I'm writing to you humbled by the incredible outpouring of encouragement and support you've given me in the last month. Thank you SOOO much!!!

The August "Quickie From Jacci" garnered more emails from WHOLE readers than any of our newsletters in all three years of publication. Wow! It seems that many of us are in transition or contemplating change.

My only regret is that I'm not set up in a way that all of your incredible insights, ideas, and encouragement can be shared with the entire readership. I want to change that.

All along, WHOLE has been about building community--not only giving out health information. So part of my transition is to transform WHOLE into a more interactive experience. And you can help!

Sweet Peppers, Please!

Before the weather turns cold and you retire your BBQ grill for the season, you've got to partake of one of the season's best veggies--sweet peppers!

They come in all sorts of colors (I'm partial to the red, yellow, and orange) and they're pretty, flavorful, and nutritionally WHOLEsome, too! By grilling them, the natural sugars in each pepper caramelize to produce a mellow, sweet, tender addition to any meal. As an extra bonus, they keep in the fridge for quite a while when covered in olive oil, and the pepper-infused oil itself is a treasured and flavorful cooking complement.

It's simple to do! After washing and drying the peppers:
  1. Brush a light coating of olive oil onto the skin. Place them on the grill and turn them so the skin is blackened on all sides and the flesh has gone limp.
  2. Gently remove the peppers from the grill, (be careful, they're hot!) and place them into a ovenware dish. Cover with foil, allowing the peppers to steam in their own juices.
  3. After about 10 minutes uncover the peppers, remove the stems, seeds, and skins, and place the flesh in a jar with tight-fitting lid. Add olive oil to cover all the peppers, and refrigerate. They will last several weeks (if not longer) provided that you add additional olive oil so the peppers always remain covered.
Suggested uses:
Add to omelettes for breakfast or dress up sandwiches for lunch. ForRoasted peppers in jar dinner, stir in chopped peppers to liven up whole grains such as brown rice or quinoa, or enhance sauces for tofu, poultry, fish, and seafood. Are you entertaining and looking for easy hors d'oeuvres? No problem! Grilled Peppers are great paired with olives (I love Kalamatas!), an assortment of cheeses, some crusty bread, and a nice dry white wine like Savignon Blanc--yum! Enjoy!
