Meet The Wild Scotsman Thursday, October 14th 6:00 - 8:30pm Price: Complimentary! Calling all Scotch lovers! Stop in to Sun Singer for a FREE walk up sampling and bottle signing with Jeff Topping, founder of Wild Scotsman Whisky. Jeff will be bringing a grab bag of scotches with him as he travels through central Illinois. In addition to the Wild Scotsman Brands he will feature the brands of John McDougall and The House of MacDuff. Wild Scotsman Whisky and Spirits is an independent whisky company created by an American whisky enthusiast, Jeff Topping. Jeff is one of only two Americans who are independent bottlers of Scotch whisky and is the madness behind the mind for Wild Scotsman, a true independent bottling company. There are no corporate bankrolls funding his passion, influencing prose, or choosing casks, just the passion and pursuit to bottle the best Scotch whisky. Jeff's partner in the Wild Scotsman is John McDougall, who is arguably the most experienced Whisky Expert/Master Distiller in the business today having been Production Director or Manager of a distillery in all of the traditionally recognized distilling regions in Scotland.

WINE FEATURE Fess Parker 'Ashley's' Chardonnay 2007 Santa Rita Hills, California
The 2007 Chardonnay Ashley's Vineyard exhibits that distinct earthiness that seems to come from selected terroirs in the Santa Rita Hills and Santa Maria Valley. Crisp, elegant aromas of white peaches, apricots, quince, and white currants are followed by hints of flowers and honeysuckle. Medium to full-bodied with good acidity as well as beautiful balance and freshness.

Here's a couple of selections from the High Gravity Series from this Holland, Michigan brewer.
BEERHIVE TRIPEL Fresh off he truck is New Holland's most recent addition to their High Gravity Series, the Beerhive Tripel. Here's what they have to say about it: "Little John's local bees create a wildflower honey which lends a sweet, earthy complexity to this traditional style beer. A snap of ginger provides a refreshing finish. Pairings: fresh veggies, soft-ripened cheese, fruit of late summer, custards & biscuits."

IMPERIAL HATTER IPA Jump down that rabbit hole! Pours just a shade lighter then amber. It has a sharp toasted hop punch that rams its way up your nostrils. This powerful brew also boasts a sweet citrus underside to compliment a cream colored head and a medium carbonation level. The flavor is a joy to behold. This beer is dry hopped and that really adds to the amazing hop bite. It has a slightly understated sweetness that merges with an in your face hops blast.

TRUE BLOOD:
WELCOME TO VAMPIRE VINEYARDS
Rumor has it that the Vampire Vineyards are actually owned by a circle of vampires, and the company's founder, an entertainment attorney from New York, is actually just a front.
Using meticulous advance planning, these vampires planted their rootstock at the dawn of the 21st century in the mountainous region of Paso Robles, California, where the ocean fog frequently rolls in off the coast providing the perfect cover to their hidden vineyards.

 PINOT GRIGIO Fresh lime fruit notes dominate the nose, the pleasant light green color leading into an easy-drinking lively wine full of youthful, refreshing acidity typical of this world famous variety best known for its performance in Italy. This wine is made in the modern seductive style.

PINOT NOIR Powerful forest fruit and wild strawberry aromas persist on the nose, balanced by hints of fine French oak. The vibrant ruby red colors hint at a young wine, but the taste reveals a remarkable maturity. Elegant soft fruit flavors are already finely integrated into the structure of the wine, as is the oak, adding a subtle but powerful complexity to the flavor.
 CABERNET SAUVIGNON Classic, small-lot fermentations, followed by aging with both European and American oak, gives full expression to the rich varietal flavors in this wine. Judiciously blended with small amounts of Merlot for softness, and Syrah for added structure, our Cabernet displays ripe flavor character and a lovely aroma that will continue to develop with additional time in bottle.
