ABOUT THIS WEEK'S MENU
When we look at this week's menu, our mouths water.
We have such nice dishes selected, and they will all freeze really well.
We would like to suggest, that for the next three weeks, you order a few extra dishes for yourself to freeze, to hold you over during the two weeks that we are closed. This will give you a nice variety of super convenient, already prepared, excellent quality foods to enjoy from your handy dandy Wholly Macro stash, and you won't miss us a bit!

WEEKLY ARTICLE
Take Time To Disconnect
We know that it probably feels like we were just closed, but in actuality, we were closed for one week mid-September, and this upcoming closure will not occur until the beginning of November.
This closure is timed to be exactly between mid-September and the 2014 Christmas and New Years Holiday, which will be our next closure BTW.
When we - and by we I mean Wholly Macro, are open, life is unbelievably fast paced. We are on the go from sunrise to sunrise, literally 24 hours a day in our attempts to fit it all in. From planning menu's, to sourcing out ingredients. From ordering supplies, to cooking. And from educating, to communicating with everyone.

We literally go into overdrive trying to fit caring for ourselves into the mix!
So in order to catch up with ourselves, we find that we literally need to plan breaks for ourselves.

As I was debating whether to schedule this upcoming break into our calendar or not, work-a-holic that I am, one of our friends e-mailed and told me that she was preparing to go out of town for "the long weekend"
What long weekend?
Was there a holiday coming up?
I wracked my brain trying to figure out which holiday. All the while frowning upon myself for not being able to "keep up" with the various long holiday weekends.
I checked various calendars, even googled the date, but could not come up with a holiday.
I finally decided to just shamelessly ask her which holiday it was that she was referring to that weekend.
She responded back that it was not an official holiday weekend, but rather, a long weekend that she had created for herself.
Whew. I am not so out of touch afterall. And I LOVE that she just creates long weekends for herself!
As I was taking all of that in, I came across an article by Dr. Oz that reinforced the health value of taking breaks.
We wrote an entire article a few years ago called Vacation Procrastination which outlines the various types of breaks / vacations you can create for yourself. Click the following link to find the article in our Newsletter Archives.
But for now, we would like to point out some of the facts and benefits related to taking breaks.

- The United States is the only advanced country in the world that doesn't guarantee workers paid vacations.
- Every country in the European Union mandates at least four weeks off per year.
- Studies have shown that workers are happier, healthier, and more productive if they take regularly scheduled breaks.
- 67 % of Americans remain in contact with their office when they take time off. (This does not count as a break, and does not promote health, happiness, and productivity).
- A study of middle-aged men who were specifcally at risk for heart disease found that those who skipped vacations had a 30 % higher risk of a heart attack than those who took at least one week off.
- And women who rarely take time off are EIGHT times more likely to have a heart attack than women who take as little as two vacations a year.
- American workers left an estimated 577,212,000 paid vacation days untaken in 2013, opting to work right through them instead!
- Studies suggest that time off improves relationships.
- Vacations and breaks are great times to work on various habits, such as quitting smoking, getting exercise, and improving your diet.
So for all of these reasons and more, Wholly Macro decided to take the above mentioned break, and we urge all of you to become aware of the many benefits of downtime that we mentioned above, and do the same for yourselves whenever possible.
To paraphrase the Dalai Lama:
Be Kind (to yourselves) whenever possible. It is always possible.

So for all of these reasons and more, please:
Take the time to disconnect.
From electronics and from stress.
Reconnect with nature, family, friends, and yourself.
And most importantly, create the time off that you need to protect your long term health.
Which is exactly what we are doing here at Wholly Macro.
As our chronological age progresses, we must respect our bodies needs, and one of those needs is adequate rest.

