JOIN US BEFORE AND AFTER THE GAME! Sun Singer News
I like wine before, during, after and in between meals,
if things point that way.
~ M.F.K. Fisher, With Bold Knife and Fork, 1968
Baby, it's cold outside! Seems to be the standard lately along with continuing amounts of snow. Snow can be pretty, but we're already hearing grumblings of friends about 'this long winter'. At Sun Singer, we're doing our best to keep the season warm and welcoming with great food and wine, a warm place - we're just missing the fireplace - to relax and share holiday stories or New Year's plans with friends and family. Take the chill off with one of our Winter Warmers, a satisfying glass of wine or our current special on Glenmorangie 'The Original' Single Malt Scotch.
With plans already in the works for Valentines Day, you've got to realize that winter's icy grip won't last forever. Join us soon and often because Spring can't be far way!

Wine Feature
The majority of this hedonistic beauty, the Cuvée Christine, is from warmer and rockier sites east of the Russian River Valley. Fermented with less stems (about 30%), and aged for one year in more new oak (about 70%) than most wines, this tasty drop is ready to rip but will reward as much patience as you are willing to give. PAX Cuvee Christine 2007 North Coast, California
Dark purple core with a ruby hue, black raspberry andblackberry dominate the Cuvee Christine with underlying notes of bramble, fennel and black cardamom. Waves of rich, thick, juicy fruit stroke the palate, marked by a bright, fresh and crystal clean finish, thanks to last year's cooler, extended growing season. 2 oz. $6.00 5 oz. $12.25 bottle $47

SUPER TUSCAN
It may be the wine world's coolest title for any category of wine, but the words Super Tuscan seldom show up on the wine label. Super Tuscan is not an official designation, but rather a grand name bestowed by the media on a certain type of Italian wine. What happened was this: Italy, like many other European countries, has strict rules governing how its wines are made. But in the 1970's some Tuscan winemakers were breaking those rules, often blending their revered sangiovese with - shockingly - such French varieties as cabernet sauvignon, cabernet franc, and merlot, and sometimes even making wines without a drop of the officially sanctioned sangiovese. The power and pizzazz of the wines moved the wine press to christen this style Super Tuscan.
Get in style and put a Super Tuscan on your 'to-do' list for early in the new year. Wine life may never be the same!

winter rocks: New Brews
We wanted to include a few of the new beers this week in addition to the traditional Winter Ales that are surely good drinking this time of year.

DARK HORSE Tres Blueberry Stout Definitely blueberries on the nose. Typical stout qualities comprise the bulk of aromas, some nice roasted malt character, burnt chocolate and caramels. The blueberry really seems to work well in the aroma, lets hope the flavor follows suit.
Fortunately the blueberries hang on into the flavor profile. Admittedly not as pronounced as in the aroma. The stout characteristics take front seat, with bitter chocolate and roasted malt flavors and there is definitely a hint of black pepper. The blueberries come in right at the beginning of the sip as well as towards the finish, right before the balancing bitterness takes over. The combo of flavors is really quite delicious!
O'FALLON
Sticke It To The Man Alte Pours a clearish, iced-tea brown. A fine, tan head stickes it to the glass. Smell is molasses and caramel and toffee and other assorted good candy malt hues. A little bit of spice attempts to keep things in balance. First taste is hot and syrupy. A few unidentified flavors come to the front along with some fig. An alcoholic presence lingers for a while, and the feel is viscous and finishes bitter. Interesting complexity after-the-sip.
'Tis the season for beer, what's your brew tonight?
