New Season Fruit Trees

Its this time of the year that new season fruit trees are available from garden centres and it is also the best time to plant them, as they have the rest of winter and all of spring to establish before they hit their first summer. More >>

Daylight Hours Increasing - plant for spring - berries and roses

The Winter Solstice is/was on June 21 at 18:46 (6:46pm); this was when the Sun was at its most Northerly point in the sky. At the middle of the day on June 21, it reaches its lowest altitude, from the Northern horizon, for the year.

Which means that the longest night is June 21/22 and the shortest day is June 21 and from then, slowly the amount of sunlight per day increases till 21st December.

I hope you are all warm and cosy tucked up inside on these cold mid winter days, or if you have to venture outside you have enough woolies and fleece.

Some years back when I was landscaping in Denmark we used to have boot heaters in the smoko room, big coats and  a 'small glass' of some fiery liquid provided by the client most days (Its part of Danish culture - OSH would have a field day...)  We were mostly doing hard landscaping and foundation work. To keep the ground from freezing we had rock wool sleeping bags that went over the area we were working. Progress was slow. When it really snowed it was 'white gold season' and all the bobcats, diggers and trucks would go out on contract to clear car parks so the business owners would not get sued.  It is not like that here that's for sure.

If you are one of those people like me who don't go for a flue jab, I have included a recipe for garlic soup to blow out the cobwebs or any bugs that might be lurking.

Garlic Soup by Helen Jackson from Foodlovers.co.nz

Garlic Soup

Ingredients
2 bulbs garlic
olive oil
75 g butter
2 leeks, green parts only, finely sliced
400 g floury potatoes, peeled and chopped
salt and freshly ground black pepper
600 ml chicken stock
1 cup cream

Method:
Preheat oven to 150 C.
Place the garlic on an oven tray and drizzle with olive oil.  Bake for 20-30 minutes until cloves are soft.
Meanwhile melt butter in a saucepan and cook leeks for 10 minutes, add the potatoes, salt and freshly ground black pepper and chicken stock and cook for 20 minutes until potatoes are tender.
Remove from the heat and squeeze the roasted garlic from the cloves into the soup.  Puree the soup in batches until smooth.
Return the soup to the stove and add cream, heat gently until almost boiling.
