Roasted Brussels Sprouts

 

Ingredients

2 lb. Brussels sprouts, large sprouts halved, small sprouts left whole

3 Tbs. olive oil

2 Tbs. pure maple syrup

2 Tbs. butter, optional

 

Directions

1. Preheat oven to 400°F. Toss Brussels sprouts with oil in large baking dish or on baking sheet and season with salt and pepper, if desired. Roast 45 minutes or until tender, loosening sprouts from baking dish or sheet with spatula every 15 minutes, if necessary.

 

2. Transfer to serving bowl and toss with maple syrup and butter, if using.

I am sure you've seen the commercials for SENSA. This weight loss supplement merely has to be sprinkled on your food to trigger your "I feel full" signal, so you eat less and feel more satisfied.

 

Ha! Even though my kids like the jingle, I don't believe the hype and neither does the Nutritional Supplemental Task Force in California. In the most recent lawsuit, SENSA Products, LLC agreed to settle a false advertising lawsuit. The company will pay $105,000 for restitution to consumers of SENSA and $800,000 to be used for "the enforcement of consumer protection laws."

 

This comes on the heels of a previous class action lawsuit brought by a consumer who did not experience the promised weight loss. In this case, SENSA Products, LLC claimed they did nothing wrong while establishing a settlement fund of up to $9 million to compensate consumers who purchased SENSA products.

 

Remember, if something sounds too good to be true, it is!

Pesticides Linked to Allergies

Just a decade or two ago it would be rare to have a friend with a food allergy. Now, it seems there are more and more people allergic to a range of foods. Indeed, food allergies are on the rise and currently affect 15 million Americans. Because of this, researchers are scrambling to find the true causes.
 
According to a new study published in Annals of Allergy, Asthma & Immunology, dichlorophenol-containing pesticides could be partially to blame. Dichlorophenol is a chemical used in pesticides and to chlorinate water. During the study, researchers investigated the levels of dichlorophenol in the urine of 2,211 individuals who were part of the US National Health and Nutrition Examination Survey 2005-2006. Of these participants, 411 reported having a food allergy. When allergy incidence and urine levels of dichlorophenol were assessed, researchers found that those who reported having an allergy had the highest levels of dichlorophenol metabolites.

 

While the researchers concluded that high levels of dichlorophenol-containing pesticides can possibly weaken food tolerance in some people and potentially cause a food allergy, the exact reason is not known. One idea is that since dichlorophenol serves as an antibacterial agent, our immune systems are not as tough as they should be so foods that would normally not cause a reaction incite an allergic response.

 

Bottom Line: The authors of this study speculate that opting for bottled water instead of tap water might be a way to reduce the risk for developing an allergy, but other dichlorophenol sources, such as pesticide-treated fruits and vegetables, may play a greater role in causing food allergies. Serving Veggies Has Its Advantages

Here's a novel new twist on why serving vegetables with dinner is a great idea. Researchers at Cornell University report that meals that include vegetables are perceived as more lovingly made and better tasting.
  
In this simple study, there were two separate questionnaires administered to American mothers ages 18 to 65 with at least two children under the age of 18 living at home. In the first questionnaire, participants were asked to evaluate the personality of a meal preparer who did or did not include a vegetable in a family dinner, choosing from a list of 12 attributes such as "selfish" or "loving." In the second questionnaire, the participants were asked to rate five different meals that either included or did not include a vegetable. 

 

The surveys showed that meal preparers who included vegetables at dinner were characterized as more "thoughtful," "attentive" and "capable." Also, the meal preparer who included vegetables was described as less "neglectful," "selfish" and "boring." When it came to the perception of a meal that included vegetables, the results showed that meals were favored when a vegetable was included. For example, meals that included vegetables were ranked as more "tasty" and "loving."  

 

Bottom Line: Only 20 percent of Americans eat five or more daily servings of fruits and vegetables. Serving vegetables with every meal is a simple way to increase nutritional quality and taste. And earn well deserved points for everything else that you do as a parent or significant other !
