     We're starting the week on a cooler note, but oh that sun shine!  There's hardly a person coming in who isn't basking in it! Nobody's getting a tan, but it is a lift to the appetite and spirit. Not long and we'll be back on Daylight Savings time with those longer evenings and winter will be just a memory.

 

EARLY MARCH

Mardi Gras gets us started this March with Fat Tuesday on the 8th. Sun Singer will be mixing it up with a few New Orleans treats during the upcoming week including Red Beans and Rice, Gumbolaya, Sausage & Pepper Stew and a Muffaletta Sandwich. We'll also feature select Mardi Gras drinks and beers from Dixie and Abita. Stop by as we warm it up with a little bit of Louisiana!

HUMBOLDT FOG

MOODY BLUE

Moody Blue -- smoked blue from Monroe, Wisconsin's Roth Käse  With a lot more smoke and a little more bite, it's the ultimate backyard barbecue cheese (who puts away the grill?), good for tossing on burgers, sexing up a steak or just shocking the hell out of the unsuspecting nibbler latched onto a doppelbock. We  love the balance of sweet and salty in this cheese, and, yes, bacon, does come to mind. Along with licorice. And perhaps street fires.  In the meantime, rip off your nicotine patch. If it's smoky flavah you crave, look no further than Moody Blue.

 

 

LES FRERES

Les Freres is the most involved cheese make at Crave Dairy in Wisconsin. The curds are ladeled by hand and also the cheese is the only one they produce that requires aging. This European style cheese was developed with care to reflect the Crave Brothers¹ Irish-French heritage. It is a rich rind washed cheese with an earthy, fruity flavor. It tastes wonderful served with fruits and breads, paired with wine or in a cheese course.

CLAYHOUSE  WINES - Califonia 

 

Syrah 2008, Paso Robles  $14.99

The Vineyard Syrah is driven by dark berry fruit flavors (blackberry and plum), complemented with hints of black pepper, coffee, tar, dusty oak, and slightly floral notes. The fine-grained tannins make it rich and soft in the mouth, with a balanced, tart acid backbone.  On this Saturday's tasting!

 

Adobe Red Blend 2008, Central Coast  $14.99 

The Adobe Red is a proprietary Zinfandel-based blend with effusive aromas of cherry spice, blackberry and pepper, with hints of brambles and plum. Cherry/berry flavors dominate on the palate. The tannins are fine and supple, and a bit of oak character
adds additional vanilla notes to the balanced finish.

Sauvignon Blanc 2009, Paso Robles  $13.99  

Made in a refreshing aperitif style, Clayhouse Sauvignon Blanc exhibits a bouquet of starfruit, green pear, honeydew melon and grapefruit, with a hint of grass. There's a touch of minerality that enhances the floral notes contributed by the Musque clone, and the wine finishes with a creamy mouthfeel (from sur lie fermentation and aging) and mouthwatering acidity. 

 

F. FAUGIER   Dom des Hautes Chassis 'Les Galets'  2007    

Crozes Hermitage, France  $28.99 

This is such an archetype of quality Crozes-Hermitage that all other examples will have to be marked alongside it on the bench. Tapenade, blackberry, hints of violet, black pepper and wood smoke... it's all there, and all perfectly balanced. We are delighted that M. Faugier has had the confidence to stop selling grapes to a prestigious négociant, and started to make wine himself. Bravo!

Sun Singer is stocking 6 new wines from superstar winemaker David O'Reilly. David built Owen Roe from a few barrels of wine in a tiny winery he shared with Peter Rosback (Sineann) to the multi-state, tens of thousands of cases a year winery he operates today.

MERKIN 'Chupacabra'  Red Blend 2006  Arizona  $27.99 

Maynard James Keenan is, for all intents and purposes, a Rock Star. The co-founder of rock music acts TOOL, a perfect circle, and Puscifer now enters into a new realm where he is an unknown ... winemaker. Keenan has shown remarkable passion and commitment with regards to not just putting Arizona vines on the map but truly discovering and utilizing all the potential for growth in this relatively untapped appellation.  

 Medium to full bodied. Dusty black cherry & berry fruit with a hint of new oak. Flavors of black cherry and menthol. Nice structure and tannin. Needs some time to open up. Decant. (Cabernet & Syrah Blend.)  Lots of top notch juice found its way into the blend. Solid, solid wine.The Chupacabra is the 'shape-shifter' - a wine that changes vintage to vintage.

RANSOM  Old Tom Gin Sheridan, Oregon  $36.99

This Old Tom Gin is a historically accurate revival of the predominant Gin in fashion during the mid 1800's and the golden age of American cocktails. The recipe was developed in collaboration with historian, author, and mixologist extraordinaire David Wondrich. Old Tom is the Gin for mixing classic cocktails dating from the days before prohibition. Its subtle maltiness is the result of using a base wort of malted barley, combined with an infusion of botanicals in high proof corn spirits. The final distillation is run through an alambic pot still in order to preserve the maximum amount of aromatics, flavor and body. Only the "heart of the hearts" (the very best portion of distillate) is retained for this special bottling.

97 points from Jim Murray's 2010 Whisky Bible and the #3 overall Whisky of the Year. Does the first Indian single malt to hit the U.S. shores actually live up to the hype? In my opinion, yes! This is a fantastic blend of grainy sweetness, rich barrel vanilla, and smokey peat all wrapped into one unique and interesting whiskey. While the Amrut "Fusion" incorporates elements from both Islay and Speyside, it really tastes like neither one. There is a more rustic character that stands apart from the smooth and polished Scottish malts, but yet the dram itself is still balanced and well crafted.

Columbian Single Origin Chocolate

Chocolate Santander, the only single origin chocolate produced in Colombia and one of South America's most special, takes its name from the State of Santander, Eastern Colombia. The privileged terrains of the Andean mountains of Yariguies, yields Colombia's best cacao known by its exquisite and delicate flavor.
