Kale is definitely the popular kid right now. It's at the top of every list of healthy foods you should be eating in 2015, chefs are incorporating it into their menus in creative ways, it's affordable, readily available and kale gets even better in the dead of winter.

Kale is a member of a category of plant foods that are linked to a lower risk of certain cancers. It's also high in nutrients you need for bone health - vitamins A and K and calcium - plus it delivers almost a day's worth of vitamin C.

From chips to smoothies to salads to soups, kale is as versatile as it beneficial to your body. There are some whispers in food circles that kale is just a passing fad. But we think it's here to stay.
