Dear FLASHERS, Boy, for a small town we sure keep things hoppin'. There is so much going on in this community that it is sometimes hard to keep up! There certainly isn't a FLASHER out there who has an excuse to be bored!
Ten thousand copies of our printed calendar were distributed last week and we're thrilled that you are thrilled to have all of the information in one place and at your fingertips! The deadline for March event submissions is coming up next Wednesday, February 13th. Please email me if you are planning an event or know of one that should be featured in our printed March calendar.
If you are looking for suggestions on a couple of events this week....Why not help that New Year's resolution along by participating in the 2nd annual Epilepsy 5K 'Walk the Talk' this weekend? One of our past Positive People, then sophomore Christopher Flaig, actually was the significant force in launching this event last year. The hope is for this year's event to bring out even more participants, build awareness of Epilepsy, and raise more money than last year!
The next suggestion is to come travel the world while helping yet another one of our local non profits! 'Passport to Wine & Dine' will take place on Monday and all proceeds will benefit Hibiscus Children's Center. There is no doubt that a memorable evening is in store! All attendees will receive a passport upon arrival and will visit the various country stations to sample food and wine pairings from around the world. I will be at both events and I hope to see and meet many of our FLASHERS there as well. Join me...Won't you? Valerie Watkins

AMANDA WARD HACKFORD

IS A POSITIVE PERSON
Amanda is one of our home-grown 'Do-Gooders,' who was born right here in Vero Beach at Indian River Medical Hospital. She is married to Branden and has two children, Cody and Kayla. For the past nine years we have been lucky to have Amanda teaching and impacting the youth in our community. Amanda's connection with children doesn't end there. She also works with the Mardy Fish Foundation's afterschool enrichment program for students in need and volunteers as a Girl Scout leader. (Cookies anyone?) Amanda is an advocate for the Epilepsy Foundation of Florida and is currently organizing a children's 'Arts & Crafts' booth for the walk this weekend. The torch was recently passed to Amanda to oversee the Brainy Bunch support group for children with epilepsy. She is always the willing spirit to assist with many other tasks as they present themselves.
Amanda, in that worthy and commendable task to set a positive example for her children, finds that she is profoundly motivated to that end. With that goal she works to set an example for her children as to the importance of giving back...even in small ways that add up. She also strives to pass along an outlook that shows, 'You can be truly happy as long as your needs are met...not necessarily your 'wants.' Amanda expressed the sentiment that is so often affirmed by our 'Positive People'... that it is the volunteer who is the actual winner.
When asked what advice you'd give others, Amanda replied, "Follow your heart and never give up." She wisely stated that we are unable to choose our circumstances, but we can choose our attitude while handling a situation. That decision is one that steers us along a 'life path' and how much better to travel that path with a positive attitude in our pocket rather than regret, revenge, fear, or anger.
Amanda has endured some touch situations and considers her greatest achievement finishing her education as a single mother and receiving her MBA. Amanda has served as an inspiration to those around her and will now serve as an inspiration to our FLASHERS. I hope she has inspired you to come out to Riverside Park this weekend for the 'Walk the Talk' Epilepsy Foundation fundraiser. See you there! THANKS AMANDA!

RECIPE OF THE WEEK
SHRIMP FRITTERS!
Perfect for a Mardi Gras Celebration! ENJOY!
Shrimp Fritters Makes about 30
Ingredients: 3/4 lb raw tiger shrimp, peeled and cut into chunks 2 green onions, thinly sliced 2 garlic cloves, minced 1 1/2 cups water 1 1/2 cups all purpose flour 1 tablespoon unsalted butter 1 teaspoon salt 1/2 teaspoon black pepper 2 eggs
Sweet & Spicy Chilli Sauce
vegetable oil for frying
1. Preheat oil to 350°F. 2. Place shrimp, green onions and garlic into a large mixing bowl and toss together. Set Aside. 3. Pour water into medium pot and add butter and salt and bring to a boil. 4. Once mixture has come to a boil, add flour and quickly stir with a wooden spoon, until dough forms. Continue to stir over medium heat, for about 3 minutes. 5. Place dough into a stand mixer fixed with a paddle attachment and run on medium speed, allowing steam to escape. 6. Once most of the steam has disappeared add the egg, one at a time, scraping down the sides of the bowl after each addition. 7. Fold pepper into the pate a choux (the doughy/battery mixture). 8. Fold the shrimp mixture into the pate a choux until fully incorporated. 9. Once oil is hot, add tablespoon sized balls of the shrimp mixture into the oil (you'll have to do this in batches); make sure not to crowd the pan/fryer. 10. Fry each fritter for 4 to 6 minutes, flipping halfway if necessary. Drain on a paper towel and season lightly with salt. Serve immediately with spicy honey drizzle.
