CHRISTOPHER FLAIG
IS A POSITIVE PERSON
There are so many impressive young adults in our community who are doing amazing things. This week we spotlight Chris Flaig, the driving force behind the '1st Annual Vero Beach Walk The Talk for Epilepsy' fundraiser set to take place on February 11th. Chris, for all practical appearances, is like any other 17 year old. He enjoys sports and hanging out with his friends. He plays on the football team and weight lifting team at Saint Edward's and was selected to attend the Under Armour Combine for football over Christmas. What you don't know about Chris when first meeting him is that he has dealt with Epilepsy since he was in second grade. He underwent brain surgery when he was in 6th grade and his epilepsy is now controllable with meds.
Chris has decided to make a difference by educating others about epilepsy. He hopes to begin achieving this with the 'Walk the Talk for Epilepsy' next weekend. His primary goal is to get people talking about epilepsy and then secondly to raise money for the foundation that helps those who cannot afford the medicine and/or tests. In our interview, Chris explained that he feels there is a stigma about epilepsy which results in it being kept quiet. He wants to get people talking so that everyone is educated about epilepsy in the same way that they have been with breast cancer over the past recent years.
One of our favorite things to do at FLASH is to spotlight our Positive People. We enjoy it all the more when we get to bring awareness to the efforts of one of our young adults. We encourage all of our FLASHERS to PLEASE support this young man with his efforts. If you have the 11th free...join the walk. There is a lot of mis-information in the ongoing debate on organic vs. non-organic foods. For example, "free range chickens" are not necessarily organic. Although they are not caged, they may be given growth enhancing chemicals. (To be organic (chemical free), they must still have the organic seal.) Because of the confusion, FLASH's research team decided to see what Mayo Clinic had to say about organic food since we believe Mayo to be a reliable source for this type of information. Michael K aiser a student at Saint Edward's placed first in his category of Zoology, at the Indian River Science and Engineering Fair. He was awarded Best-in-Show out of all of the Secondary School submissions, earned a state bid and an international bid to compete at the 2012 INTEL International Science & Engineering Fair in Pittsburg in May, and was awarded a $40,000 scholarship to Florida Institute of Technology.

 Emily Salvador, a senior at Saint Edward's, placed first in her category of Mathematics and will be advancing to compete at the State level. Emily garnered several special awards including the Mu Alpha Theta award, Syngenta Research and Development Award and the US Army Special Award. Michael and Emily took two of the seven state bids awarded from the regional fair. |
FIESTA SEVEN LAYER DIP

Makes 8 cups or 64 (2-tablespoon) servings.
Prep Time: 15 minutes
INGREDIENTS
1 can (16 ounces) refried beans 1 container (16 ounces) sour cream 1 package McCormick® Taco Seasoning Mix or McCormick® Taco Seasoning Mix Mild 1 package (8 ounces) shredded Cheddar cheese (2 cups) 1 cup prepared guacamole 1 cup chopped tomatoes 1/2 cup sliced green onions 1/2 cup sliced black olives Tortilla chips
DIRECTIONS
1. Spread refried beans in shallow serving dish.
2. Mix sour cream and Seasoning Mix in small bowl until well blended. Spread over refried beans.
3. Top with layers of cheese, guacamole, tomatoes, onions and olives. Serve with tortilla chips.

SUPER SALAD FOR THE SUPER BOWL!

BROCCOLI PASTA SALADINGREDIENTS
Preheat oven to 350°. Bake pecans in a single layer in a shallow pan 5 to 7 minutes or until lightly toasted and fragrant, stirring halfway through.
- 1 cup chopped pecans
- 1/2 (16-oz.) package farfalle (bow-tie) pasta
- 1 pound fresh broccoli
- 1 cup mayonnaise
- 1/3 cup sugar
- 1/3 cup diced red onion
- 1/3 cup red wine vinegar
- 1 teaspoon salt
- 2 cups seedless red grapes, halved
- 8 cooked bacon slices, crumbled
Preparation - Prepare pasta according to package directions.
- Meanwhile, cut broccoli florets from stems, and separate florets into small pieces using tip of a paring knife. Peel away tough outer layer of stems, and finely chop stems.
- Whisk together mayonnaise and next 4 ingredients in a large bowl; add broccoli, hot cooked pasta, and grapes, and stir to coat. Cover and chill 3 hours. Stir bacon and pecans into salad just before serving.

The Treasure Coast Victoria Fleet 105 meets every Saturday, weather permitting, at Indian River Estates in the 7400 block of State Road 60, on the right side. After the guard gate, go to the stop sign and turn right. Follow the road along the water until you come to the dock on your right. We start racing our radio controlled Victoria sailboats at 10 a.m. and finish at approximately 11:30 a.m. There are courses marked off in the water with floating buoys and we decide which course we will run each time we meet. Come out to see the races or try your hand at sailing with the radio controls.

The Treasure Coast Victoria Fleet 105 meets every Saturday, weather permitting, at Indian River Estates in the 7400 block of State Road 60, on the right side. After the guard gate, go to the stop sign and turn right. Follow the road along the water until you come to the dock on your right. We start racing our radio controlled Victoria sailboats at 10 a.m. and finish at approximately 11:30 a.m. There are courses marked off in the water with floating buoys and we decide which course we will run each time we meet. Come out to see the races or try your hand at sailing with the radio controls.
