For the Love of Whiskey: NEW WHISKEY in STOCK!
According to Alfred Lord Tennyson, "In the Spring a young man's fancy lightly turns to thoughts of love"...and whiskey, we'll add! This Spring, we've been working to bolster our whiskey collection, and we think we've come up with some prominent new choices.
ROUGHSTOCK Montana Whiskey Nestled at the base of the Bridger Mountain
Range in beautiful southwestern Montana,
RoughStock Distillery is quietly hand crafting the First Best Whiskey in the Last Best Place.
RoughStock Montana Whiskey doesn't taste like
anything out there. The taste profile is a blend between
an unpeated single malt European whiskey crossed with a high end Bourbon. With great malt and grain flavor from the barley that you'll find in a
good European single malt and the fuller finish from using the
brand-new barrels that impart all of those good caramel/vanilla/fruit notes you
find in premium Bourbons, you get the best of both worlds!
KOVAL Boutique Distillery Koval Distillery is in a little storefront on North Ravenswood Ave.,
just south of Foster, directly across from the Metra tracks, in the
Andersonville neighborhood of Chicago. Their products are certified both organic and kosher, and they are a 100 percent grain-to-bottle producer. They are making grain spirits primarily. They have five white whiskeys (but don't tell anyone, it's illegal!),
each made from a different grain: rye, wheat, oats, spelt and millet. This is white whiskey in the eau de vie style; a very clean spirit with a light but distinctive flavor of the underlying ingredient. Though subtle, that flavor is deep and well constructed. Koval Midwest Wheat: Banana, floral notes with a hint of honey. Koval Rye: Round, smooth, warm, floral undertones, and a hint of vanilla.
SMOKEHEAD Islay Smokehead is a rich, seaweedy
and intensely peaty whisky. The flavour is fresh, fruity and immense, with
notes of sherry, iodine, toffee, smoke and sea salt all fighting for
recognition.
Like a cannonball - hits the
palate at once with cocoa, peat and some honey sweetness then explodes with
peppery spice and more earthy peat. Spreads to all the areas of your mouth with
more peat and light sweetness. Even more peat, spice,
mandarin - then dries up. When you
think it's all over the peat comes back to hit you again.
A really vigorous whisky not
for the faint hearted ... savour and enjoy!

O'Fallon's: Something New, Something Tried & True
And what about the hemp?
HEMP, HOP & RYE "Hemp is a botanical cousin to hops and we use one
that's grown organically," Owens explains. "It's extremely nutritious
and adds a wonderful nutty flavor in the finish. It's a perfect complement to
the rye and to the Cascade, Hallertauer and Summit hops in the beer." Hemp Hop pours a decidedly hazy light amber color. It smells
of caramel malt, with a bit of butterscotch and a touch of spiciness. It's
pretty heavy-bodied, with plenty of toffee and toasty malt flavors. There's
enough hop bitterness to keep it balanced, but it's not a particularly hoppy
beer in either taste or aroma. The finish is plenty long, and would pair with
food much as a traditional English pale ale would: fish and chips, shepherd's
pie or other classic pub fare.
WHEACH
Imagine a smooth, clean wheat beer with a touch of peach and you get the idea behind O'Fallon Wheach, their peach wheat beer. Refreshing and crisp, it's perfect for warm summer weather.
Style: Fruit Beer (American Wheat)
Alcohol: 5.1% ABV Bitterness: 7 IBUs Color: 3.2 SRM Grain: Pilsner, White Wheat,
Bonlander
Hops: Glacier
Both O'Fallon's new Hemp, Hop & Rye and Wheach are now available for Summer drinking in the Wine Bar Cafe.

At the Deli: Morbier (more-bee-AY)
from France
Morbier is an aromatic and surprisingly mild French cow's milk AOC cheese defined by the dark vein of vegetable ash streaking through it middle. Morbier, which is aged for at least 60 days, pleasantly confounds expectations. Contrary to its smell, Morbier has a mild taste and leaves a wonderful, nutty aftertaste. Morbier is excellent served with Gewürztraminer or Pinor Noir.
Stop by for a sample at the Sun Singer Deli.
