is flying by, next stop is Valentine's Day! We invite you to make Sun

Sherry has created new delights for the occasion. They'll be romantic

We've Got Class!: Wine 102 & 103 We'll be offering Wine 102 on Tuesday, February 23rd. Wine 102
will add greater depth and complexity to your knowledge and experience
of wine. We're also proud to announce that Brian Bowman has developed Wine 103
which is scheduled to debut on Tuesday, March 30th. We've been looking
forward to the final leg of this trilogy for some time, and you can be
sure that Brian will not disappoint. Wine 103
will focus on food and wine pairing, and more details will be

From the Cellar: New This Week @ The Wine Bar New wines February 2nd at the Sun Singer Wine Bar.
Always changing, always something new to try!
Opulent Aussie!
Anaperenna Shiraz-Cabernet 2006 by Ben Glaetzer, Australia 2 ounce $8. 5 ounce $16. bottle $64. Anaperenna
is 75% 85-year old Barossa Shiraz and 25% 60 year old Barossa Cabernet
fermented and aged in all new (primarily French) oak, the alcohol a
modest 14.5%. Bottled unfiltered, it's as pure an example of this classic Barossa blend as you'll find, which Wine Advocate
(correctly) notes, "...offers a sensational bouquet of pain grille,
scorched earth, meat, game, blueberry, and black currants. This is
followed by a surprisingly elegant yet powerful, structured wine with
gobs of spicy fruit, ripe tannins, and a plush texture. The long,
60-second finish is succulent and sweet. 94-97 points."
Shaky Bridge Gewürztraminer '08, Central Otago, New Zealand
Lifted aromatics of lavender, brown spices, ginger and apple, perfectly balanced in an off dry style. A classically styled spiced Gewurztraminer profile, offset by Central Otago minerality and
an exceptional mouth feel.
Santi Apostoli Pinot Grigio '08, Veneto, Italy
Delightfully clean, fruity wine with a nice citrus flavor and a delicate, full taste.
Sea Biscuit Chardonnay '07, Mendocino, California
Rich complex fruit flavors abound, with an underpinning
of pleasant oak aromas, all supported by bright acidity.
Ciconia Tinto '08, Portugal
A blend of 60% Aragones 30% Syrah and 10% Touriga National,
a dark inky color, a meaty and earthy nose, the palate starts with
quite a bite of blue fruit with a little aniseed, and then some
cinnamon plus good acidity to back it up.
Meeker '12th Rack' Zinfandel '06, Sonoma, California
A bright nose of brambly blackberries with cocoa dust, this Zin
shows no mercy as it runs the palate with tart blackberries,
creamy coffee-vanilla richness, and a solid tannin structure.
Hess 'Allomi' Cabernet Sauvignon '07, Napa Valley, California
Ripe flavors of cherries, plum and currant mingle with hints of
nutmeg and graphite, with a slight toasty oak component.
Silky, youthful tannins are coating on a rich, textured mid palate, continuing on a lingering finish.

Wine 102: Evaluation & Terminology

Do you read tasting notes and wonder how they can be so specific? Do you want to be able to put into words what you taste? If so, this seminar is for you! Join us at Sun Singer as we continue to de-mystify the world of wine. Wine 102 will show you the tasting process and help you develop a style of wine talk.
We'll expand on the basic wine terminology and flavor components of wine taught in Wine 101. We will discuss how wines are rated and explain several systems. There will be handouts on a wine rating system and a listing of wine words. The final part of the seminar will focus on developing your own personal wine language.
We strongly suggest that you have previously attended Sun Singer's Wine 101. Wine 102 will assume a basic knowledge of wine varietals, their characteristics and basic tasting technique.

New Brew:
The market for specialty sodas falls into two major categories: regional favorites that have never lost their followings and new sodas that have managed to attract drinkers interested in better quality beverages.
This week at Sun Singer, we expand our offering of artisan sodas with four new stupendous soda selections.
Capt'n Eli: Blueberry Pop & Lemon-Lime
What does Maine do best? Blueberries! A division of Shipyard Brewing Company, Capt'n Eli's Soda is handcrafted on the coast of Maine. Founded by Fred Forsley in 1997, this soda affectionately honors his father, Eli Forsley, who, in his day, was widely known for making delicious homemade root beer. He served in the U.S. Navy during World War II and, after the war, was a pioneer in providing the mentally ill and disabled veterans a home where they could be a part of the community. Today, Capt'n Eli's Soda has grown to include seven flavors of caffeine free soda, all made with natural cane and brown sugars.
Dang That's Good!: Butterscotch Rootbeer
Imperial Flavors (the company who makes Dang) is a family owned bottling operation in Milwaukee, Wisconsin. This root beer tastes good, but it doesn't taste much like root beer. It is actually very similar to Henry Wienhard's Vanilla Cream Soda or a liquid version of a Werther's Original.

Ramos Pinto
Vintage Porto 1997
A wine for special occasions, for commemorations and parties. Taken from the wine-cellar, it should be placed upright for several hours allowing the sediments to settle. Two to four hours before being served, decant the bottle to separate out the deposits and to allow the wine to breathe so that it can be served in all its splendor.
Pretty ruby appearance with sweet raspberry and grenadine flavors. Floral, earthy and spicy notes with very mild tannins make this wine ready for your immediate enjoyment.

Joys of Winter
Abbey Affligem Belgium Tripel
Slightly hazy, golden-amber color with a remarkably rich and everlasting lacy head. Sweet bready malt and meringue aromas follow through to a sweet, medium to full-bodied fruit jam palate with suggestions of anise seed, kumquat marmalade, and honeyed Hawaiian toast. Finishes with a nice impression of mild, earthy hops and some citrusy sweetness.
