In Brief
WINE 101: THIS SUNDAY, MAY3rd, 4 - 6 pm. Sign up now by calling 351-1115. Details below. Last weekend was a wonderful enticement of things to come. We had a fantastic Friday and Saturday with the patio in full swing. While these last days of April are being filled with showers (which has done well for the grass and flowers), we're certain that May will spring on us filled with sunshine!
The last half of April has been a busy time and the first half of May is expected to be the same. This upcoming Saturday, May 2nd is Derby Day and we're inviting you to indulge in a few specialties that Sun Singer will offer in association with the Run for the Roses. Catch our festivities in the articles below.
Cinco de Mayo is next in line the following Tursday, May 5th. Cinco de Mayo (May 5th) is an important day in Mexico's history,
celebrated with food and family. Cinco de Mayo celebrates the victory of the Mexican Army over the
French at the Battle of Puebla in 1862. It is often called Mexican
Independence Day in error since Mexico declared its independence on
September 16, 1810, some fifty years earlier. Cinco de Mayo is
celebrated more enthusiastically by Mexican descendants in the United
States than in its native Mexico. We're still advancing our plans for the day so stay tuned. We'll certainly have some select beers and Margaritas to start the party.
Are you keeping up with us? We're nearly breathless as Mom's Day arrives Sunday, May 10th. What better way to recognize Mom than with a custom gift basket from Sun Singer. We have loads of gift ideas to make the day special and the Sun Singer Wine Bar & Cafe will be open from 11 am - 9 pm and ready to welcome Mom with our Sunday Sparkling Special of bubbly for just $3. What could be more perfect!
We could go on - you know that the following weekend is U of I Graduation - a celebration to rival celebrations, but we'll take a breather now and cover graduation in our next issue.
Join us soon for more good times at Sun Singer!
Best Wishes,
Mark, Jackie & the Sun Singer Staff

Wine 101: An Introduction
Sunday, May 3rd 4:00 - 6:00pm Our Price: $20/person
Join us at Sun Singer as we
de-mystify the world of wine. Wine 101 will introduce you to the everyday pleasures of wine.
We will begin this interactive class by discussing the various approaches to wine. We'll cover some of the basic wine terminology and flavor components of wine. We'll also talk about where wine comes from, how it is made and the characteristics of the 7 basic wine grape varieties as well as tasting the wines.
Class is scheduled to last 2 hours. However, the optional Question & Answer session at the end of the prepared class has been known to last an additional hour as Brian likes to answer all of the participants' questions.
After this introduction you'll feel more comfortable with the 'language' of wine, ordering wine in a restaurant and how to explain what you want from a wine when choosing one in the store. With any luck you'll be on the road to a lifetime of enjoyment in a world of wine!
Sign up today by calling Sun Singer at 351-1115.

Wine Needs Air...
Wine which has been allowed to breathe tastes better. As wine breathes, it opens up, and releases its intended aromas and flavors. Traditionally, decanters were used to aerate wine. However, decanting is time consuming, cumbersome, and inconvenient. The more you appreciate wine the more you will appreciate these simple, but sophisticated decanting aids.
Vinturi White Wine Aerator
It's a longstanding myth that white wine does not need aeration. Actually, white wine displays the same improvements with aeration. Vinturi White Wine Aerator uses a different ratio of air to liquid in its "aeration engine". Designed exclusively for white wine.
The Soirée Wine Decanter
The Soirée fits into any standard corked wine bottle, and comes with an extra gasket that will work with any screw cap bottle; allowing you to pour, without dripping, directly through the Soirée. Once you place the Soirée in the wine bottle, the Soirée aerates your wine as you pour it. The Soirée allows you to decant just the portion of wine you want - a glass or a carafe. The Soirée can also be used to pour the wine into a decanter, further expediting the 'opening' of your wine. The Soirée has dimples in the glass increasing the surface area of the glass which not only agitate the wine, but infuse more oxygen in the wine.
Great Gifts
Who can refuse a gift that requires a wine bottle to be opened? These fantastic accesories can be used on any occasion and on any bottle. Brighten any special event with a gift that will make friends, family, even that wine snob smile! Be confident your gift won't collect dust and they'll make any day a special day.

The Run for the Roses: Kentucky Derby 135!
The Kentucky Derby is a stakes race for three-year-old thoroughbred

May, capping the two-week-long Kentucky Derby Festival. The race currently covers one and one-quarter miles (2.012 km) at Churchill Downs; colts and

Triple Crown of Thoroughbred Racing in the United States. It typically
draws around 155,000 fans.
The Kentucky Derby is one of the crown jewels of the

Preakness Stakes.
For over 125 years the Kentucky Derby has been everyone's race
- from the dapper men and beautiful women, all in hats and
sipping on frosty mint juleps, to the laid-back
infield crowd
who picnic on fried chicken and toss around Frisbees.

- B-B-Q Beef Brisket
- 7 Layer 'Derby' Pie
plus some traditional Derby Cocktails, including:

New Wines Make Headlines!
Each week we like to change up a few of our wine-by-the-glass selections at the Wine Bar. Something special comes along, or there's a new wine in the market, or once in awhile we change wines just for the fun of it, but always with you in mind!
Here we go again - stop by soon and give one of these newbies a try:
WHITES Albola Pinot Gris '06, Friuli, Italy
Fresh, dry and flavorful with a firm structure leading into a lingering finish.
Clayhouse Sauvignon Blanc '07, Paso Robles California
Exhibits a bouquet of orange blossom, pineapple and lemongrass, peach with hints of guava and a touch of minerality.
Borra Chardonnay '07, Lodi, California An abundance of beautiful floral aromatics, this creamy blending of mouth-watering Crenshaw melon and crisp green apple with a touch of lime finishes with caramelized toasted vanilla oak, walnut and wild banana.
REDS Mark West Pinot Noir '07, California
Enticing aromas of rich cherry pie, raspberry preserves and ripe plums with barrel notes of exotic vanilla and shortbread cookie. Jujcy, dark red raspberry, jammy strawberry and baked peaches on the palate with just a touch of oak.
Bodegas Garanza 'Cyan' Crianza '04, Toro, Spain
Dense ruby/purple color as well as a big, smoky nose of scorched earth, plums, cassis, and cherries. With great ripeness, a terrific texture, full body, and an opulent, plush finish. 100% Tinta de Toro from 20-50-year old vines.
Sun Singer offers over 30 wines-by-the-glass. You can order a 2 ounce glass to sample, a 5 ounce glass to drink and all wines are available by the bottle to drink in our Cafe or to take home.
