Sun Singer News Valentine's Thank You! We want to say 'Thanks' for everyone who stopped in to celebrate Valentine's with us, whether in the Cafe or shopping for Valentine's treats. We did turn a few heads with our champagne table clothes strewn with rose petals and chocolate kisses. One of our celebrants remarked how the table clothes "made the food look even better." The weekend was alot of fun and it gave us all a chance to turn our thoughts to love and get away from the winter blahs.
Irish Whiskey Seminar / Monday, March 15th $25pp It may be an old wive's tale, but we understand that whenever a bottle of Irish whiskey is opened Spring is surely near! Always changing, always something new to try!
Frecciarossa 'Sillery' White '07, Lombardy, Italy100% Pinot Nero vinified as a white wine. The nose is fruity, richly intense, and long lasting with hints of white flowers and citrus. Well balanced acidity. A very elegant wine. Godwin Chardonnay '07, Russian River Valley, Sonoma, CaliforniaAromas are reminiscent of a classic Burgundian style Chardonnay framed with an alluring scent of white peach. Cigale GSM '07, Barossa Valley, AustraliaMade from Grenache, Shiraz and Mourvédre. A rich nose of blackberry, blueberry and plum fruit, mingled with smoky white pepper notes and exotic spices. A juicy palate, loaded with dark berries, hints of cassis, and complex earthy spices. Goulart Classico Malbec '08, Mendoza, ArgentinaAn excellent example of the style and elegance which old malbec vines yield. Combines the fresh crisp flavors of blackberry and wild raspberry with good structure and soft tannins. R & B 'Swingsville' Zinfandel '07, Lodi, CaliforniaThe bouquet shows fresh strawberry and raspberry with hints of pepper and spice. The flavors are ripe berry with creamy cherries and an elegant spicy aftertaste. Petit Sirah adds structure and punches up the dark berry fruit while extended oak adds complexity. Ardèvol 'Anjoli' '06, Priorat, SpainA blend of Garnacha, Cabernet Sauvignon, Syrah and interestingly, Merlot. Aromas of violet, jasmine and mulling spices. Lots of berries and sweet smoke with a hint of dried tomatoes. rich and assertively flavored with a soft cloak of tannins.

Wine 102: Evaluation & Terminology

Do you read tasting notes and wonder how they can be so specific? Do you want to be able to put into words what you taste? If so, this seminar is for you! Join us at Sun Singer as we continue to de-mystify the world of wine. Wine 102 will show you the tasting process and help you develop a style of wine talk.
We'll expand on the basic wine terminology and flavor components of wine taught in Wine 101. We will discuss how wines are rated and explain several systems. There will be handouts on a wine rating system and a listing of wine words. The final part of the seminar will focus on developing your own personal wine language.
We strongly suggest that you have previously attended Sun Singer's Wine 101. Wine 102 will assume a basic knowledge of wine varietals, their characteristics and basic tasting technique.

Exquisite Apples:
Cidre Bouche Brut de Normandie
Cidre Bouche Brut Etienne DuPont is made from nine different different harvests of apples - chosen for sweetness, acidity and tannin - between September and December every year. The fruit comes from trees that average 12 years of age. They don't produce much fruit, but the apples that do form have amazingly concentrated flavor. Additonally, this cider is free of nitrates, unpasteurized and unfiltered.
Brut E. DuPont has a near-sparkling wine carbonation that brings out the flavor and scent of apple on the nose and palate. Using the skins in the fermentation process adds a dryness to the mouthfeel that's perfect with a variety of cheeses like brie and gruyere. It also pairs well with creme fraiche, late harvest fruits such as figs and pears, and waffles with lots of butter. We hear that a cup of cidre is a great marinade for pork chops and roasts. Who'll be the first to try it!
In addition to the Etienne Dupont, Sun Singer features a selection of French hard cidres from producers Le Village, Louis de Lauriston and Christian Drouin.
