**Wholly Macro makes every attempt to maintain a totally vegan and allergen free kitchen cooking environment. We make every effort to avoid any type of cross contamination during food preparation. Most foods used in the Wholly Macro kitchen are not packaged, but instead are bought in the produce section or in bulk. But as you know, cross contamination is always a possibility, especially with bulk items. And in the few packaged foods that we do use, such as nut butters for example, it is common to find warnings on the manufacturer label stating that the item was processed in a plant that handles tree nuts, soy, wheat, dairy, gluten, shellfish, and so on.
Wholly Macro cannot be responsible for trace amounts of common food allergens that come from outside (packaged or bulk items), and therefore end up occurring within our prepared foods. Please use your own discretion in determining if our food is appropriate for your consumption, especially if you have severe food allergies.
We are always available to clarify any of the ingredients that we use, and assist you in your weekly selections, but we cannot keep track of your food allergies, sensitivities, likes, dislikes or preferences.

Vegetable Energetics By Category
This seems like as good a week as any to discuss the different categories of vegetables.
And the different energetics within these categories.
You could say, some do say in fact, that here at Wholly Macro we micromanage vegetables!
And it's true; we spend a lot of time and energy shopping for, managing, organizing, and preparing our fresh veggie produce.
And it is not just random.
Yes, of course we buy produce and prepare produce relative to the seasons. That is an automatic "given". It is better for us health wise to eat seasonally, it is better for our budgets to buy seasonal produce, and it is better for the planet to eat local and / or seasonal produce.
And yes, of course we also eat vegetables for their nutritional value. We actually really do focus on the different nutritive value of each category of vegetables, while many people eat what they "hear" is good for them, as evidenced by the plethora of kale appearing on mainstream menus these days.
And we also love to select vegetables based on their appearance. Their color. The combinations of color when combined with each other. Presentation and appeal is always a fun factor.
But here at Wholly Macro we also categorize our produce by the type of vegetable that it actually is. And by it's energetic quality.
It is a pretty simple concept, but one that almost no one is aware of.
Whenever we do a cooking class or consultation and explain these different vegetable categories, and break them down energetically, our clients are absolutely amazed, because prior to their session with us, they just ate produce randomly. Most people do. Completely unaware of the type of energy that the different vegetables impart, or the fascinating ways in which the different vegetables impart that energy to support the different organ systems within our own bodies.
But after their session with us, they begin to understand the basic categories of vegetables, the energy that they impart, and we believe that they will never eat vegetables randomly again.
It is far too important to select your daily allotment of vegetables based on this concept of categories, and the energetics of these vegetable categories, so we would like to briefly explain it to you here:

Energy wise, there are four basic and distinct categories
of vegetables, and they are:
Root Vegetables. Ground Vegetables. Greens. And Sea Vegetables.
|
Root Vegetables:
Root vegetables grow BELOW the ground. Vegetables such as carrots, parsnips, burdock root, lotus root, and daikon are examples of root vegetables.
Energetically, root vegetables are very strengthening. They are hearty and warming, and as such, lend themselves well to cooking styles that involve more time and more heat, such as some (thicker heartier) soups, stews, and casseroles. Root vegetables support the lungs, kidneys, and circulatory system.
The kidneys are related to the bones, and root vegetables, in strengthening our kidneys, help us to have strong straight bones.
In Traditional Chinese Medicine, lotus root is good for the lungs. It is used in many home remedies, such as Lotus Root Tea, to ease coughs, open bronchial passages, and facilitate healthy lungs and clear breathing.
And burdock root cleans and strengthens the blood. A job that falls heavily on the kidneys! Therefore, burdock root helps to energize the kidneys, relieving them of the big job of cleaning our entire supply of circulating blood every 24 hours. Many traditional (alternative) cancer remedies utilize burdock root as their main ingredient, such as Essiac Tea, for its cleansing and strengthening energies. Wholly Macro is not suggesting that Essiac tea be used in place of western medicine for cancer treatment; we are just merely marveling that the main ingredient in Essiac Tea is none other than one of our very favorite root vegetables: burdock root!
It is essential to include root vegetables in your produce allotment on a daily basis!

