     Okay, so who out there remembers that it really is still winter...

for a few more weeks anyway. But what a good time we had!  Here at Sun Singer  

we even got so bold as to put out the patio for a few days - silly us!   

Spring is surely around the corner!  

 

SENSATIONAL SATURDAY  

Another sure sign of Spring is Oscar presentations this Sunday. In honor of this weekend's festivities, we'll feature an equally star-studded selection of wines at this week's Sensational Saturday Tasting. Have you heard of David O'Reilly? He's the superstar founder, winemaker and co-owner of Owen Roe Winery. David built Owen Roe from a few barrels of wine in a tiny winery he shared with Peter Rosback (Sineann) to the multi-state, tens of thousands of cases a year winery he operates today. How better to shake off the winter chill than with a tasting of delicious Owen Roe wines?

HUMBOLDT FOG

Humboldt Fog® is an elegant, soft, surface ripened cheese. The texture is creamy and luscious with a subtle tangy flavor. Each handcrafted wheel features a ribbon of edible vegetable ash along its center and a coating of ash under its exterior to give it a distinctive, cake-like appearance. An American Original!

 

    * For a simple dessert or snack: serve with honeycomb, pears, and a crisp white wine.

    * Place a slice atop a delicious salad of spinach, apple, mandarin oranges, walnuts,   

      cranberries, and red bell pepper. Drizzle with raspberry-balsamic vinaigrette.

MOODY BLUE

Moody Blue -- smoked blue from Monroe, Wisconsin's Roth Käse  With a lot more smoke and a little more bite, it's the ultimate backyard barbecue cheese (who puts away the grill?), good for tossing on burgers, sexing up a steak or just shocking the hell out of the unsuspecting nibbler latched onto a doppelbock. We  love the balance of sweet and salty in this cheese, and, yes, bacon, does come to mind. Along with licorice. And perhaps street fires.  In the meantime, rip off your nicotine patch. If it's smoky flavah you crave, look no further than Moody Blue.

 

 

LES FRERES

Les Freres is the most involved cheese make at Crave Dairy in Wisconsin. The curds are ladeled by hand and also the cheese is the only one they produce that requires aging. This European style cheese was developed with care to reflect the Crave Brothers¹ Irish-French heritage. It is a rich rind washed cheese with an earthy, fruity flavor. It tastes wonderful served with fruits and breads, paired with wine or in a cheese course.

LOS NEVADOS

Valle de Uco, Mendoza, Argentina

Los Nevados is the Spanish translation of the magical Incan name for the Andes Mountains. The vineyards of Los Nevados are planted at almost four thousand feet thus benefiting from the cooler climate, longer growing season, and the snowmelt which allows for an ideal natural irrigation and the best expression of the terroir of Mendoza. Each bottle contains a bit of this magical history.  ALL LOS NEVADOS $8.99

 

Chardonnay 2010

Very fresh, lively and clean with a hint of tropical fruit notes with a good backbone that allows it to be paired with a myriad of dishes from creamy cheeses to fish and lighter fare.

 

Malbec 2009

This great new value comes from the high zone of Mendoza in the Val de Uco. Full of dark fruit this Malbec maintains a bright acidity at the end, making it a great food wine.

 

Cabernet Sauvignon 2009

Very complex of spices and condiments, has notes of roasted peppers, plums and a fund of jelly accompanied by bouquet of roasted fruit, coffee and vanilla. Good entry in the mouth, round, with red fruit and cherryor strawberry with sweet and powerful tannins.

 

FATTORIA BIBBIANI Poggio Vignoso Chianti 2009

Tuscany, Italy $12.49

For 13 centuries they have been making wine on the sunny southern slopes of Bibbiani. Only about 10% of his elegant 1,000-acre Tuscan estate is used for wine. The rest is parks, a Rococco topiary garden and a mediterranean pine that is the larget in Italy (100 metrs wide!).  

Bibbiani's "wine of the people". Poggio Vignoso is a simple, delightful food wine that can be enjoyed with virtually anything. A remarkable value! Surprisingly firm, and admirably balanced, with intense dried cherries and floral notes.

 

 

MARCHETTI Villa Bonomi 2006  Marche, Italy $26.99 

100% Montepulciano, Maurizio Marchetti's Rosso Conero Riserva is quickly becoming one of the singularly best wines coming from the Marche. Aged 14 months in French Oak, this made only from "free run juice" with enticing notes of exotic spice, vanilla, dried cranberry, and bitter, dark chocolate. Will age for 15- 20 years.

 

BODEGA PAIVA 'Finca el Tesso' 2008  Ribera del Guadiana, Spain  $13.99 

"Finca el Tesso" is the name of their finest cru. As for their stunning Tempranillo, it is a nothing short of a celebration of fresh fruit. Delicate, yes; ripe, yes; juicy, yes, yes, yes! And in case one doubts, Paiva's wines are also wonderfully complex, from vines as old asa half a century. Simply put, a "young" Tempranillo simply doesn't get much better.

