WINE FEATURE
Fess Parker 'Ashley's' Chardonnay 2007
Santa Rita Hills, California

The 2007 Chardonnay Ashley's Vineyard exhibits that distinct earthiness that seems to come from selected terroirs in the Santa Rita Hills and Santa Maria Valley. Crisp, elegant aromas of white peaches, apricots, quince, and white currants are followed by hints of flowers and honeysuckle. Medium to full-bodied with good acidity as well as beautiful balance and freshness.

NEW MOON:
WEREWOLF WINES

Stories of werewolves can be found as far back as history has been written. With some of the earliest accounts of werewolves coming from Romanian and Greek sources. Ovid, in the Metamophoses, told of King Lycaeon. Who was visited by passing gods. The king decided to test them, to see if they were real gods, and served human flesh in one of the many dishes served at a banquet in their honor. Upon discovering the tainted dish, the gods were furious (cannibalism was frowned upon in that part of the world). They changed King Lycaeon into a werewolf - since he obviously liked human flesh, the wolf form would be a more acceptable form to take part in such vile activity.

Werewolves are easy to spot as they have several common characteristics: red hair, eyebrows that join in the middle, index and middle fingers that are the same length, love of rare or raw meat, hairs on the palms of the hands and hair on the inside of the skin (a tough one to check!).

For a howling good time, even without a full moon, this wine will put hair on your palms!

WEREWOLF Pinot Grigio 2009

This 100% Pinot Grigio is green with light pink hues. The nose has subtle aromas of apple, pear and grapefruit. On the palate it is crisp and fresh, fruit driven with some notes of apple. Surprisingly effervescent. Balanced acidity in this wine which makes it an everyday gem.

WEREWOLF Pinot Noir 2008

This 100% Pinot Noir is dark ruby in color. The aromas given off are very fruity, with distinctive hints of strawberries and rasberries. Light bodied, fruity and surprisingly bright the texture is velvety with a medium finish that is elegant. This soft Pinot Noir can be opened anytime, but the shadows of the dark evening provide the best atmosphere for this wine to really bite you.

WEREWOLF

Cabernet Sauvignon 2008

Aged in Transylvanian oak, this frightfully good 100% Cabernet is dark red in color, with aromas of bell pepper and spice, screaming with fruit flavors and a finish to die for!

WEREWOLF BEER
Just in time for Halloween. You can sample these two lagers straight from the Rinkuskiai Brewery in Lithuania.

Werewolf  Euro Pale Lager 5.2% ABV

Simple amber that is crystal-clear and bright. The eggshell colored cap looks pretty good too. Nice chewy texture, the persistence and the amount of lace. Smell of untoasted grain, sweet malt with light floral hops. Sweet malt flavor, touch of candy sweetness, light bitterness.

Werewolf  Euro Dark Lager 8.2% ABV

Pours with a tall lingering froth. Beautiful caramel, copper color. Wispy beige head.  Complex smell. Aromas of sweet malts, spicy hops, wet hay, plum, brown sugar. Taste is complex too. Flavor of rich sweet malts,  caramel. Lots of toffee.  Full nectar with good carbonation. Hides the alcohol very well. A mild malty sweetness ensues as the werewolf attacks with its high abv. Nice chewy texture. Overall it has an earthy presence and

                                  finishes dry bittered nicely.

TRUE BLOOD:
WELCOME TO
VAMPIRE VINEYARDS

Rumor has it that the Vampire Vineyards are actually owned by a circle of vampires, and the company's founder, an entertainment attorney from New York, is actually just a front.

Using meticulous advance planning, these vampires planted their rootstock at the dawn of the 21st century in the mountainous region of Paso Robles, California, where the ocean fog frequently rolls in off the coast providing the perfect cover to their hidden vineyards.

PINOT GRIGIO
Fresh lime fruit notes dominate the nose, the pleasant light green color leading into an easy-drinking lively wine full of youthful, refreshing acidity typical of this world famous variety best known for its performance in Italy. This wine is made in the modern seductive style.

PINOT NOIR
Powerful forest fruit and wild strawberry aromas persist on the nose, balanced by hints of fine French oak. The vibrant ruby red colors hint at a young wine, but the taste reveals a remarkable maturity. Elegant soft fruit flavors are already finely integrated into the structure of the wine, as is the oak, adding a subtle but powerful complexity to the flavor.

CABERNET SAUVIGNON
Classic, small-lot fermentations, followed by aging with both European and American oak, gives full expression to the rich varietal flavors in this wine.  Judiciously blended with small amounts of Merlot for softness, and Syrah for added structure, our Cabernet displays ripe flavor character and a lovely aroma that will continue to develop with additional time in bottle.

Inspired Spirits:
HUM
BOTANICAL

Inspired by the great amaros of Italy, celebrated mixologists, Adam Seger of Chicago and London's Joe McCanta infuse organic rum with fair trade hibiscus, organic ginger, green cardamom and kaffir lime to create the beautifully balanced spirit called hum. At a bold 70 proof, hum is best enjoyed on the rocks with lime and a splash of soda. Enjoy it tall with tonic, ginger ale or cola. Or, add it to your favorite beer or sparkling wine. Don't stop there....replace sweet vermouth or orange liqueur with hum to kick up the classic negroni, manhattan or margarita. Finally, end your evening with your favorite ice cream drizzled with hum. Mmmmmm. The applications are only limited by your imagination!

Look for HUM inspired cocktails at the Sun Singer Wine Bar. New Fall cocktails coming soon!