On another note, everyone always likes to hear about what Wholly Macro is doing during our breaks.
Our # 1 kitchen helper is going to Brazil to visit her family, so we have planned our break to coincide with hers.
Gayle needs to take several continuing education classes in order to renew her nursing and massage licenses which she will be busy doing over our break.
We have some endless organizing, regrouping, and restocking to do in the massive Wholly Macro kitchen and pantry.
And we will spend whatever time is left nurturing body and soul!
That just about does it for what Wholly Macro will be doing during our upcoming break! Not terribly exciting, but much needed never the less!

Liver loving, light and fresh, green, creamy smooth and rich, flavorful and vitally healthy broccoli, is pureed with naturally sweet caramelized yellow onions, chlorophyll rich fresh parsley, wakame sea vegetable, immune system boosting dried shiitake mushrooms, enzyme rich sweet yellow miso, and fresh ginger, in a protein rich base of pureed red lentils. Garnished with thinly sliced pungent green scallions.

BROWN RICE, HATO MUGI, AND BUTTERNUT RISOTTO

Ah, the calming and balancing whole grain dish! Strengthening medium grain brown rice is slowly cooked with the wild Japanese seed/grain called "hato mugi", known in the Orient for calming the nervous system, purifying the blood, and beautifying the skin. Hato mugi lends itself perfectly to the formation of a sweet and creamy risotto made with kombu sea vegetable, sweet and enzyme rich yellow miso, mirin, a naturally fermented brown rice cooking "sherry", naturally sweet spleen and pancreas supportive butternut squash to impart rich flavor and additional creaminess, and a chlorophyll rich green parsley garnish.

SEITAN AND ZUCCHINI PARMESAN |

Wholly Macro's healthy version of veal parmesan; cholesterol and fat free, mineral rich whole grain wheat protein, forms an highly textured product called seitan, which is lightly battered with arrowroot, and pan seared, then layered with a naturally sweet and good for the pancreas beta carotene rich non acidic kabocha squash, yellow onion, cremini mushroom, and carrot marinara sauce, and pieces of grilled zucchini and yellow squash, then baked to perfection, and topped with grated brown rice "cheese" and fresh oregano. Whew. Yum!!

MINT AND BASIL UDON NOODLES AND SEA VEGETABLES |

Brown rice soba noodles, and high mineral sea vegetables - wakame, nori, arame, dulse, agar agar, and kombu, are tossed with healthy and flavorful strands of shiitake mushrooms, ginger, scallion, and fresh basil and mint, and served with a tangy dressing of brown rice vinegar, toasted sesame oil, brown rice syrup and sesame seeds, to create this healthy and colorful dish.

BRAISED RED CABBAGE WITH STEAMED KALE

This dish is a study in the naturally beautiful colors provided to us by our highly valued fresh vegetable friends that literally show their colors to represent their nutrients. Deep purple red cabbage is high in iron and beta carotene, and is braised in a toasted sesame oil, ginger, brown rice syrup, umeboshi plum, mustard, and shoyu sauce, then highlighted with lightly steamed chlorophyll rich dark green kale, along with some sweetly saut�ed yellow onions, carrot slivers, and a sprinkling of fresh green chives.

"Kanten" is the macrobiotic version of "jello", made with the naturally high in fiber, gelatinous agar agar sea vegetable, which not only gives this dish texture, but also contributes the abundant minerals sea vegetables are so renowned for. Most foods used in the Wholly Macro kitchen are not packaged, but instead are bought in the produce section or in bulk. But as you know, cross contamination is always a possibility, especially with bulk items. And in the few packaged foods that we do use, such as nut butters for example, it is common to find warnings on the manufacturer label stating that the item was processed in a plant that handles tree nuts, soy, wheat, dairy, gluten, shellfish, and so on.
Wholly Macro cannot be responsible for trace amounts of common food allergens that come from outside (packaged or bulk items), and therefore end up occurring within our prepared foods. Please use your own discretion in determining if our food is appropriate for your consumption, especially if you have severe food allergies.
We are always available to clarify any of the ingredients that we use, and assist you in your weekly selections, but we cannot keep track of your food allergies, sensitivities, likes, dislikes or preferences.
