     Wow, what a weekend and week this has been.  The break from the freezer drawer has lifted everyone's spirits and Valentine's allowed a short break from the daily routine. We enjoyed seeing so many of our friends in the Cafe to celebrate and thanks to all the new faces who will have a Valentine's to remember at Sun Singer.

Another week goes by on the march to Spring and this week at the Wine Bar we'll feature several stunning, new reds worth leaving home for:   

 

ELYSE 'Nero Misto' Red Blend

Aromas of fresh strawberry, plum, and pomegranate with flavors of red plum, ripe cherry, raspberries and a hint of spice. Soft and supple with bright fruit, silky tannins and a long, complex finish. 37% Petite Sirah, 25% Zinfandel, 19% Carignane, 12% Primitivo and 7% blend of Charbono, Barbera and Valdiguié.

  

BENJAMIN ROMEO 'Predicador' '07, Rioja, Spain

Dark, ruby colred, it displays a nose whose most prominent feature is lightly roated herbs. On the palate, it is quitesilky with some complexity and a round finish.

wine bar feature '06 AMON-Ra unfiltered Shiraz 

Amon-Ra has become one of Australia's icon wines. Made from 100% Shiraz sourced from vineyards ranging in age from 80-120 years and with microscopic yields of 0.5 tons per acre, the 2006 Amon-Ra was aged for 15 months in new French and American oak.     

Ben Glaetzer's philosophy is that great wines are made in the vineyard - a belief in "terroir" and an understanding of the ancient dry-grown vineyards in the renowned Ebenezer district of the Barossa is evident in his wines.

95 pts. Barely budging in hue, the 2006 Amon-Ra Shiraz gives a very deep purple-black color and earthy, gamey aromas of forest floor, moss covered bark, Peking duck skin, mulberries, dried plums, blackberry preserves, incense, cinnamon stick and cloves. Very crisp, concentrated and full with medium-firm velvety tannins, it presents a slightly warm yet long and engaging finish. It's approachable now and should continue to develop, drinking to 2022+.

You have to have great grapes to make great wine. That is the winemaking philosophy which began with the 1994 vintage when Les created his first 'real' wines from Staglin and Inkgrade Vineyards.

 

Full ruby. Black cherry, licorice, menthol and herbs on the nose.  Fat, Dense and sweet, with strong fruit and firm supporting structure. Slightly medicinal black fruit flavors are long and slightly aggressive on the aftertaste.  

 

GRAHAM BECK 'The Game Reserve' 

Cabernet Sauvignon 2008 South Africa $19.99

Named for the 3,700 acre game reserve established by the winemaker, Graham Beck's Game Reserve is....

A complex Cabernet Sauvignon with black berry fruit, baking spice, and minerality to spare. Starting with fermentation in second-fill French and American oak casks, this wine gains complexity and fullness from in-barrel malolactic fermentation and an additional nine months' maturation. Enjoy with rich beef, lamb, and venison dishes, or with assertive cheeses.

 

Graham Beck is a giant of the South African wine scene and has led the country's thundering success since the end of Apartheid in 1994, a year that saw Nelson Mandela toast his inauguration as President with a flute of Beck's Brut NV.

Offering textbook aromas of kirsch, raspberry, and pepper offered in a medium-bodied,  fruit-forward, spicy, surprisingly complex style.  

 

PERFECTA Merlot 2007   

Napa Valley, California  $13.99

A blend of 87% Merlot and 13% Syrah, sourced from prestige vineyards in Oakville and Napa. This gorgeous Merlot opens with an elegant bouquet of berry fruit and cherry pie. The aromatic promise is followed by silky, smooth flavors of abundant strawberry, black cherry, and berry fruit, spice, and hints of toffee. the style is structured, but elegant, and a true expression of Napa Valley. I recommend pairing this wine with a wide range of beef and pork dishes, as well as red sauces on pastas, grilled vegetables, and cured meats.

   

DOM CHATELAIN Pouilly-Fume 2008 Loire, France  $22.99

A clean, crisp Sauvignon Blanc with beautiful acidity balancing the fruit characters. Good mineral Pouilly-Fumé is increasingly hard to find, and our allocations in a good year tend to run out ahead of the follow on vintage. This fine wine is distinguished by lovely length of flavor in the mouth.

QUINTA DO CRASTO LBV Porto 2005 375ml  $13.99

The Late Bottled Vintage hails from the estate's 40-60 year old vines.  Aged for four years in barrel (Portuguese of course) and bottled without fining or filtration (a rarity for LBV Ports), this complex effort boasts bold and concentrated notes of blackberry liqueur, dried currant, chocolate shavings, vanilla-laced oak and dry spice Ideal at the end of a meal, particularly with strong cheeses (traditionally Stilton).

BOULEVARD BREWING 

Smokestack Series Chocolate Ale 750ml   $11.99 

One of the brightest stars in a city (Kansas City) filled with culinary treasures, Christopher Elbow has been handcrafting masterpieces in chocolate for more than ten years. In that time the reputation of his artistic delicacies has spread around the globe. Elbow's sweets are distinguished by their use of unusual and sometimes surprising flavors and ingredients; in that adventurous spirit we joined forces to bring you a very special Chocolate Ale.

 

In developing this beer, Elbow and Boulevard brewmaster Steven Pauwels sought to harmonize the interplay of chocolate and malt, with each supporting and enhancing, but not overwhelming, the other. Just the right chocolate was essential. Elbow recommended a rare variety from the Dominican Republic, prized for its robust flavor and aroma, and a personal favorite. More than a mere flavoring, the chocolate - in the form of nibs, or crushed, roasted beans - was incorporated into the brewing process itself.

 

SMUTTYNOSE BREWING Wheat Wine Ale 24 oz. $5.99

A unique hybridization of two well-known beer styles, combining the rich, voluptuous taste of a traditional barleywine with the subtle, tart flavors of an American wheat ale, topped off with a healthy dose of crisp, herbaceous hops. So unique that the much anticipated debut edition of Smuttynose Wheat Wine, brewed and bottled early in 2005, was delayed for nearly a year due to problems stemming from the federal label approval process.

Hatter Royale is the innovative creation, Hopquila which invites the herbaceous perennial to the exciting world of distilled spirits. A fermented wash of 100% barley is twice distilled, then steeped with Centennial hops. The vivacious spirit features a grain-centric body framed by citrus-laden hop character in the nose and finish. Zeppelin Bend Straight Whiskey   375ml  $38.99

A culmination of New Holland's brewing roots and a growing passion for distilling. A straight-malt whiskey, it begins with a brewer's mash coaxing sugars from malted barley into a liquid wash. This wash is twice distilled and aged in new American oak with a heavy char. Notes of vanilla and clove arise from the slightly caramelized spirit leading to a classic American-oak finish.

Twenty years after the original was introduced, the first single barrel bourbon produced by Knob Creek has been released.

 

Although similar to the original, Knob Creek Single Barrel Reserve is more elegant and refined, slightly drier and bottled at a higher proof.

 

The nose offers sweet aromas of maple, vanilla and orange, while the palate is big, bold and complex. Warming notes of toffee and caramel are supported by dried fruit, cinnamon and oak which lead to a dry, resinous finish.
