As the Boss knows, "Can't start a fire without a spark.." and here in the Midwest we're well practised at rubbing things together for warmth, but we hope that all the bottled up romance this weekend will break the ice, literally, and bring us some warmer weather.
At Sun Singer, we're all heart this Valentines' Weekend. No matter how artificial it may seem, we're counting on everyone to spark this celebration of love and life. C'mon it's time to have some fun. Spring's on it's way - it's already February! Looking forward to seeing you here...

Hey guys, the Super Bowl is over and this is the week for romance! Do you have the picture? Please, no more mention of sports until after your Valentine's duties are done!
We invite you to make Sun Singer part of the romance for Valentine's weekend of February 12, 13 & 14th. We're looking forward to dressing up the Cafe. Our Chef Sherry has created new delights for the occasion. They'll be romantic music, enticing wines and love stories playing. We just need you to play your part and make the scene complete. wine bar feature '06 AMON-Ra unfiltered Shiraz
Amon-Ra has become one of Australia's icon wines. Made from 100% Shiraz sourced from vineyards ranging in age from 80-120 years and with microscopic yields of 0.5 tons per acre, the 2006 Amon-Ra was aged for 15 months in new French and American oak.
Ben Glaetzer's philosophy is that great wines are made in the vineyard - a belief in "terroir" and an understanding of the ancient dry-grown vineyards in the renowned Ebenezer district of the Barossa is evident in his wines.
A RARE OPPORTUNITY. A SPECTACULAR WINE.

Barely budging in hue, the 2006 Amon-Ra Shiraz gives a very deep purple-black color and earthy, gamey aromas of forest floor, moss covered bark, Peking duck skin, mulberries, dried plums, blackberry preserves, incense, cinnamon stick and cloves. Very crisp, concentrated and full with medium-firm velvety tannins, it presents a slightly warm yet long and engaging finish. It's approachable now and should continue to develop, drinking to 2022+. ~ Robert Parker, Wine Advocate

 MATHILDE et YVES GANGLOFF Condrieu 2007 Northern Rhone, France $84.99
89 pts. "Light gold. Seductive perfume of peach compote, smoky minerals, yellow flowers and brioche. A big, fleshy wine (15% alcohol on the label), with deep pit fruit flavors and a strong whiplash of smoky, floral qualities. Really clings with anise and floral notes on the finish. Amazingly fresh for its level of alcohol. - Stephen Tanzer's International Wine Cellar
Gangloff has become one of Cote Rotie's bona fide superstars, thanks to the ever increasing quality and intense style of his wines as well as the limited quantity in which these wines are made.
Despite the renown, the Domaine is tiny. There are just 1.7 hectares in Condrieu and 2.4 hectares in Côte-Rôtie, mostly in the Cote Blonde but also in the Cote Brune. Recently Gangloff has acquired a very small amount of St Joseph. All the vines are planted on dizzyingly steep hillsides - which have been cultivated with vines on and off for over 2000 years - and overlook the Rhone river.
All work has to be carried out by hand and is done so organically. In the cellar, Gangloff mixes modern and traditional methods. He destems most but not all of the crop and depending on the vintage. He uses wild yeasts and manipulates the wine as little as possible. Maturation is by lenthy ageing on small oak barrels, with a proportion new without racking and minimal use of sulphur. The Gangloff style is for tremendous concentration, depth and complexity while appearing delicate and graceful at the same time and expressing brilliant fruit purity and freshness. DOMAINE de VIEUX TELEGRAPHE 'La Crau' Blanc 2006 Chateauneuf du Pape, Southern Rhone, France $66.49 Don't miss the 2006 Vieux Telegraphe Chateauneuf du Pape Blanc (20,000 bottles produced). Uncharacteristically dominated by a large percentage of Clairette, it exhibits an exotic tropical fruit scent interwoven with notions of spring flowers, crushed rocks, and white peaches. Fruit-driven, with good minerality in the background as well as surprising structure, this lovely white competes favorably with the estate's brilliant 2005. BEER ********** MEXICANA 'Red Pig' Mexican Ale Tecate, Mexico
This Mexican ale pours a fairly deep bronze colour with a tinge of amber and a thinnish off-white head. The nose has plenty of caramel and biscuit richness, with a suggestion of a fudge-like quality and plummy red fruit aromas. In the mouth this has a pleasant hop bitterness, with much more tang and resinous hop quality than the nose suggests, touch of caramel sweetness that is still there being easily dominated by crisp lemony acidity and the slightly spicy, slightly floral hops.
NEW BELGIUM Mighty Arrow Fort Collins, Colorado
MIGHTY ARROW Pale Ale provides lots of pleasurable sniffs from Amarillo and Cascade hops with a fetching honey malt base. This is our brewed tribute to Arrow, the Aussie/Border Collie mix who ran (literally) New Belgium for 12 years. When she wasn't patrolling the brewery grounds, she was famous for her office visits: She never met a tummy rub she didn't like. SIERRA NEVADA Glissade Chico, California

The predominant flavor and aroma of a modern gin will always come from juniper (dried berries of the "common juniper," Juniperus communis). But the wonderful challenge for the distiller is in selecting and blending from a wide variety of additional, exotic botanicals in order to impart a uniquely satisfying, balanced character to his gin.