 

FOUR SISTERS Shiraz 2007  Central Victoria, Australia  $13.99

Named after Trevor Mast's four daughters, the Four Sisters range of premium quality wines consists of Sauvignon Blanc, Shiraz, Chardonnay and Merlot. The innovative label was originally created and designed by Trevor's eldest daughter, Daliah. This hand crafted wine, a blend of Shiraz and Viognier (less than 5%) was produced from the ¬nest fruit available from preferred vineyard sites throughout South Eastern Australia.


The fragrant nose displays aromas of lifted perfume characters from the Viogniercombined with subtle dark berry fruit and a hint of spice and pepper. The palate is elegant and finely balanced displaying dense berry fruit, overtones of spice and fi nishing with some fine powdery tannins.

   

TABALI Syrah Reserva 2008 Lamari Valley, Chile  $15.99

Dark and peppery on the nose, this new release from Tabali saturates the palate with flavors of brambly blackberry, cassis, and chocolate. It finishes soft with integrated tannins and a trace of vanilla. Bright acidity keeps everything in balance. A classic pairing with roasted lamb!

Columbian Single Origin Chocolate

Chocolate Santander, the only single origin chocolate produced in Colombia and one of South America's most special, takes its name from the State of Santander, Eastern Colombia. The privileged terrains of the Andean mountains of Yariguies, yields Colombia's best cacao known by its exquisite and delicate flavor.

 

Peasants in the Santander municipalities of San Vicente de Chucurí, El Carmen, Rionegro and Landázuri have been growing cacao for more than two centuries in medium-size and small farms that sustain over 12,000 families. Cacao pods, in colorful yellows and reds, oranges and violets, are hand harvested with scissors and forks, split-opened with short machetes, sorted, fermented in wooden boxes, and then dried in the sun on wooden boards, all according to a centuries-old tradition that brings out the outstanding organoleptic attributes of Chocolate Santander.

 

The special features of Chocolate Santander, its natural origin, the mix of Trinitario and Criollo cacao, rural tradition, and modern processing and quality-control technology are the pride of Compañía Nacional de Chocolates. Milk Chocolate - 36% Cacao

Single-origin chocolate with 36% cacao solids, has predominant dairy notes, milked from grazing cattle, where the flavors of nuts mix with accords of flowers and fruits, generating a rich combination reminiscent of milk caramel. It has a soft consistency on the palate, and the taste of chocolate is gently released to the end. It goes very well with rich sweet or semi-sweet white wines.




Semi Dark Chocolate - 53% Cacao

Single-origin chocolate with 53% cocoa solids content has a character. The bitter taste is stronger and it presents clear nutty overtones that mix with flowers. It is reminiscent of hazelnut nuances and fresh garden scents. Very subtle fruity notes appear at the end, not acidic, but with a body. Perfect to go with good Colombian coffee, or a great tiramisu.


 

 

 

Dark Chocolate - 65% Cacao

Single-origin chocolate with 65% cocoa solids content has special characteristics: a great bouquet and an aroma that lingers in your mouth. Its body and taste are remarkable, and finely combined with flavors reminiscent of nuts, exotic fruits, and mildly scented fresh flowers. A great companion for full-bodied red wines and strong cheeses.

New Holland Artisan Spirits, a blossoming arm of New Holland Brewing Company released it's first firve spirits to retailers in later 2010. Craft Distilling is in a the early stages of a renaissance very similar to what Craft Brewing experienced over the last fifteen to twenty years. New Holland is excited to contribute to the revolution that includes customers celebrating taste, culture and local products. Worth a try, don't you think!

For centuries, cultures all over the world, have celebrated the benefits, aroma and flavor of Humulus lupulus, a.k.a. "hops." Their lively aromatics and punctuated bitterness are best known for their most infamous role in brewing. Hatter Royale is the innovative creation, Hopquila which invites the herbaceous perennial to the exciting world of distilled spirits. A fermented wash of 100% barley is twice distilled, then steeped with Centennial hops. The vivacious spirit features a grain-centric body framed by citrus-laden hop character in the nose and finish. Zeppelin Bend Straight Whiskey   375ml  $38.99

A culmination of New Holland's brewing roots and a growing passion for distilling. A straight-malt whiskey, it begins with a brewer's mash coaxing sugars from malted barley into a liquid wash. This wash is twice distilled and aged in new American oak with a heavy char. Notes of vanilla and clove arise from the slightly caramelized spirit leading to a classic American-oak finish.

AMON-Ra Shiraz 2007

96-99 pts. The 2007 Amon-Ra Shiraz was sourced from vines

ranging in age from 50 to 110 years with yields of only 0.5 tons per acre. It spent 15 months in 100% new oak, predominantly French.

 

A glass-coating, opaque purple in color, it reveals a brooding nose of wood smoke, mineral, scorched earth, Asian spices, blueberry, and chocolate. Super-rich, dense, yet surprisingly light on its feet, this extraordinary effort will evolve for a decade and offer adrinking window stretching from to 2035.
