Notable Quotes Wine and our expectations of it are profoundly linked with age and time. Of all the food and drink we consume, only wine can live (and indeed change wonderfully for the better) for decades-even, exceptionally, for a century or more. Yet its life span is never certain: its aging process is unpredictable enough to seem to wear a mantle of mystery. ---Hugh Johnson
Come share some wine with us soon.
Best Wishes,
Mark, Jackie & the Sun Singer Staff

Wine Serving Temperatures It has been stated that in America we drink white wines too cold and red wines too warm. The temperature at which a wine is served is important, and it is worth spending a few moments thinking about it. The old adage of serving white wines chilled and red wines at room temperature is a useful starting point, although not nearly detailed enough. A wine served a little too cold or a little too warm can lose an awful lot of character, particularly with respect to aroma.
"So why is serving temperature so important?" you might ask. To smell a wine, evaporation needs to occur. If the wine is too cold there will be no evaporation and thus no polyphenols to smell. Since eighty percent of taste is determined by what we smell, you could say that if you are unable to smell the wine you truly cannot taste the wine. This is one of the main reasons for swirling wine in the glass.

Veraison
This week many wineries in Napa have been talking about veraison in their vineyards. So what is veraison?
Veraison is the period of the beginning of berry ripening. The berries become soft and take on the colors characteristic of their specific varieties.
From the beginning of veraison to harvest, the berries will increase in volume, weight, and sugar content (brix).
