Peonies are the blooming epitome of June:  lush, wonderful and fleeting.  The days are at their longest, graduations and wedding ceremonies abound, and dining al fresco is the norm. 
 
June is also a celebration of strawberries.  California-raised Driscoll strawberries just can't compare to our homegrown strawberries that flourish in June.
The best way to celebrate strawberries?  Strawberry shortcake, of course!

Once again I have Diane Rother of Northstar Wisdom
to thank for this great advice.   I have long been leery of the effects of having a cell phone pressed up against one's head frequently throughout the day.  There are now more and more reports surfacing about the ill effects of electro-magnetic frequencies (EMF) on our health, especially brain cancer.  EMFs are those insidious, ubiquitous and invisible pathogens beaming from all of our electronic devices. 
 
Watts (electrical frequency) and Hertz (pulsation of frequency) are measures of concern for cell phone users.  Federal Standard of Safety for EMF/SAR (specific absorption rate) emissions from any electronic device states that no device should emit over .5 watts within 5 cm.  Anything over .5 watts causes damage to live tissue, causing it to burn. 
 
Average cell phones being used today have a SAR level of between .53 watts to 1.59 watts. The more features there are on the phone, the higher the watts. 
 
The human body ranges from 1-30 hertz (Hz), and the earth/soil has a magnetic frequency of 7.8 Hz (a frequency referred to as the Schumann frequency).  Now, get this, average cell phones are at 800-1800 megahertz!!!!!  It's no wonder that emissions from cell phones can affect the acupuncture meridian systems of the body up to 15 feet away. 
 
The frequencies and pulsations from cell phones need to be grounded.  So this is where the dirt bag comes in.  Dirt/soil emits the Schumann frequency and disperses the emission from the cell phone when the phone is placed on a bag of dirt. 
 
It's easy to make your own "grounding pad"/dirt bag.  Simply fill a pint or quart sized plastic zip lock bag with dirt and seal.  Place your phone on the dirt bag (not it in!) as much as possible.  I don't have a cell phone, but Dan has one, so he has a dirt bag at his office, in his truck, on our coffee table and one upstairs.  The dirt bag is especially useful if you have your phone turned on at your desk.  Ideally you would be using your speaker phone while the phone rests comfortably on the dirt bag. 
 
It's important to recharge your dirt bag every two-four weeks.  Emissions from the cell phone will demagnetize the dirt in a short period of time, so if you use your phone a lot recharge your dirt bag by placing it on the ground overnight.  If you use your phone less often, recharge every four weeks.  It might be easiest to just recharge your dirt bag on the 1st and 15th of the month instead of trying to remember when you last recharged it. 
 
The dirt bag is yet another reminder to get out and enjoy nature - leaving the electronic devices at home.

Interview with Susun Weed

 



I was delighted to be invited to teach my Breast Health class for the inaugural Midwest Women's Herbal Conference in Willard, WI at the Christine CenterSusun Weed is one of the featured conference speakers (along with Isla Burgess), and she is considered the voice of the Wise Woman Tradition.  As a way to highlight the many teachers and to promote the conference, Susun is interviewing five different conference teachers.  I am the fifth and final teacher to be featured.  I was originally scheduled for May 23rd, but the date has been changed to Wednesday, June 13th at 8:00 pm.

Recipe of the Month
Strawberry Shortcake



Num!  The dessert we wait for all year.  My favorite shortcake recipe is by Nigella Lawson from How to be a Domestic Goddess - Baking and the Art of Comfort Cooking.  Of course I changed the recipe just a bit.  I like to use spelt flour when making fruit desserts because spelt's golden crunchiness really compliments the fruit flavors.  You can find spelt flour at the Wedge co-op (or if you grind your own grains use 10.25 ounces of whole berries). 
 
Nigella's recipe calls for a few drops of balsamic vinegar - which may seem strange, but balsamic vinegar greatly enhances the strawberry-ness of strawberries. 
 
I'd recommend heading out to a U-Pick to stock up on strawberries to freeze, dehydrate, and make this shortcake!  Be cautious when choosing a U-Pick because you'll want to visit one that doesn't use pesticides (conventionally grown strawberries are heavily sprayed with toxins).  We've gone to
Apple Jack Orchards in Delano where I'm rather comforted by a few weeds in with the strawberries.  This year we're going to check out Natura Farms in Marine on St. Croix.  Apple Jack Orchards is currently open for picking, and Natura Farms starts their strawberry picking this Saturday, June 16th.
