Welcome to the July issue of Groundwork.

You pronounce it like "currant with a d"; the humble currant has come in handy over the years when assisting folk with the pronunciation of my surname. According to new research it is also a little battler against stress; see the article below. 

Ecological design or sustainable design principals are becoming main stream as the demand on future natural resources needs to be managed.  So what can we do to really be clean and green in New Zealand?  In this issue we highlight two businesses that provide long term eco-design solutions for their clients.

I have decided to continue with selections of my favorite YouTube clips; you can eat as many berries as you like but in my book, laughter is still the best medicine. So this month we have a real doosey!

Hokey Pokey Biscuits by Helen Jackson from Foodlovers.co.nz

hokey Pokey Biscuits

Ingredients
125 g butter
1/3 cup sugar
1 tbsp milk
1 tbsp golden syrup
1 teaspoon baking soda
1 cup flour

Method
Preheat oven to 180 C.
Beat butter and sugar until pale and creamy. Heat together milk and golden syrup, remove from the heat and stir in baking soda. Pour the bubbly mixture into the butter and sugar and add the flour (add a little extra flour if mixture is sticky). Roll into balls and place on a cold greased tray. Press gently with a fork and bake 15-20 minutes until very golden. 
If biscuits come out of the oven too soon they will not be crisp - if you find they are chewy when cool then put back in oven for another few minutes.
