Wine Serving Temperatures It has been stated that in America we drink white wines too cold and red wines too warm. The temperature at which a wine is served is important, and it is worth spending a few moments thinking about it. The old adage of serving white wines chilled and red wines at room temperature is a useful starting point, although not nearly detailed enough. A wine served a little too cold or a little too warm can lose an awful lot of character, particularly with respect to aroma.
"So why is serving temperature so important?" you might ask. To smell a wine, evaporation needs to occur. If the wine is too cold there will be no evaporation and thus no polyphenols to smell. Since eighty percent of taste is determined by what we smell, you could say that if you are unable to smell the wine you truly cannot taste the wine. This is one of the main reasons for swirling wine in the glass.

Body
Body is an important characteristic of a wine that is determined chiefly by its alcoholic strength, but also by its extract. The term refers to the weight and texture of a wine on the PALATE - the "mouthfeel" of the wine. The more body a wine has the less like water it tastes.
An easy example of this in everyday life is to think of milk. A light bodied Skim Milk versus a medium bodied 2%, a medium plus bodied Whole Milk or a Full bodied Cream.

Climb Your Mountain!
W. H. Smith
Cabernet Sauvignon Bronze 2005
Howell Mountain, Napa Valley, California
The Piedra Hill Vineyard is becoming synonymous with award winning Cabernet-based wines from Howell Mountain. Bill and Joan Smith own, farm and make wine from this stunning six acre vineyard.
The first thing you will notice is the classic Cabernet color of crimson. You're greeted by hints of cedar and cassis on the nose followed by rambling blackberry flavors. The finish shows firm, but not objectionable tannins with excellent structure.
