CHAMPAIGN COUNTY HUMANE SOCIETY:
ADOPT A LAB

Thanks to all of you who have contributed to the cause! Remember that this benefit runs through the end of November so there is still time to participate. You can even drink a bottle of LAB in the Wine Bar Cafe and the Champaign Humane Society will receive credit. Bring a group of friends and lap it up!
Now's the time to open a wine that gives the world more than just a little pleasure. This November, Sun Singer is proud to partner with the local non-profit Champaign County Humane Society to provide a tasty and enjoyable way for everyone to offer continuing support to their efforts.
Throughout November- coincidentally National Philanthropy Month-Sun Singer will donate $2 to the Champaign County Humane Society for every bottle of LAB adopted.
Meet LAB, full name LAB Vinho Regional Lisboa 2008 by Casa Santos Lima. This wine is a blend of Castelao (35%), Tinta Roriz (25%), Syrah (25%) and Touriga Nacional (15%) grapes. Made in a modern, extracted style, with long maceration and 4 months ageing in new barriques (Portuguese oak), yet this wine hasn't lost its Portuguese roots. Very attractive bright ruby color. Aromas of ripe red fruits combine with concentrated dark cherry and blackcurrant flavors, as well as a fresh and agreeable acidity and some fine oak notes. It ends with firm but smooth tannins and a fruity finish. Perhaps most importantly, it offers very good value retailing for $10! About the Champaign County Humane Society The Champaign Humane Society is an "open door" shelter and accepts all animals needing shelter, regardless of age, physical condition or adoptability. They are not a government body and we are not supported by tax dollars.As a local, not-for-profit charity, they exist through the generosity of many individuals and businesses and are supported by a community that cares.

A cult classic, Orin Swift's The Prisoner
is a wine that's snapped up every vintage
by hoards of admirers.
The Wine Spectator scored it 92 points saying "Focused, rich and ripe, showing aromas of black cherry and smoky pepper, with sleek but complex flavors of boysenberry, licorice and toasty oak that linger with balanced tannins."

McKinley Springs, Washington:
BOMBING RANGE RED!
 The Bombing Range Red (named for the fighter pilots who used the McKinley Springs property as a training ground during World War II) is mostly Cabernet Sauvignon (78%), rounded out with small portions of Cabernet Franc, Syrah, and Mourvedre. All of the fruit comes from estate vineyards in the Horse Heaven Hills. The comic strip style label makes clear that this is not a winery that takes itself too seriously. What's inside the bottle is serious enough, especially at this price point.
This absolutely smells and tastes like a Cab with some age: a core of cassis and sweet blackberry fruit is framed by cedar, soy sauce, and chocolate. All neutral barrels here. This is ripe, rich, and tasty, but it never crosses the line into fruit-bomb territory. |

JOIN THE CELEBRATION:
"Le Beaujolais Nouveau est arrive!"

Those are the shouts that will be be heard around the globe at 12:01am on Thursday, November 18th. Once a year, the third Thursday in November, wine drinkers throughout the world lift their glasses to that young, fresh, fruity wine of the Beaujolais Nouveau. As tradition (and law, for that matter) demands, no one can open a bottle or take a sip of this much anticipated wine until after the stroke of midnight on the third Thursday of November.
Beaujolais Nouveau is an incredibly popular short fermentation wine that is fruity, low in tannins, and has a beautiful purplish-pink hue. It is intended to be enjoyed the year it is produced to celebrate the end of the harvest. Hand picked Gamay grapes are fermented just 6 to 8 weeks, and then the party begins! Be among the first to try this delicious and festive wine! Sun Singer will be offering a selection Nouveaus for your enjoyment so come try them all! Beaujolais is a classic choice for Thanksgiving and you'll want to stash some bottles away for the holidays before they all disappear!
