Pairing Advice

From appetizers, to white and dark turkey meat, mashed potatoes, yams, herb-filled stuffing, and cranberry relish, pickled this and peppered that, all the way to pumpkin or pecan pie - is there truly a single wine that can take you seamlessly from start to finish? The art of pairing wines with food is
largely a matter of personal preference, but some tried and true Thanksgiving wines are Pinot Noir and Syrah/Shiraz and Zinfandel for red wine lovers and Sauvignon Blanc, Viognier, Riesling, Gewurztraminer for those who prefer white wines.

Typically wines that offer a light-medium body and present themselves with lower tannin levels and less complexity are better suited to the vast array of flavors they are meant to complement. However, if pressed to pick a single varietal that could handle the traditional Thanksgiving spread from start to finish, it would hands-down be a Riesling.

Second Generation. New Direction.
Rubissow Cabernet Sauvignon 2004

A very special cabernet for the holiday...
This under-the-radar Napa artisan producer makes amazing wines in the classic style. Forget fruit-bomb trends and syrupy bombast, this is the real thing. Authentic Napa Cabernet at its best.

This blend of 85% Cabernet Sauvignon,
13% Merlot, and 2% Cabernet Franc has lovely notes of violet, orchid, menthol, cassis, redcurrant, pencil lead and sweet, toasted oak in the bouquet. On the palate there is a powerful attack of up front fruit. Complex, rich flavors of plum, cedar, spice, cocoa, earth, blackberry. Very long, round finish.

Unfined, unfiltered and undeniably delicious from a sustainably farmed single vineyard
at the Rubissow estate on Mt. Veeder in Napa Valley. 587 cases made.

Barnard Griffin Fumé Blanc '08
Columbia Valley, Washington
Sauvignon Blanc with classic nose of citrus and grapefruit with light herbal notes.  Generous lime and tangerine flavors nicely accented by a touch of cream.  Dry, crisp, cleansing and refreshing.

Ken Forrester Rosé '08
Stellenbosch, South Africa
Overwhelms the nose with a magnitude of strawberry, rose petal and cherry aromas that follow through on the palate, lingering to a crisp and refreshingly delicate finish.

Buil & Giné 'Baboix' '03
Montsant, Spain
Intensely fruity, mostly berries and other wild fruit.  In the mouth, it's full, supple, velvety, with flavors of chocolate, toffee and fig.  Grows spicier as it opens with hints of garam masala and cinnamon.

Thorn-Clarke 'Shotfire' Shiraz '07
Barossa, Australia
This glass-coating effort has a nose of wood smoke, bacon, mineral, and blueberry that leaps from the glass. Rich and intense on the palate, it has layers of flavor, excellent balance, and a pure finish.

Murphy-Goode Cabernet Sauvignon '07
Alexander Valley, California
Exhibiting flavors of blackberry, black cherry, vanilla and thyme with an oak profile of vanilla and toasted nuts. Its soft, rich tannins make it a very approachable wine that is ready to drink now.
