most obviously revered as an important and honored component of the diet of those ancient times.
At that exhibit, we learned, that in ancient Egypt, the lotus signified rejuvenation and endurance.
Images of the lotus flower and plant appear from the most ancient to the most current art in many Asian, Indonesian, and Egyptian cultures, and to this day the lotus is the symbol of purity, perfection, and beauty.
In Buddhism the lotus symbolizes faithfulness.

And in Traditional Chinese Medicine, all parts of the lotus plant are used to heal.
In Traditional Chinese Medicine, which macrobiotics and acupuncture related principles of healing are based upon, the lotus plant is used to strengthen intestinal fortitude, and to open the airways in the lungs.
Because remember, in Traditional Oriental - Chinese Medicine, the lungs and large intestine are an organ pair. They stay healthy (or become diseased), together.
Some other of Lotus' wide range of health benefits include its probable ability to improve digestion, reduce cholesterol, lower blood pressure, boost the immune system, prevent various forms of cancer, balance mood, relieve depression, increase circulation, and maintain proper enzymatic activity in the body.
The many health benefits of the lotus plant can be attributed to its unique mix of vitamins, minerals, and phytonutrients, including potassium, phosphorous, copper, iron, and manganese, as well as thiamin, pantothenic acid, zinc, vitamin B6, and vitamin C.
It is also a very significant source of dietary fiber and a quite decent source of protein.
Sounds good, right?
Tastes really good too!!
We are all so lucky to be the healthy, aware, out of the box, trend setting foodies that we are, thus enabling us to partake of this five thousand year old culinary, spiritual, and medicinal vegetable called the lotus!!
Yum yum!
