An Insurance NightmareFrom Fernanda Bressan: REPLY We had a roof leak occur almost a year ago, causing interior damage. Both our homeowners and windstorm insurance carriers have denied claims, pointing fingers at the other. An adjuster and an attorney have been working on it, but neither has made any progress. Team JAB's Favorite Recipes
Our tour of Broward beaches continues in next week's issue, so we asked Pamela Druckerman to share a seafood recipe from her new book, Bébé Day by Day, to tide us over until then. JABBERS may be surprised to learn that this dish, Saumon a La Créole, is a staple for French toddlers enrolled in the Parisian public day care system ... try not to think about it when you pull tonight's fish sticks out of the oven. Ingredients
1 medium onion, chopped
1-1/2 tbsp sunflower or olive oil
14-1/2 oz diced tomatoes, canned or fresh
1/2 tsp thyme, chopped
1 bay leaf
Parsley, chopped
Salt and pepper
3 to 4 medium sized salmon fillets, fresh or frozen
Juice of 1 lemon
Directions
Preheat oven to 425 F. In a large pan, sauté the onion in the oil. Add the tomatoes, thyme, bay leaf, parsley and salt and pepper. Cover and let simmer for 15 minutes. Place the salmon fillets in an ovenproof pan. (If you're using frozen fillets, first defrost them in a microwave oven.) Squeeze the lemon juice over the salmon, then spoon the tomato mixture on top of that. Bake in the oven for 20 to 30 minutes, or until thoroughly cooked.
Before serving, remove all the bones and bay leaf, and add a pinch of fresh parsley or chives to each plate. Serve the salmon with rice and a side of vegetables (braised broccoli is recommended).