Ground Vegetables:
Ground vegetables are vegetables that grow ON the ground. Vegetables such as onions, cauliflower, kabocha squash, and cabbages are examples of ground vegetables.
Energetically, ground vegetables are relaxing. Especially to the mid section of the body, nourishing such organs as the stomach, spleen, and pancreas with their gentle natural sweetness.
The longer ground vegetables are cooked, the sweeter they become.
A raw onion is spicy and biting. Which may be perfect for certain dishes such as salsa. But a long, slowly caramelized onion becomes deliciously sweet, and in doing so, relaxes a tight pancreas that has been sugared up its entire life!
Slow, sweetly cooked ground vegetables are very soothing to a tight or overly acidic stomach. They are also helpful for sugar cravings.
There is a home remedy called Sweet Vegetable Drink that is fabulously delicious, GOOD for the pancreas and blood sugar levels, and satisfies a sweet tooth like none other.
So please always make sure to eat (or drink) sweet vegetables on a daily basis as well.

Greens:
Greens are probably the most well known and popular of the vegetable categories. We can thank kale for that. A leafy green that has found its way into the mainstream in an impressive way, popularizing this entire, and previously pretty much overlooked category of vegetables.
Greens ~ or you can also say leafy greens grow ABOVE the ground. And as already mentioned, examples of greens are kale, collard greens, mustard greens, scallions, leeks, arugula, lettuce, and so on.
Energetically, greens are vitalizing and cleansing. Related to the spring season, their favorite season in which to grow, they literally spring forth from the earth, shooting straight upward towards the sky.
So although they are soft, gentle, and flexible, they are also very strengthening as well, just in a different, softer and gentler way than their friends the roots!
All green vegetables are particularly good for the liver, imparting their energy into it, and keeping it soft and flexible, the same as they energetically are themselves soft, pliant, and flexible.
Age, oxidation, wear and tear, and abuse tend to harden the liver. Cirrhosis of the liver is a hardening of the liver. The livers flexible nature is lost as a result of many liver disorders, and it cannot function well. Leafy greens gently coax the liver to a softer and more pliable state, allowing it to function better.
Some green vegetables, such as dandelion and arugula, are bitter to the taste. This bitterness is good for the heart, strengthening its ability to contract and pump blood. It is a big job for our small heart to pump blood throughout our entire body. We want its contractions to be nice and strong!
Including a variety of green vegetables into your daily diet is absolutely essential!

Sea Vegetables:
Oh so mysterious! But not really. Sea vegetables are merely vegetables that grow IN
water.
Theoretically, they can grow in fresh or salt water. Many cultures use river "moss" and other fresh water seaweeds. While many others use a very large variety of ocean dwelling sea vegetables.
Sea vegetables, whether fresh water or salt water, should always be picked fresh, while still rooted and growing IN the water. And while it is possible to gather certain varieties of freshly washed up sea vegetables from pristine shores, most commonly they are harvested from within their respective bodies of water while still growing.
Where they grow climate wise, and the depth in which they grow, plays a big part in determining their energetic qualities. But generally, they are very strong, stronger than earth growing greens, yet very flexible as well.
It is said that sea water is very close physiologically to human blood.
Therefore, sea vegetables are an excellent tonic for building human blood, nurturing the kidneys, and strengthening the bones, all while also keeping us flexible and limber, both physically and mentally!

There are SO many vegetables within each vegetable category.
Eat them all.
Every day if possible.
Learn. Explore. Think. Create. Imagine!
Understand vegetables energetically as much as possible so that you can visualize their amazing energetic properties as you eat them.
Seek them out.
At farmers markets.
At different grocery stores.
At ethnic grocery stores (which is pretty much the only place that you will find vegetables such as burdock and lotus root).
Micromanage them the same as we do here at Wholly Macro.
They are a huge handful!
They take up a lot of room in the refrigerator.
They even grow in the refrigerator they are so alive, vibrant, and energetically charged.
And they need to be gently tamed in order to be eaten, so it is important to cook them properly and well, to enhance their energetic qualities without crushing their energy via over, under, or improper cooking.
It is best to generally understand the energetics of the different vegetable categories so that you include all of them in your daily diet.
Using knowledge, and understanding vegetable energetics, allows you to respect vegetables in all ways as the primary, life giving energetic plant food entities that they are!
